MOROCCAN MEATBALL SOUP

1 1/2 cups fresh cilantro
1 bunch scallions, roughly chopped
1 pound lean ground beef
1 large egg, lightly beaten
2 tablespoons harissa
1 1/2 teaspoons ground cumin, plus more for topping
Kosher salt
1 tablespoon extra-virgin olive oil
4 carrots, cut into 1-inch pieces
4 cups low-sodium chicken broth
4 cups baby spinach
1/2 cup whole-wheat couscous

Steps:

  • Pulse 1 cup cilantro with the scallions in a mini food processor to make a coarse puree. Transfer half of the mixture to a large bowl and add the ground beef, egg, 1 tablespoon harissa, 1/2 teaspoon cumin and 1/2 teaspoon salt. Mix with your hands until just combined. Form into twenty 1-inch meatballs.
  • Heat the olive oil in a large pot over medium heat. Add the carrots and cook, stirring, until they start browning, 4 to 5 minutes. Stir in the remaining cilantro puree, 1 tablespoon harissa and 1 teaspoon cumin; cook until sizzling, about 1 minute. Stir in the chicken broth and 2 cups water; bring to a simmer and cook 2 minutes. Gently drop in the meatballs and simmer until almost cooked through, 7 to 8 minutes.
  • Add the spinach and couscous to the soup and cook until the couscous is tender, about 5 minutes. Stir in the remaining 1/2 cup cilantro and season with salt. Sprinkle with more cumin before serving.

1 cup tomato juice
1 egg, beaten
1 small onion, chopped
1 tablespoon chili powder
1 tablespoon cider vinegar
1 tablespoon chopped dill pickle
1/2 teaspoon salt
1/4 teaspoon pepper
3/4 pound lean ground beef (90% lean)

Steps:

  • Place cabbage in a large saucepan; add tomato juice. Cover and simmer over low heat. Meanwhile, combine the egg, onion, chili powder, vinegar, pickle, salt and pepper. Crumble beef over mixture and mix well. Shape into 2-in. balls. Add to cabbage mixture., Cover and cook over low heat for 15-20 minutes or until meat is no longer pink, stirring occasionally.

4 large carrots, thinly sliced
2 large potatoes, thinly sliced
1 large onion, thinly sliced
¼ medium head green cabbage, thinly sliced
2 cloves garlic, smashed
6 cups chicken stock

¼ teaspoon dried basil
1 teaspoon dried parsley
1 teaspoon salt

Steps:

I had some leftover cooked cabbage,along with some leftover cooked baby carrots that needed to be used up. And so I combined them with some frozen Italian Meatballs, along with a few other things and made what I think is a very good soup. For the Italian Salad Dressing mix, I used Recipe#63812 by BeachGirl. As with any of my recipes, please adjust the seasonings according to your own personal tastes.Submitted to Food.com (a.k.a. 20 frozen italian meatballs, thawed (or you can use homemade meatballs )
2 cups cooked slightly firm cabbage
1 1/4 cups cooked baby carrots, cut into small bite size pieces (cut then measure)
2 teaspoons Italian salad dressing mix (to taste)
1/2 teapoon ground black pepper (to taste)

Steps:

  • Heat beef broth to a gentle boil in a saucepan large enough to hold all ingredients.
  • Add meatballs and simmer until heated through.
  • Add remaining ingredients, stir until well blended.
  • Then simmer for at least 20 minutes, and serve with your favorite crusty bread.

½ pound bulk mild Italian sausage
½ pound lean ground beef
½ cup cooked rice
1 egg
2 teaspoons garlic powder
1 teaspoon ground cumin
1 teaspoon paprika
1 teaspoon salt
½ teaspoon ground black pepper
2 tablespoons hot pepper and garlic infused olive oil
1 small onion, chopped
3 cloves garlic, minced
12 cups water
6 cubes chicken bouillon
1 medium head cabbage, cored and cut into large pieces
3 carrots, cut into large pieces
2 large potatoes, peeled and cut into large pieces, or more to taste
1 teaspoon chopped fresh oregano
½ teaspoon dried oregano
½ teaspoon mushroom-flavored salt
ground black pepper to taste

Steps:

  • Mix sausage, beef, rice, egg, garlic powder, cumin, paprika, salt, and pepper together in a large bowl for meatballs. Cover and refrigerate for 30 minutes.
  • Heat oil in a large pot over medium-high heat. Add onion and garlic; cook and stir for 1 to 2 minutes. Add water and bouillon cubes; bring to a boil. Add cabbage, carrots, and potatoes. Boil gently for 10 minutes.
  • Meanwhile, form meat mixture into regular-size meatballs. Drop gently into the pot and add fresh and dried oregano. Reduce heat and let simmer until meatballs are no longer pink in the centers, about 30 minutes. Add salt and pepper to taste.

