This hearty Sweet Potato Pomegranate Salad is a perfect side for a holiday dinner or an easy-to-pack lunch. The oranges, reds, and greens make it a festive dish, and its citrus dressing keeps the dish balanced and bright.

3 large sweet potatoes, cut into 2 inch (5 cm) wedges
1 tablespoon olive oil
1 teaspoon kosher salt
¾ cup pomegranate seeds
½ cup pistachio, toasted, roughly chopped
½ cup feta cheese, crumbled
⅓ cup fresh chives, thinly sliced, for garnish
1 tablespoon orange zest
3 tablespoons fresh orange juice
1 tablespoon red wine vinegar
1 garlic, minced
1 teaspoon dijon mustard
2 teaspoons honey
1 teaspoon kosher salt
½ teaspoon black pepper, freshly ground
6 tablespoons olive oil

Steps:

  • Preheat the oven to 400˚F (200˚C).
  • In a medium bowl, toss the sweet potatoes with the olive oil and salt. Transfer to an unlined baking sheet.
  • Roast the sweet potato wedges for 20-25 minutes, until softened and golden brown on the outside.
  • While the sweet potatoes are roasting, make the dressing: In a medium bowl, whisk together the orange zest, orange juice, red wine vinegar, garlic, mustard, honey, salt, and pepper. Starting with a few drops and steadily increasing the stream, slowly drizzle in the olive oil, whisking continuously, until the dressing is thickened and emulsified.
  • Transfer the warm sweet potatoes to a large bowl. Toss with 2-3 tablespoons of the dressing until well coated. Add the pomegranate seeds, pistachios, feta, salt and pepper and gently toss to combine. Drizzle with another 1-2 tablespoons of the dressing and toss to coat. Garnish with the chives.

  • Roast the sweet potatoes: Preheat your oven to 400 degrees. Chop the sweet potato into bite sized cubes. Make the dressing: Whisk together olive oil, vinegar, honey, garlic, salt & pepper. Taste & adjust. Set aside. Assemble all salad ingredients, toss lightly in the dressing.

2 potatoes
1 sweet potato
4 eggs
2 stalks celery, chopped
½ onion, chopped
¾ cup mayonnaise
1 tablespoon prepared mustard
1 teaspoon salt

Steps:

  • Bring a large pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 30 minutes. Drain, cool, peel and chop.
  • Place eggs in a saucepan and cover with cold water. Bring water to a boil. Cover, remove from heat, and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water; cool, peel and chop.

3 large sweet potatoes, (peeled and cut into 1-inch cubes)
1 TBSP olive oil
salt and pepper, (to taste)
1 cup pomegranate arils
1/2 cup pepitas
1/2 cup feta cheese
1/2 red onion
1/2 cup baby spinach leaves
1/4 cup pistachios, (roughly chopped (optional))
3 TBSP olive oil
1 TBSP lemon juice
1 TBSP maple syrup, (or honey)
salt and pepper, (to taste)

Steps:

  • Preheat oven to 400˚F or 200˚C.
  • Peel the sweet potato and cut into 1-inch cubes, then place it in a bowl.
  • Drizzle the sweet potato with the olive oil and season with salt and pepper.
  • Toss until the potatoes are well coated. Roast for around 30 minutes until tender. Remove from oven and let cool slightly.
  • Meanwhile make the dressing by whisking the olive oil, lemon juice, maple syrup and salt and pepper in a bowl until combined.
  • To make the salad, place the sweet potato, pomegranate arils, pepitas, feta cheese, red onion, baby spinach leaves and pistachios in a bowl.
  • Drizzle the dressing over the salad and gently toss to combine.
  • Serve immediately.

I don't like sweet potatoes, but this is good tasting and almost good for you. I love the convenience of plastic wrapped sweet potatoes that cook in the microwave for 4 minutes. Baking your own would work too.

2 sweet potatoes
½ cup pomegranate juice
¼ cup water
2 tablespoons apple cider vinegar
2 tablespoons brown sugar
¼ teaspoon ground cinnamon
¼ cup cold butter, cut into tablespoon-sized pieces

Steps:

  • Wrap the sweet potatoes with plastic wrap, and place into the microwave. Cook on High until the sweet potatoes are tender, about 4 minutes, depending on the microwave. Unwrap the potatoes, and refrigerate until cool enough to handle.
  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a small baking dish.
  • Bring the pomegranate juice, water, vinegar, sugar, and cinnamon to a simmer in a small saucepan. Reduce heat to medium-low, and simmer gently for 15 minutes. Meanwhile, peel the potatoes and cut into large cubes; place into the prepared baking dish, and dot with the cubed butter. Pour the pomegranate sauce evenly overtop.
  • Bake in preheated oven 30 minutes until the pomegranate sauce has thickened into a glaze. Gently stir the potatoes occasionally as they bake to coat them in the glaze.
