SWEET POTATO SWEETIES



Sweet Potato Sweeties image

I was looking for a healthier alternative to the chewy/crunchy/gooey/yummy part of traditional candied sweet potatoes and stumbled upon these. This low-sugar version of sweet potatoes (also known as a superfood for its high nutritional value) can be eaten as a side dish or snacked on straight out of the fridge (even better, I think). Great for kids, too.

Number Of Ingredients 4

1 large sweet potato, peeled and cut into 1/4-inch slices
1 tablespoon vegetable oil
1 tablespoon brown sugar, or more to taste
½ teaspoon salt

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Mix sweet potato slices, oil, sugar, and salt together in a bowl. Arrange slices evenly on a baking sheet, preferably all laying flat.
  • Bake in the top third of the preheated oven until tops are barely browned, 20 to 25 minutes. Flip over each slice. Continue baking until toasted on top, 10 to 15 minutes more. Immediately unstick slices from the pan. Serve warm or cool.

Here's what you need: large sweet potato or yam, olive oil, salt, pepper, dried thyme

1 large sweet potato or yam
4 tablespoons olive oil
½ teaspoon salt
½ teaspoon pepper
1 teaspoon dried thyme

Steps:

  • Preheat the oven to 400˚F (200˚C). Line a baking sheet with parchment paper.
  • Cut the sweet potato into ⅛-inch to ¼-inch (3- to 6-mm) slices. In a medium bowl, toss the sweet potato slices with olive oil until fully coated. Add the seasonings and toss to coat. Arrange the slices on a baking sheet without overlapping the potatoes.
  • Bake for 25 - 35 minutes, flipping halfway, until golden brown. Let the slices cool to room temperature.
  • Enjoy!

Number Of Ingredients 15

1 package yellow cake mix (regular size), divided
1/2 cup butter, melted
1 large egg, lightly beaten
FILLING:
3 cups cold mashed sweet potatoes (without added milk or butter)
2/3 cup whole milk
1/2 cup packed brown sugar
2 large eggs, lightly beaten
1 tablespoon pumpkin pie spice
TOPPING:
6 tablespoons cold butter
1 cup chopped pecans
1/4 cup sugar
1 teaspoon ground cinnamon
Whipped cream and pecan halves, optional

Steps:

  • Set aside 3/4 cup of the cake mix. Combine the remaining mix with butter and egg until crumbly; spread into a greased 13x9-in. baking pan. Whisk filling ingredients until smooth; pour over crust. , For topping, cut butter into reserved cake mix until crumbly. Stir in the pecans, sugar and cinnamon; sprinkle over the filling. , Bake at 350° for 60-65 minutes or until a knife inserted in the center comes out clean. Cool. Garnish with whipped cream and pecan halves if desired.

Steps:

  • Preheat oven to 400°F (200°C).
  • Thoroughly wash sweet potatoes. Slice in half, then into wedges.
  • Toss wedges in olive oil and seasonings.
  • Place on a baking sheet, skin side down.
  • Bake 30-40 minutes.
  • Enjoy!

Number Of Ingredients 9

4 pounds sweet potatoes (about 8 medium potatoes), peeled, cut into 1-inch chunks
1 ½ teaspoons grated orange zest plus ½ cup fresh juice (from 1 large orange)
½ cup unsalted butter, melted, plus more for baking dish
1 cup packed light brown sugar
2 teaspoons ground cinnamon
2 teaspoons ground nutmeg
2 teaspoons kosher salt
2 cups pecan halves, toasted and chopped
20 marshmallows

Steps:

  • Preheat oven to 350°F. Butter a 13- x 9-inch baking dish, and set aside.
  • Place sweet potato chunks in a large pot, and add water to cover. Bring to a boil over medium-high. Reduce heat to medium-low, and simmer until potatoes are tender when pierced with a fork, 15 to 20 minutes. Drain potatoes in a colander, and let cool 10 minutes.
  • Meanwhile, stir together orange zest and juice in a small bowl. Stir in melted butter until combined.
  • Stir together brown sugar, cinnamon, nutmeg, and salt in a separate small bowl.
  • Arrange half of the sweet potato chunks in an even layer in prepared baking dish. Sprinkle with half of the brown sugar mixture, and drizzle with half of the butter mixture. Sprinkle with half of the toasted pecans. Repeat process with remaining sweet potatoes, brown sugar mixture, butter mixture, and toasted pecans. Top evenly with marshmallows.
  • Bake in preheated oven until marshmallows are golden and casserole is bubbling around edges, 20 to 30 minutes. Serve hot.