4 large carrots, cut into 1/2-inch slices
1 large red onion, halved and cut into wedges

3 tablespoons minced fresh basil
3 garlic cloves, crushed
1 large egg, lightly beaten
1/2 cup seasoned bread crumbs
1/4 cup grated Parmesan cheese
1/4 cup minced fresh parsley
1/2 teaspoon pepper
1 pound ground turkey
1 carton (32 ounces) reduced-sodium chicken broth
2 cups water
1 can (14-1/2 ounces) diced tomatoes, undrained

Steps:

  • In a large bowl, combine the potatoes, carrots, onion, 2 tablespoons oil and 1/2 teaspoon salt. Place in a single layer in two greased 15x10x1-in. baking pans. , Bake at 425° for 20 minutes. Add basil and garlic; toss to coat. Bake 10-15 minutes longer or until vegetables are tender., In a large bowl, combine the egg, bread crumbs, cheese, parsley, 1/2 teaspoon salt and pepper. Crumble turkey over mixture and mix well. Shape into 1-in. balls., In a Dutch oven, brown meatballs in remaining oil in batches; drain and set aside., In the same pan, combine the broth, water, tomatoes, roasted vegetables and remaining salt. Return meatballs to pan. Bring to a boil. Reduce heat; cover and simmer for 45-55 minutes or until meatballs are no longer pink.

1/2 pound ground pork
1/2 pound ground beef
1/3 cup chopped fresh parsley
1 tablespoon (or more) Worcestershire sauce
3/4 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons vegetable oil
2 large red-skinned potatoes, cut into 1/2-inch pieces
2 large carrots, peeled, cut into 1/2-inch pieces
2 medium leeks (white and pale green parts only), chopped
1 large rutabaga, peeled, cut into 1/2-inch pieces
3 14 1/2-ounce cans beef broth
1 28-ounce can diced tomatoes

Steps:

  • Combine pork, beef, parsley, 1 tablespoon Worcestershire sauce, salt and pepper in large bowl; blend well. Form mixture into 1-inch balls. Heat oil in heavy large pot or Dutch oven over medium heat. Working in batches, add meatballs to pot and brown on all sides, about 4 minutes. Transfer to bowl after each batch.
  • Pour off all but 3 tablespoons drippings from pot. Add potatoes, carrots, leeks and rutabaga; sauté 5 minutes. Add broth and tomatoes with their juices. Return meatballs and any collected juices to pot. Bring to boil over high heat. Reduce heat to medium; simmer uncovered until meatballs and vegetables are tender, about 45 minutes. Season with more Worcestershire sauce, if desired and salt and pepper.

A hearty meatball soup full of vegetables. I use ground veal when making the meatballs, which is a subtler taste. The Original recipe came from a Cookbook called "The International Soup Cookbook", but I have added additional spices to the meatballs and altered it to our tastes.

1 large onion (cut in half, chop one half and slice the other half)
4 tablespoons olive oil (divided)
1 garlic clove (minced)
1 cup soft breadcrumbs
1 lb ground veal or 1 lb beef
1 egg, slightly beaten
1 teaspoon thyme
1 teaspoon marjoram
1/4 teaspoon cayenne pepper
1 teaspoon garlic salt
2 bay leaves
1/4 cup parmesan cheese (finely grated)
fresh ground pepper
flour (for coating)
12 ounces cabbage (thinly sliced)
1 1/2 lbs tomatoes, chopped (I use canned tomatoes, drained)
7 cups chicken broth

Steps:

  • Prepare onion, finely chop one half and thinly slice the other half and set aside.
  • Heat 2 tsp of olive oil in frying pan over medium heat and cook chopped onion until softened.
  • Add garlic and continue cooking for about 2 minutes; set aside.
  • Prepare meatballs: Put bread crumbs in a mixing bowl and add just enough warm water to cover crumbs.
  • Let stand for 2 minutes, drain and squeeze dry.
  • Next add sauteed onion and garlic, ground meat, egg and spices and parmesan cheese.
  • Mix ingredients and roll into small balls about 3/4 diameter.
  • Roll in flour to coat lightly.
  • Heat remaining Olive oil in a frying pan over medium heat.
  • Cook meatballs until brown.
  • Place on plate lined with a paper towel to drain.
  • In same frying pan, add reserved onion slices and cabbage, cook for 3-4 minutes until cabbage begins to wilt.
  • In a large pot, add add chicken broth,tomatoes, heat over medium heat.
  • Add meatballs, cabbage and onions.
  • Bring to a boil, and reduce heat, simmer for 20 minutes until vegetables are tender.
  • May sprinkle additional Parmesan cheese on soup when serving.
