PAUL'S FAMOUS SALSA



Paul's Famous Salsa image

Pop some tomatoes, onions, serrano peppers, and garlic under the broiler, blend them with spices, cilantro, and lime juice and you've got a yourself a 30-minute homemade salsa.

4 large vine-ripened tomatoes, cored and cut into quarters
2 white onions, quartered
4 serrano peppers, or to taste, stemmed
6 cloves garlic
2 tablespoons vegetable oil, or as needed
2 teaspoons salt
1 teaspoon ground cumin
¼ cup chopped fresh cilantro, or to taste
1 lime, juiced

Steps:

  • Set an oven rack about 6 inches from the heat source and preheat the oven's broiler. Line a baking sheet with aluminum foil.
  • Combine tomatoes, onions, serrano peppers, and garlic in a large bowl; drizzle with vegetable oil and toss until lightly coated. Transfer to the prepared baking sheet.
  • Broil in the preheated oven until vegetables begin to brown, about 5 minutes.
  • Transfer vegetables to the bowl of a food processor. Add salt and cumin; pulse a few times until desired chunkiness is reached. Add cilantro and pulse a couple of times to combine. Stir in lime juice.

This is my stepdaughter's recipe for salsa. It is a wonderful salsa that will keep for a couple days in the fridge. It is best with garden fresh tomatoes, when you can find them.

8 tomatoes, diced
1 medium white onion, diced
1/2 cup cilantro leaf, diced
3 garlic cloves, minced
3 tablespoons tomato sauce
1 lime wedge
1 jalapeno, diced
garlic salt, to taste
1/4 teaspoon black pepper

Steps:

  • Mix garlic with tomato sauce to make a paste.
  • Add all ingredients (squeeze lime juice into mixture).
  • Add garlic salt to taste.
  • Mix together and refrigerate.

6 medium ripe tomatoes, finely chopped
2 bunches green onions, finely chopped
3 medium white onions, finely chopped
2 (4 ounce) cans chopped green chile peppers
1 bunch fresh cilantro, finely chopped
2 medium limes, juiced
salt to taste

Steps:

  • Drain jalapeno juice into a large bowl. Finely chop jalapenos and add to the juice. Add tomatoes, green and white onions, chile peppers, and cilantro. Add lime juice over top and mix everything together. Season with salt.

This fun adaptation of "salsa" has a very zesty taste and is always a hit. It's super easy to make. You will have an empty dish to bring home for sure! I originally got this recipe from a girl I used to work with.

1 (10 3/4 ounce) can black beans
1 (10 3/4 ounce) can white corn
1 (10 3/4 ounce) can diced tomatoes (I used flavored)
1/4 cup extra virgin olive oil
1/4 cup red wine vinegar
2 tablespoons all purpose Greek seasoning
1 cup minced fresh parsley
1 tablespoon minced garlic (I use it from a jar)
1 cup chopped green onion
1 avocado, cubed (optional)
salt
pepper
serve with lime tortilla chips

Steps:

  • Rinse and drain beans/corn/tomatoes together in colander.
  • Mix all ingredients together in serving bowl.
  • Serve with Lime Tortilla Chips.

  • In a saucepan over low heat, melt together the marshmallows, butter, vanilla, and food coloring. Mix in the cornflakes cereal.
