SWEET POTATO BLACK BEAN BURGER



Sweet Potato Black Bean Burger image

Smoky with a little bit of sweet, this sweet potato black bean burger recipe is easy to throw together with minimal ingredients.

1 medium sweet potato, cooked
(1)15-ounce can black beans, drained and rinsed (1 1/2 cups)
1/4 cup chopped small red onion
1/2 cup rolled oats or quick oats
1 teaspoon ground cumin
1 teaspoon smoked paprika
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1/2-1 teaspoon salt
1/2 cup Vegan Mayo
1 tablespoon Sriracha hot sauce
tiny pinch garlic powder
6 burger buns
lettuce, tomato slices, red onion, avocado slices

Steps:

  • Preheat oven to 400 degrees. Lightly grease a baking sheet with olive oil. Cut the sweet potato in half lengthwise and place facedown on the pan. Bake for about 30 minutes, until fork tender and cooked through. Remove from oven. Lower the oven to 375 degrees.
  • When the sweet potatoes are cool enough to handle, peel off the skin and add the flesh to a large bowl. Mash with a potato masher, add the black beans and slightly mash the beans into the sweet potatoes, leaving some beans whole.
  • To the bowl with the sweet potatoes and black beans, add the diced red onion, oats, cumin, smoked paprika, onion powder, garlic powder and 1/2 teaspoon salt. Stir well with a large spoon until combined. Taste, add more salt if desired.
  • Prepare a baking sheet for the burgers by either lightly greasing with oil or using parchment paper. You can use the same pan you cooked the sweet potato on.
  • Fill a 1/2 cup measuring cup, then form into a burger shape, about 1 inch thick. You can make them thinner or thicker as you prefer. Place burgers on the prepared baking sheet. Bake for 15 minutes, flip carefully and bake for 15 more minutes. Remove from oven.
  • Optional Sriracha mayo: In a small bowl, stir together the vegan mayo (homemade or store bought), Sriracha and a tiny pinch of garlic powder.
  • Serve in buns with optional Sriracha mayo (or regular vegan mayo), lettuce, tomato slices, red onion and/or avocado slices.

These vegan sweet potato-black bean burgers spiced with curry powder are easy to make. Blending the mixture with your hands gives you a soft, uniform texture then the outside gets crispy by cooking in a cast-iron pan. To make this recipe gluten-free too, use gluten-free oats and serve the patty in a lettuce wrap, omitting the bun.

2 cups grated sweet potato
½ cup old-fashioned rolled oats
1 cup no-salt-added black beans, rinsed
½ cup chopped scallions
¼ cup vegan mayonnaise
1 tablespoon no-salt-added tomato paste
1 teaspoon curry powder
⅛ teaspoon salt
1/2 cup plain unsweetened almond milk yogurt
2 tablespoons chopped fresh dill
2 tablespoons lemon juice
2 tablespoons extra-virgin olive oil
4 whole-wheat hamburger buns, toasted
1 cup thinly sliced cucumber

Steps:

  • Squeeze grated sweet potato with paper towels to remove excess moisture; place in a large bowl. Pulse oats in a food processor until finely ground; add to the bowl with the sweet potatoes. Add beans, scallions, mayonnaise, tomato paste, curry powder and salt to the bowl; mash the mixture together with your hands. Shape into four 1/2-inch-thick patties. Place the patties on a plate; refrigerate for 30 minutes.
  • Stir yogurt, dill and lemon juice together in a small bowl; set aside.
  • Heat oil in a large cast-iron skillet over medium-high heat. Add the patties; cook until golden brown, about 3 minutes per side.
  • Divide the yogurt sauce evenly among top and bottom bun halves. Top each bottom bun half with a burger and cucumber slices; replace top bun halves.

1 large sweet potato
1 cooking spray
2 (15 ounce) cans black beans, rinsed and drained
½ cup quick cooking oats
¼ cup chopped onion
1 tablespoon Dijon mustard
1 teaspoon ground cumin
¼ teaspoon freshly grated ginger
¼ teaspoon salt
1 pinch ground cinnamon

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Poke a few holes into sweet potato with a fork; place on a greased baking sheet.
  • Bake in the preheated oven until sweet potato can be easily pierced with a fork, 35 to 45 minutes. Remove from oven and cool until easily handled. Reduce heat to 350 degrees F (175 degrees C). Spray a baking sheet with cooking spray.
  • Peel sweet potato and place into a large bowl. Add black beans and mash with a whisk or fork. Add oats, onions, Dijon mustard, cumin, ginger, salt, and cinnamon and mix until well combined. Shape mixture into 6 patties with wet hands and place onto prepared baking sheet.
  • Bake in the preheated oven until cooked in the center and crisp on the outside, about 8 minutes on each side.

1 1/8 cups cooked quinoa
1 1/2 medium sweet potatoes, halved lengthwise
1/4 teaspoon salt
3/4 teaspoon onion powder
3/8 teaspoon garlic powder
3/4 teaspoon chili powder
1/4 teaspoon dried oregano
1 1/2 teaspoons cumin powder
1/4 teaspoon black pepper
0.75 (15 ounce) can black beans, rinsed and drained
1/4 cup mayonnaise
3/4 teaspoon chili-garlic sauce
1/4 of a lime, juice of
buns or lettuce wrap
lettuce, tomatoes, avocados, radishes

Steps:

  • Cook sweet potatoes in 400 degree oven, cut side down for 30 minutes.
  • While the sweet potatoes are baking, make the chili lime mayo. In a small bowl, mix together the mayo, chili garlic sauce and lime juice. Set aside.
  • In a small bowl, add salt, onion powder, garlic powder, chili powder, oregano, cumin powder and black pepper. Mix together and set aside.
  • In a large bowl, add black beans and cooked sweet potatoes. Mash until consistency is only slightly chunky. Some beans will be completely mashed and others will not. This will help create a nice texture.
  • Add in cooked quinoa and spices. Mix together with hands and form into 8 burger patties, about 1/3 cup of mixture each.
  • Place burger patties on a large baking sheet covered in parchment paper. Spray with olive oil and bake in 400 degree oven for 20 minutes. Flip over, spray other side with olive oil and bake for another 10 minutes.
