2 (1.41 ounce) packages sazon seasoning (such as Goya®)
1 tablespoon ground cumin
1 teaspoon white sugar
salt to taste

Steps:

  • Heat olive oil in a skillet over medium heat; cook and stir garlic, onion, and green bell pepper in the hot oil until softened, 5 to 7 minutes.
  • Crumble ground beef into the skillet; cook and stir until browned completely, 7 to 10 minutes.
  • Stir olives, raisins, capers, tomato sauce, sazon seasoning, cumin, sugar, and salt through the ground beef mixture.
  • Cover the skillet, reduce heat to low, and cook until the mixture is heated through, 5 to 10 minutes.

6 tomatoes
¾ cup water
¼ onion, halved
1 clove garlic
3 tablespoons vegetable oil
½ onion, chopped
1 serrano pepper
1 clove garlic, minced
1 tomato, chopped
2 pounds lean ground beef
1 (7.75 ounce) can Mexican-style hot tomato sauce (such as El Pato®)
3 potatoes, peeled and cubed
3 medium carrots, peeled and cubed
1 jalapeno pepper, sliced
2 tablespoons chicken bouillon granules
½ tablespoon ground cumin
1 bay leaf
salt and ground black pepper to taste

Steps:

  • Bring 6 whole tomatoes to a boil in a small pot. Transfer to a blender. Add 3/4 cup water, onion halves, and whole garlic clove. Blend until smooth.
  • Heat oil in a large skillet over medium-high heat. Add chopped onion and serrano pepper. Cook until onion is transparent. Add minced garlic; cook until fragrant, about 1 minute. Add chopped tomato and cook for 1 minute more. Add ground beef; cook until browned, about 8 minutes.
  • Pour canned tomato sauce into the beef mixture. Cook for 2 minutes. Mix in potatoes and carrots. Cook for 2 minutes; add the blended tomatoes, jalapeno, chicken bouillon, cumin, and bay leaf. Season with salt and pepper. Mix well, reduce heat, and simmer until most of the liquid is absorbed, about 20 minutes. Let sit for 5 minutes before serving.

1 tablespoon olive oil
1 small onion, finely chopped
2 garlic cloves, minced
Coarse salt and ground pepper
1/4 cup tomato paste
2 chipotles in adobo, finely chopped
1 teaspoon ancho or chipotle chile powder (or regular chili powder)
1/2 teaspoon ground cinnamon
1/4 teaspoon ground cloves
3 pounds ground pork
1 can (28 ounces) whole tomatoes in puree, cut up
2 tablespoons cider vinegar
1/2 cup raisins

Steps:

  • In a 5-quart pot or Dutch oven, heat oil over medium. Add onion and garlic; season with salt and pepper. Cook, stirring occasionally, until onion is soft, 3 to 5 minutes.
  • Add tomato paste, chipotles, chile powder, cinnamon, and cloves; cook until fragrant, about 1 minute. Add pork; cook, stirring occasionally, until no longer pink, 7 to 8 minutes.
  • Add tomatoes and puree, and vinegar; bring to a boil. Reduce to a simmer, and cook, partially covered, until thick, 35 to 40 minutes. Add raisins. Serve with white rice, if desired.

1 medium yellow onion, chopped
1 small red bell pepper, seeded and chopped
2 garlic cloves, minced
2 (15 1/2 ounce) cans pinto beans, rinsed and drained
1 (14 1/2 ounce) can diced tomatoes, drained
1 (4 ounce) can diced mild green chilies, drained
1 granny-smith apple, peeled, cored and chopped
1 cup vegetable stock
salt & freshly ground black pepper
2 cups long grain rice, cooked (or brown rice)
1/2 cup golden raisin
1/4 cup black olives, drained and sliced
2 tablespoons fresh parsley, chopped
2 tablespoons slivered almonds, toasted

Steps:

  • Heat oil in a large skillet over medium heat. Add the onion and bell pepper, cover and cook until softened, about 5 minutes.
  • Transfer the vegetables to a 3 1/2 -4 quart slow cooker. Add the garlic, beans, tomatoes, chilies, apple, and stock; season with salt and pepper, cover and cook on low for 6-8 hours. About 10 minutes before serving, stir in the rice, raisins, olives, parsley and almonds.

Steps:

  • In a large skillet over medium heat, saute onions, garlic, and pepper in olive oil until softened, about 5 minutes, stirring occasionally. Add ground beef and olives and continue stirring to break up and brown the meat. Season with salt, pepper, and red pepper flakes. When beef has browned, add tomato sauce gradually while stirring. Cook 1 to 2 minutes longer to incorporate sauce.
  • Serve with rice and beans or tortillas.

Even at the high end, most are not wines to contemplate but to quaff with slabs of seared red meat. But if you choose budget bottles, here's a dish that will not break the bank, either. Well-seasoned picadillo, a versatile, richly seasoned ground-meat dish from Latin America, is typically served with rice and beans, but it can also be ladled over pasta, used to fill tortillas or sloppy Joes or baked in a casserole with a potato topping. Since it will be in the company of bland carbs, you can spice it generously. The wines won't balk at that.

3 pounds lean ground beef
1 cup dry red wine
1/4 cup extra virgin olive oil
2 cups chopped red onion
2 cups chopped green bell peppers
2 jalapeños, seeded and minced
4 large cloves garlic, minced
1 cup pitted brine-cured black olives, sliced
1 cup raisins
1 tablespoon dried oregano, preferably Mexican
1 teaspoon ground cumin
1/2 cup tomato paste
Salt
Cayenne pepper, to taste
1/2 cup toasted slivered blanched almonds
Rice and beans, pasta or tortillas for serving

Steps:

  • In a bowl, break up the meat with a fork, mix it with the wine and set aside. Heat oil in a large pan over low heat. Add onions, peppers, jalapeños and garlic and sauté until tender and barely beginning to brown. Stir in olives and raisins.
  • Increase heat to medium. Add meat and any liquid, and cook, breaking up meat with a fork, until it loses its color and is uniformly crumbly, about 10 minutes. Stir in oregano, cumin, tomato paste, and salt and cayenne pepper to taste. Cover and cook on low 30 minutes. Dish can be prepared in advance to this point and reheated later. It should be moist, so it might need a little water added. Top with almonds, serve with rice and beans, pasta or tortillas.

1 tablespoon chopped cilantro leaves
1 cup peeled and chopped tomatoes
1/2 cup raisins
2 teaspoons drained capers

White rice

Steps:

  • In a skillet, heat the oil over medium-high heat and add the onions and garlic. Cook for 5 minutes, or until the onions are translucent. Add the meat, separating it into small pieces as you stir.
  • Add the bay leaf, salt, pepper, oregano, allspice and cumin and cook for 1 to 2 minutes. Lower the heat to medium, then add the cilantro, tomatoes, raisins, capers and olives, and mix. Simmer for 20 minutes, stirring from time to time, adding a small amount of water if the mixture begins to dry. Serve with white rice
