Mom's garden in the '40s provided us with many delicious vegetables, but her sweet peas were the best. She would pick them fresh, shell them and fix the best creamed sweet peas ever on her huge wood stove. -Jean Patten, Pineville, Louisiana

Steps:
- In a large saucepan, combine the flour, sugar and milk. Stir in peas and pepper; bring to a boil. Reduce heat; simmer for 10-12 minutes or until peas are heated through and sauce has thickened.

As a child we had this at Beach Road Chicken House. My Sister figured this out. So we have had it in the family for years. It is good and also creamy.

Steps:
- Melt butter in saucepan over low heat.
- Blend in flour,salt,pepper.
- Cook over low heat,stirring until mixture is smooth and bubby.
- Remove from heat and add saved liquid.
- Heat to boiling stirring constantly, lower heat and add peas.
- Stir and heat though.

GREEN PEA SAUCE
This sauce adds a very nice flavor to mashed potatoes, and the combination goes very well along with steak. To reduce the amount of fat in the sauce I like to use evaporated milk. You can use cream instead, but I think the lower-fat-version is just as tasty!

Steps:
- Warm the oil in a skillet over medium-high heat. Stir in the onion, and cook until nearly tender. Stir in the garlic, and cook for a few seconds, until fragrant. Pour in peas, and stir to thaw. Pour in the vegetable stock and evaporated milk. Turn heat to low, cover, and cook for 5 minutes. Once the peas have cooked, pour them into a blender and puree until smooth.
- Pour the pureed sauce back into the skillet, and season to taste with salt and pepper. Simmer over low heat until the sauce reaches desired consistency.

SWEET PEA PESTO PASTA
Peas, spinach and basil blend into a no-cook creamy pesto pasta sauce. Add shrimp or chicken to make a main dish.

- Cook pasta according to package directions.
- Meanwhile, place peas, spinach, basil, Parmesan, olive oil, walnuts, garlic and salt and pepper in a blender or food processor.
- Two minutes before pasta is done, ladle out 1/2 cup hot pasta cooking water and add to blender. Pulse until smooth, scraping sides and adding additional pasta water by the tablespoon, if needed.
- When pasta is done, drain lightly and return to pot. Add sauce and toss to coat. Season to taste with salt and pepper. Serve immediately with additional Parmesan cheese and tomatoes, if desired.

- Heat an oven to 400°F. Pat the fish filets very dry with paper towels, remove any pin bones, if necessary, and season generously with salt and pepper. Set aside.
- Cut the lemon in half crosswise and juice one half; cut the other half into wedges for serving and set aside. Using a Microplane grater, grate ½ the garlic clove into a medium bowl, whisk in 1 tablespoon of the lemon juice, a big pinch of salt, the sugar and some black pepper.
