GINGER GARLIC CHILI SAUCE



Ginger Garlic Chili Sauce image

This is the BEST condiment for your rice or noodles. It's made from fresh red chilies, ginger, garlic that is sweet, salty with a slight tang from lime juice. The recipe is easy, quick, and it's a must-have in your pantry. So, double up the batch and store some in your fridge today!

125 g red chili (about ½ cup chopped)
125 g ginger (about ½ cup chopped)
22 g garlic (about 2 tablespoons)
2-3 tablespoons lime juice
2 tablespoons sugar (or maple syrup)
3 teaspoons salt
1 teaspoon oil
⅓ cup water
¼ teaspoon of mushrooms seasoning (optional)
a drizzle of sesame oil before serving

Steps:

  • Place all the ingredients in a blender or food processor (except sesame oil) and blend until well combined.
  • Taste test and season to your preference.
  • Transfer the chili mixture to a cleaned mason jar and store it for future use.
  • For serving, scoop out desired amount and add a drizzle of sesame oil before serving.

1 cup rice vinegar
1 cup sugar
2 teaspoons fresh ginger root, minced
1 teaspoon garlic, minced
2 teaspoons hot chile pepper, minced
2 teaspoons ketchup
2 teaspoons cornstarch

Steps:

  • Pour water and vinegar into a saucepan, and bring to a boil over high heat. Stir in sugar, ginger, garlic, chile pepper, and ketchup; simmer for 5 minutes. Stir in cornstarch. Remove saucepan from stove to cool. Then transfer to a bowl, cover, and refrigerate until needed.

This sauce is from Madagascar, and was posted for ZWT7 - Africa. It is a delicious spicy sauce, which is simple to make. I used it as a marinade for chicken breast fillets, and cooked them on the grill plate. I also used a little extra on the side. It went perfectly with the chicken, and I think it would team well with most meats, firm fish, even prawns..the possibilities are endless!

60 ml tomato paste
240 ml white vinegar
240 ml cold water
12 small chilies, chopped
3 tablespoons ginger, grated
3 tablespoons garlic, crushed
1 onion, chopped
2 teaspoons salt
1 tablespoon thyme, chopped

Steps:

  • Place all the ingredients in a saucepan, bring to boil, stirring, then reduce heat and simmer for 15 minutes.
  • Remove from the heat and allow to cool.
  • Transfer to a food processor or a blender and process to a puree. Keeps for many weeks if stored in an airtight container in the fridge.
  • Can be used as an ingredient in recipes or as a condiment.

Number Of Ingredients 5

20 red chillies , stems removed, deseeded for a milder sauce
1 finger sized piece of ginger , peeled and roughly chopped
5 garlic cloves , roughly chopped
100ml white wine or cider vinegar
200g white caster sugar

Steps:

  • Tip all the ingredients except the sugar into a mini chopper or blender and blend to a chunky sauce. Scrape the contents into a shallow saucepan with the sugar and 100ml water and bring to a simmer.
  • Simmer for 15 mins, stirring occasionally until it becomes syrupy. Keeping a close eye on it, continue to simmer and stir for 5 mins more until it easily coats the back of the spoon and you see the bottom of the pan when you stir. Leave to cool and infuse for 1-2 hours. Will keep in a small sterilised jar for up to a month.
