12 hard-boiled large eggs
1/3 cup plus 1 tablespoon mayonnaise
5 teaspoons sugar
5 teaspoons cider vinegar
1 teaspoon prepared mustard
1/2 teaspoon salt
1/4 teaspoon pepper
Paprika and minced fresh parsley

Steps:

  • Slice eggs in half lengthwise; remove yolks and set whites aside. In a small bowl, mash yolks with a fork. Add the mayonnaise, sugar, vinegar, mustard, salt and pepper. Stuff or pipe into egg whites. Garnish with paprika and parsley.

My mother-in-law made these for our Christmas Eve get-together recently. At first, I thought these would be "just another deviled egg," but they surprised me. They have that traditional deviled egg taste, but with just the right hint of both sweetness and tanginess added. The whole plate disappeared like magic. Even the kids loved them, as they weren't too spicy, nor did they have any "funny chunks" of onions, pickles, etc. They also keep well in the fridge, travel well, and are great to do ahead. I hope you enjoy them as much as our family did.

12 hard-boiled eggs, peeled
1/3 cup mayonnaise, plus
1 tablespoon mayonnaise
5 teaspoons sugar
5 teaspoons cider vinegar
1 teaspoon prepared mustard
1/2 teaspoon salt
1/4 teaspoon pepper
paprika (to garnish)
parsley (to garnish)

Steps:

  • Slice eggs in half lengthwise.
  • Scoop out yolks.
  • In a small bowl, mash yolks with a fork.
  • Add mayonnaise, sugar, vinegar, mustard, salt, and pepper.
  • Stuff or pipe mixture into egg whites.
  • Garnish with paprika and parsley, if desired.

6 large eggs
ice cubes
3 tablespoons mayonnaise
1 tablespoon white sugar
1 teaspoon honey mustard
1 teaspoon vinegar
½ teaspoon salt
½ teaspoon ground black pepper
1 pinch paprika, for garnish

Steps:

  • Place eggs in a saucepan and cover with water. Bring to a boil, remove from heat, and let eggs stand in hot water for 15 minutes. Remove eggs from hot water and place in a bowl of ice water. Peel.
  • Slice eggs in half lengthwise. Remove yolks and transfer to a bowl; mash with a fork or pastry blender until yolks resemble powder. Stir mayonnaise, sugar, honey mustard, vinegar, salt, and pepper into yolks until smooth. Spoon yolk mixture into the egg whites and lightly sprinkle with paprika. Chill before serving.

A fast and easy breakfast or side-dish. Full of protein and tasty! To save time, use a packet of dried Hollandaise Sauce mix.

6 slices favorite whole wheat bread, cut into six 4 inch rounds
6 eggs, carefully separated
hollandaise sauce
6 parsley sprigs

Steps:

  • Preheat oven to 400°F.
  • Cut 4" rounds from bread and place on non-stick baking sheet.
  • Whip egg whites until stiff peaks form.
  • Portion and mound beaten egg whites over bread rounds.
  • Using the back of a spoon form a hollow in the center (top) of each mound.
  • Place yolk of egg in the hollow. Bake in oven for about 10-15 minutes until yolk is set and white is lightly browned.
  • Be careful not to overcook; the yolk should be firm.
  • Remove from oven and place on serving dish.
  • NOTE:.
  • Use a packet of dried Hollandaise mix to make the sauce.
  • Drizzle Hollandaise sauce over the top and garnish with a dash of paprika.
  • Create a stem to your "daisy" with the parsley sprig, or chop parsley and sprinkle atop.
  • Serve for breakfast or as a fancy side dish to accompany fresh poached fish.
