Chicken Spinach and Artichoke Puff Pastry Parcels are super elegant and perfect for any celebration!

2 tablespoons olive oil
1 bag (10-ounce) baby spinach
3 cloves garlic (minced)
Salt and freshly ground black pepper (to taste)
2 boneless skinless chicken breast halves (approximately 1 pound, cooked, cooled and diced)
1 can (15-ounce) artichoke hearts (drained, squeezed of excess moisture and chopped)
1 container (6.5-ounce) herb and garlic cheese spread (such as Boursin)
1/2 cup freshly grated Parmesan cheese
1/2 cup mayonnaise
2 tablespoons chopped fresh chives
1 large egg mixed with 1 tablespoon water
2 packages (each 17.3-ounce) puff pastry sheets such as Pepperidge Farm (or 4 sheets)

Steps:

  • Preheat oven to 400 degrees. Thaw puff pastry per package directions.
  • Heat oil in a skillet or saute pan over medium-high heat. Add the baby spinach and cook, 3-4 minutes or until wilted. Stir in garlic and cook 30 seconds more or until fragrant. Transfer baby spinach to a sieve or colander to drain. Gently press on the spinach with a wooden spoon to extract any excess moisture.
  • Combine spinach, chicken, artichoke hearts, herb and garlic cheese spread, Parmesan cheese, mayonnaise and chives in a small bowl. Season to taste with salt and black pepper.
  • Combine egg and water to form an egg wash. Set aside.
  • Roll out and cut each sheet into four even squares. Place even amounts of the chicken filling in the center of each puff pastry square. Dab a small amount of egg wash on each corner of the puff pastry. Pull the corners up and over the filling to form a square parcel. Dab each parcel with egg wash.
  • Bake for 20-22 minutes or until golden. If the pastry pulls away from the filling, gently press it back down with a spoon or spatula. Serve immediately.

Easy and super tasty chicken filo parcels.

1 Tbsp olive oil
1 onion, sliced
6 cloves garlic, crushed
1 bag of baby spinach (130g)
500g cooked chicken breast, chopped
150g feta
2 eggs
12 sheets of filo pastry
2 Tbsp sesame seeds

Steps:

  • Preheat oven to 190.C fanbake.
  • Heat a large frypan over medium heat, add olive oil and sauté sliced onion for 5 minutes until softened. Stir in crushed garlic then add baby spinach.
  • Keep stirring until the spinach has wilted then add the chicken.
  • Turn off the heat and crumble in the feta and then crack in the eggs.
  • Season well with salt and pepper then stir everything to combine.
  • Set aside to cool slightly before wrapping in the filo.
  • Place one sheet of filo onto a board and spray with oil. Layer over another sheet of filo and spray again.
  • Place 1/2 cup of chicken mixture in a line 5cm from one end, fold in the sides and then roll up the filo, spraying oil in between each fold. Roll up the remaining filo parcels. Spray the top with oil and sprinkle over sesame seeds.
  • Bake for 30 minutes until golden and cooked through.
  • Serve hot with a fresh garden salad.

225g fresh spinach , washed
1 tbsp groundnut oil
1 large shallot , finely diced
25g walnuts or pine nut , roughly chopped
75g vegetarian cheddar , grated
pinch freshly grated nutmeg
2 tbsp double cream
1 tsp walnut oil
25g butter , melted
12 squares filo pastry , each measuring 16cm x 16cm

Steps:

  • Heat oven to 190C/fan 170C/gas 5. Place spinach in a pan and stir over a high heat until wilted. Strain, squeeze out as much liquid as possible, then roughly chop.
  • Heat oil in a frying pan, sauté shallot until softened. Add walnuts, then fry for 2-3 mins. Remove from heat, stir in spinach, cheese, nutmeg, cream and seasoning.
  • Mix walnut oil with butter. Brush a thin coating on a piece of pastry. Place another piece on top with corners at a different angle, brush with the butter and repeat with one more piece. Place a spoonful of spinach mix in the centre, bring up corners of pastry and pinch in the middle to form a parcel. Repeat to make remaining parcels, then transfer to a greased baking tray. Brush parcels with remaining butter and oil. Bake for 20 mins until golden.

4 baking potatoes, peeled and cubed
2 skinless, boneless chicken breast halves - diced
2 medium red bell peppers, chopped
1 large white onion, chopped
3 celery ribs, chopped
2 cups favorite barbeque sauce

Steps:

  • Make four foil packets by the following method, using 1-foot squares of heavy duty aluminum foil: fold square in half and smooth flat. Seal each of the narrow ends by folding over each edge three times to make a 1/4-inch border, smoothing flat after every fold. You should now have a foil packet that is open on one long side. Repeat to form four packets.
  • In a bowl or resealable plastic bag, combine the potatoes, chicken cubes, red peppers, onion, celery, and barbeque sauce; mix well. Evenly divide the mixture among the foil packets. Roll up the open end of the packets to seal.
  • Place packets on a grill over the coals of a fire. Cook until the potatoes are tender and the chicken is fully cooked, about 25 minutes, depending on the intensity of the heat.

500 g skinless chicken breasts
1 tablespoon plain flour
150 g spinach, chopped (frozen is OK)
1 tablespoon cracked black pepper
1 cup shallot
1 teaspoon olive oil
1 teaspoon chicken stock powder
200 ml skim evaporated milk
9 sheets phyllo pastry (puff pastry sheets can be substituted)
1/4 cup sesame or 1/4 cup poppy seed

Steps:

  • Slice the chicken into strips.
  • Saute lightly for around 3 minutes, with shallots and cracked pepper.
  • Add the flour and mix well.
  • Add the spinach, milk and chicken stock powder.
  • Heat it till the sauce thickens, remove from the heat and allow it to get quite cool. (You can do this step early, let it sit in the fridge and assemble the parcels later on).
  • Layer 3 sheets of filo, slice in half, and spoon about 2 heaped tblsp of mixture onto each filo stack, then wrap up into parcels.
  • Spray lightly with oil, sprinkle with sesame/poppy seeds and bake in a hot oven for around 20 minutes.

1 tablespoon plain flour
150 g spinach, chopped (frozen is OK)
1 tablespoon cracked black pepper
1 cup spring onion
1 teaspoon butter
8 medium mushrooms, chopped (tinned champignons = OK)
1 teaspoon chicken stock powder
200 ml cream
1 cup grated cheese
phyllo pastry or puff pastry sheet

Steps:

  • Slice the chicken into strips lengthwise, approx 15mm thick (like for a stir-fry).
  • Melt the butter in a deep frypan or saucepan, adding the chicken, eschalot, mushrooms and pepper.
  • Saute lightly for around 3 minutes.
  • Add the flour and mix well.
  • Add the spinach, cream and chicken stock powder.
  • Heat it til the sauce thickens, then add the cheese and remove from the heat and allow it to get quite cool. (You can do this step early, let it sit in the fridge and assemble the parcels later on).
