Sweet chili Thai salad dressing is a fantastic way to boost your salads and to marinate chicken and pork for roasting or grilling.

- Whisk all of the ingredients together in a small saucepan over medium heat until smooth. Allow the mixture to come to a simmer and cook for 3 to 4 minutes until thickened.
- Remove the pan from the heat and let the dressing cool for 10 minutes. Pour the dressing into a resealable container and refrigerate for up to 2 weeks.

- Tip all the ingredients except the sugar into a mini chopper or blender and blend to a chunky sauce. Scrape the contents into a shallow saucepan with the sugar and 100ml water and bring to a simmer.
- Simmer for 15 mins, stirring occasionally until it becomes syrupy. Keeping a close eye on it, continue to simmer and stir for 5 mins more until it easily coats the back of the spoon and you see the bottom of the pan when you stir. Leave to cool and infuse for 1-2 hours. Will keep in a small sterilised jar for up to a month.

- Place all of the ingredients except for the cornstarch mixture in a small saucepan and bring it to a boil, stirring regularly. Once the sugar is dissolved stir in the cornstarch mixture, stirring continually until thickened, about 1 minute. Let the sauce cool completely, pour into an airtight jar and store in the refrigerator. Will keep for up to a week. Makes about 1 cup.

- Honey & mustard. Sweet with a little bit of heat, this is another popular combination. Just five storecupboard ingredients stand between you and salad perfection.
- Sesame & soy. If you’re looking for a subtly nutty, savoury flavour then this Asian-style dressing is ideal. Just add 2 tbsp soy sauce, 2 tbsp toasted sesame oil, 2 tbsp groundnut oil, juice of 1 lime, ¼ tsp chilli flakes and 1 tsp honey to a small bowl and stir together.

- Ginger & wasabi. Add a little heat to your standard salad with this zingy ginger dressing. To make, grate a thumb-sized piece of ginger into a small bowl.
- Sweet chilli. With a slight kick that won’t blow your head off, this sweet and sticky chilli dressing adds a little something extra to any simple side salad.
- Tahini. This cool, delicate, sesame-based dressing goes well with Middle Eastern style salads or drizzled over griddled halloumi. To make, stir together 2 tbsp tahini with the juice of 1 lemon, salt, pepper and 6 tbsp water in a small bowl.
