Time 1h35m

Yield 12 to 15 servings

Number Of Ingredients 15

2 1/2 cups all-purpose flour
1 tablespoon baking powder
1 teaspoon ground cinnamon
1/2 teaspoon salt
1 1/2 cups cooked sweet potato meat (about 2 sweet potatoes)
3 eggs
3/4 cup warm water
1 3/4 cups sugar
1 cup vegetable oil
1 teaspoon vanilla extract
1 cup golden raisins
1 cup toasted walnuts, crushed
4 tablespoons unsalted butter
2 to 3 tablespoons spiced rum
2 cups confectioners' sugar

Steps:

  • Special equipment: bundt pan
  • Preheat oven to 325 degrees F.
  • Lightly grease a 10-cup bundt pan.
  • In a mixing bowl, whisk together the flour, baking powder, cinnamon, and salt. Set the mixture aside. In a separate large mixing bowl, mash the sweet potato, leaving only a slight meaty texture. Whisk together the sweet potato and the eggs. Whisk in the warm water, then the sugar, then the oil followed by the vanilla extract. Stir in the dry ingredients until homogenous then fold in raisins and walnuts. Spoon the batter into the prepared bundt pan. Bake until a toothpick inserted into the center of the cake comes out clean, about 1 hour. Let the cake cool in the tin for 15 minutes and invert onto a serving platter or cake stand.
  • Melt the butter in a medium saucepan with the rum. Pull from the heat and whisk in the confectioners' sugar until smooth.
  • Pour the glaze over the cooled cake. Slice and serve.

Time 3h

Yield 12 to 16 servings

Number Of Ingredients 19

2 1/2 cups all-purpose flour
2 teaspoons baking soda
2 teaspoons baking powder
1/4 teaspoon salt
2 teaspoons ground cinnamon
2 teaspoons ground nutmeg
1 cup sugar
1 1/2 cups (3 sticks) margarine
1 cup brown sugar
3 large eggs
1 tablespoon vanilla extract
2 1/2 cups mashed cooked sweet potatoes
1/2 cup crushed pineapple, drained
1 cup raisins
1 cup chopped walnuts, plus additional for garnish, optional
16 ounces cream cheese, softened
1/3 cup butter, softened
1 tablespoon vanilla extract
3 cups confectioners' sugar

Steps:

  • Preheat oven to 350 degrees F. Adjust the position of the rack to the center of the oven. Grease and flour 2 (9-inch) pans or 3 (8-inch) pans. Set aside.
  • In a large bowl, stir together the flour, baking soda, baking powder, salt, cinnamon, nutmeg, and granulated sugar. Set aside. In the bowl of a mixer, cream margarine and brown sugar on low speed, and then increase speed to medium and beat until well-combined. Gradually add the dry ingredients and beat on low speed until just incorporated. Add eggs, 1 at a time, beating well after each egg and scraping down the sides of the bowl after the addition of each egg. Add vanilla, sweet potatoes, pineapple, raisins, and walnuts and blend on low speed until thoroughly mixed.
  • Pour batter into pans and smooth the surface with a metal spatula. Bake for 1 hour to 1 hour and 10 minutes, or until a toothpick inserted in center comes out clean; when you touch the center of the cake, it should spring back. Allow to cool in pans for 10 minutes, and then invert onto a rack and cool completely.
  • For icing: In the bowl of an electric mixer, beat cream cheese and butter on medium speed until smooth. Add vanilla and beat until incorporated. Gradually add sugar and beat on low speed until smooth.
  • Icing the cake: Place 1 cake layer, top-side down, on a cake platter. Using a metal spatula, spread a layer of cream cheese frosting evenly over the top of the cake. Take the next layer and place it on top, rounded-side up. Frost the top and sides of the cake with the remaining frosting. The cake should be refrigerated for about 1 hour to make sure the layers are set. Sprinkle chopped walnuts on top of cake, if desired.

WORLD'S BEST SWEET POTATO POUND CAKE

World's Best Sweet Potato Pound Cake image

Sweet potatoes during the holidays are a must in our household. This time I decided to do something different other than a casserole or a pie. I used white sweet potatoes, but any sweet potatoes will do. You can eat this cake plain, topped with whipped cream, or topped with a glaze. Either way, this pound cake is delicious!

