Steps:
- In a medium bowl, whisk together the egg yolks and sugar until well combined.
- Pour the cream into a medium pot set over low heat. Split the vanilla bean, scrape the seeds into the cream and add the pod to the pot. Heat until cream is scalded. Remove from heat and slowly whisk a small amount into the egg mixture. Slowly whisk the egg mixture into the cream mixture. Set aside to cool. Once cool, fold in the sour cream.
- Refrigerate for several hours or overnight. Strain into an ice-cream machine and spin to the desired consistency.
- Toast the wheat berries in a sauté pan over low heat until they pop, 4 to 6 minutes.
- To serve, place a large scoop of ice cream in a dish, sprinkle with a tablespoon of toasted wheat berries and some berries.

EASY SWEET CREAM ICE CREAM
Just like what you get at Cold Stone Creamery®, Maggie Moo's®, or Marble Slab Creamery. Only better because it's homemade, and a whole lot cheaper. It's great on it's own, but you can also top it off with cookies, fruit, candy pieces, or whatever else you like. You will need an ice cream maker for this.

BERRIES WITH SWEET TEQUILA CREAM

Steps:
- Combine the cream with 1/2 cup of the sugar in a medium saucepan over medium heat. Bring to a strong simmer just so tiny bubbles start to appear around the edges of the pan; don't let it boil.
- Meanwhile, in the bowl of a stand mixer using the whisk attachment, whisk together the egg yolks and remaining 1/2 cup sugar for about 1 minute. Whisk in the tequila.
- Now, with the mixer on medium low, very slowly drizzle in the warm cream using a metal measuring cup to scoop out small portions at a time. Drizzle it in so that the cream runs down the side of the bowl, reducing the impact of the hot cream hitting the eggs. Keep whisking!
- After all of the cream is added, turn off the mixer. Pour the mixture into the top of a double boiler (or a glass bowl fitted over a saucepan of simmering water). Cook in the double boiler over medium heat, stirring gently but constantly as the egg/cream mixture slowly thickens, from 8 to 15 minutes. Watch the mixture: if it starts to really thicken up, remove it immediately from the heat. You want this to be a thick, pourable cream rather than a thick, heavy pudding.
- Prepare a large bowl with ice. As soon as you remove the double boiler or glass bowl from the heat, set the bottom of it in the bowl of ice to stop the cooking process. Be careful not to let ice or water drip into the cream mixture. Stir in the lime zest and continue stirring to cool. If you need to use the cream right away, keep it in the ice bath. Or transfer it to a container, cover and refrigerate for several hours.
- When ready to serve, fill bowls with the berries and spoon the cream on generously.
CHEF JOHN'S STRAWBERRY ICE CREAM
Many people consider this type of strawberry ice cream recipe a 'hack' or a 'cheat' because we're skipping the more time-consuming and sometimes temperamental egg-custard step; but even if I didn't want to save time I'd still prefer this method. To be clear, I'm only speaking about this specific flavor of ice cream. For deep, dark chocolate, or butter pecan, I'll take the classic French-style every time. But, for sweet, juicy strawberries, I'm not a big fan of the egginess you get with the traditional method.

ICED BLUEBERRIES IN SWEET CREAM

Steps:
- We prefer to start with fresh blueberries rather than frozen ones, because many frozen berries are often processed improperly. To get started, sort your blueberries, setting aside any overripe ones for immediate snacking. The key is to freeze the berries flat, using a plate or baking sheet in the freezer. After the berries are frozen, they can be transferred to a bag and stored for up to six months.
- While the berries are freezing, combine the egg whites and 1 cup of the milk in a pan on the stovetop, and bring to just under a boil, whisking all the while. Let it simmer for around 5 minutes, then add the honey and salt. After simmering for another minute or two, strain the mixture into a bowl. Add the remaining milk and sugar. Pour the sauce into a pitcher or serving dish and chill; it will thicken as it chills.
- Pour the cooled sweet cream over the frozen berries to serve.
CREAMY WHEAT BERRIES WITH HONEY
In many cultures dating as far back as the Middle Ages, crunchy, toothsome wheat berries have been sweetened and served for holiday celebrations. In Russia, poppy seeds, walnuts, and raisins are added for a dish called _kutya_. In Turkey, a similar dish is called _kofyas_, and in Greece it's known as _koliva_. The combination of wheat, honey, and dates has survived so long because it is heavenly. Serve small portions as it's quite filling.

Steps:
- In a heavy 3-quart saucepan, combine the milk and honey and bring to a boil. Stir in the wheat berries, cinnamon, and salt. Return to a boil, then reduce the heat and cook at a gentle boil for 30 minutes, stirring occasionally. Skim off and discard the skin that forms on top.
- Stir in the dates and continue cooking at a gentle boil, stirring occasionally, until the mixture becomes quite thick, about 15 minutes longer. Add more honey, if you wish.
- Serve hot in small bowls. Garnish with whipped cream, if you wish.

- Gently heat 1 cup of the light cream and all of the sugar in a small saucepan, stirring just until sugar dissolves. Pour the mixture into a large heatproof mixing bowl and cool to room temperature. Stir in the remaining 1 cup light cream, whipping cream, vanilla, and lemon juice. Cover the bowl with plastic wrap then refrigerate for at least 2 hours or until the mixture is well chilled.
- When the mixture is well chilled, pour it into a 1-1/2-quart ice cream freezer and freeze according the manufacturers instructions. (Note that nearly all homemade ice cream has a softer texture than purchased. To firm, pack the ice cream in a freezer container; cover and freeze for 4 to 24 hours.) Makes 1 quart.