Provided by Pinay0618

Categories     Dessert

Time 1h15m

Yield 36 serving(s)

Number Of Ingredients 18

3/4 cup golden raisin
1/3 cup dark rum
4 large eggs, at room temperature
2 cups granulated sugar
1 cup vegetable oil
2 teaspoons vanilla extract
2 cups pureed roasted sweet potatoes
3 cups all-purpose flour
1 1/2 teaspoons ground cinnamon
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon fine sea salt
1/2 teaspoon ground nutmeg
3/4 cup buttermilk
1/2 cup firmly packed dark brown sugar
1/4 cup butter
3 tablespoons whipping cream
1/2 cup finely chopped toasted pecans

Steps:

  • Stir together first 2 ingredients. Let stand 30 minutes.
  • Meanwhile, beat eggs and granulated sugar at high speed with an electric mixer 2 to 4 minutes or until thick and pale. Add oil and vanilla, beating at low speed just until blended. Add sweet potato puree, beating just until blended and stopping to scrape down sides as needed.
  • Preheat oven to 350°. Sift together flour and next 5 ingredients; add to egg mixture alternately with buttermilk, beginning and ending with flour mixture. Beat at low speed just until blended after each addition. Drain raisins, reserving rum. Fold raisins into batter. Spoon batter into 3 lightly greased 12-cup Bundt brownie pans, filling each three-fourths full.
  • Bake at 350° for 14 to 16 minutes or until a wooden pick inserted in center comes out clean. Cool in pans on lightly greased wire racks 5 minutes. Remove from pans to wire racks.
  • While cakes are baking, bring brown sugar and next 2 ingredients to a boil in a heavy saucepan over medium-high heat. Boil, stirring constantly, 3 minutes or until mixture begins to thicken to a syrup-like consistency. Remove from heat; stir in reserved rum.
  • Pierce tops of cakes multiple times using a wooden pick. Dip top halves of cakes in glaze, and hold 1 to 2 seconds (to allow glaze to soak into cakes). Place, glazed sides up, on lightly greased racks. Sprinkle each cake with pecans.
  • Note: To puree roasted sweet potatoes, peel potatoes as soon as they are slightly cooled. Press pulp through a wire-mesh strainer with the back of a spoon. You'll need to roast about 1 1/2 lb. potatoes for 2 cups puree.

SWEET POTATO CAKE WITH RUM-PLUMPED RAISINS AND A SPIKED GLAZE

SWEET POTATO CAKE WITH RUM-PLUMPED RAISINS AND A SPIKED GLAZE image

Categories     Potato

Yield 12

Number Of Ingredients 20

For the sweet potato cake:
¾ cup golden raisins
1/3 cup dark rum, plus more if needed
3 cups flour, plus more for the pan
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon kosher salt, plus extra for salting the water
1 teaspoon cinnamon
½ teaspoon nutmeg
3 large sweet potatoes
4 large eggs
2 cups sugar
1 cup vegetable oil
2 teaspoons vanilla extract
¾ cup buttermilk
For the spiked glaze:
½ cup packed dark brown sugar
4 tablespoons unsalted butter
3 tablespoons whipping cream
1 tablespoon reserved rum from cake recipe.

Steps:

  • 1. Preheat oven to 350 degrees. Grease and flour a 10-inch fluted Bundt pan. 2. In a nonreactive bowl, soak raisins in the rum for at least 30 minutes. Sift together the flour, baking powder, soda, salt and spices. 3. Peel sweet potatoes, cut them into chunks, place in salted water, bring to a simmer and cook until tender when pierced with a knife. Drain and let dry for a few minutes, then mash coarsely. Measure 2 cups of sweet potatoes and reserve. 4. In a mixer fitted with a whisk, beat the eggs to break them up, then add the sugar and beat until light and fluffy, about 2 minutes. Beat in the vegetable oil and vanilla. Drain the raisins, reserving the liquid. Add ¤ cup of the rum to the batter. Add the sweet potatoes and mix until thoroughly combined. 5. Add the flour mixture to the batter in three additions, alternating with the buttermilk (start and finish with the flour). Fold in raisins. Pour the batter into the Bundt pan and bake for 80 minutes, or until a toothpick comes out clean. Cool for 10 minutes and then invert onto a wire rack. 6. While the cake is cooling, make the glaze: Mix the sugar, butter and cream in a heavy saucepan. Bring to boil over medium heat, stirring until the sugar dissolves. Continue to boil until the mixture thickens somewhat, 3 minutes, stirring often. Remove from heat and add about 1 tablespoon of reserved rum (add fresh rum, if needed). 7. Set the cake and cooling rack over a baking sheet. With a toothpick, punch holes all over the cake. Pour 1/3 of the glaze over the cake. Wait 15 minutes, then pour the remaining glaze on top. You must glaze the cake while it's hot. Allow cake to cool completely. Serves 12
