2 large eggs, lightly beaten
2/3 cup seasoned bread crumbs
1/2 cup grated Parmesan cheese
1/4 cup minced fresh parsley
4 teaspoons Italian seasoning
1/2 teaspoon salt
1/2 teaspoon garlic powder
2-1/2 pounds ground beef
1 medium onion, cut into 1-inch pieces
1 medium sweet red pepper, cut into 1-inch pieces
1 medium zucchini, cut into 1-inch pieces
1/2 small eggplant, cut into 1-inch pieces
1/2 cup balsamic vinegar
1/2 cup olive oil

Steps:

  • In a large bowl, combine the first 7 ingredients. Crumble beef over mixture and mix well. Shape into 1-1/2-in. balls., On 12 metal or soaked wooden skewers, alternately thread meatballs and vegetables. In a small bowl, combine vinegar and oil., Grill kabobs, covered, over medium heat for 8-10 minutes or until meatballs are no longer pink and vegetables are tender, basting frequently with vinegar mixture and turning occasionally.

1 large green bell pepper, cut into 12 pieces
8 thin wedges red onion
12 small fresh whole mushrooms
1/2 teaspoon seasoned salt
16 frozen cooked meatballs, thawed
3/4 cup purchased sweet-and-sour sauce

Steps:

  • Heat grill. In large bowl, combine bell pepper, onion and mushrooms. Sprinkle with seasoned salt; toss to coat.
  • Alternately thread meatballs, bell pepper, onion and mushrooms onto four 12 to 14-inch metal skewers.
  • When ready to grill, place kabobs on gas grill over medium heat on charcoal grill 4 to 6 inches from medium coals. Cook 10 to 15 minutes or until meatballs are thoroughly heated and vegetables are crisp-tender, brushing generously with half of the sweet-and-sour sauce and turning frequently. Serve kabobs with remaining half of sauce for dipping.

For the Meatballs:
1 pound ground meat of your choice (pork, chicken, pork, beef, veal or any combination of them)
1 large egg
1/3 cup panko breadcrumbs ((gluten free: Use GF breadcrumbs))
1 teaspoon sea salt
1/2 teaspoon freshly ground black pepper
2 teaspoons dried parsley
For the Kabobs:
1 fresh ripe pineapple (, cut into 1-inch chunks)
1 large green bell pepper (, cut into 1-inch chunks)
1 large red bell pepper (, cut into 1-inch chunks)
1 large yellow onions (, cut into 1-inch chunks)
For the Sweet & Sour Sauce:
2/3 cup low sugar apricot, peach, or orange jam/marmalade
3 tablespoons ketchup
2 tablespoons soy sauce
2 tablespoons apple cider vinegar
1/4 teaspoon garlic powder
1 tablespoon cornstarch dissolved in 2 tablespoons water

Steps:

  • To make the sweet & sour sauce: Combine all sauce ingredients, except for the cornstarch, in a small saucepan and bring to a simmer. Stir in the cornstarch mixture and stir until thickened. Set aside until ready to use.
  • To make the meatballs, thoroughly combine all the meatball ingredients in a large mixing bowl and form the mixture into 1-inch meatballs. Yields about 24 meatballs.
  • Alternately thread six bamboo or metal skewers with the meatballs (4 on each skewer), pineapple and vegetables. Brush with about half of the sweet & sour sauce.Heat the grill to medium-high heat and brush the grill grates with some oil. Grill the kabobs about 5-6 minutes on each side or until lightly seared and the meatballs are cooked through.Brush the kabobs with remaining sweet and sour sauce and serve immediately.

1/4 Honey
1 Tbsp. Lime Juice
2 Tbsp. Soy Sauce
1 Tbsp. Sriracha
1/4 Cup Flour
1 Cup Small Yellow Squash, Grated
1/2 Tbsp. Garlic Powder
1 tsp. Ginger
Salt
1 Egg
2 Bell Peppers
1 Red Onion
1 Tbsp. Olive Oil
1/2 Tbsp. Garlic Powder
Salt
Pepper
1 Tbsp. Lime Juice

Steps:

  • In medium bowl, place ground beef, flour, garlic powder, ginger, salt and egg. Prep squash by grating. Place shredded squash in between two paper towels and press dry, then add into meat bowl. Mix ingredients until completely combined. Form into meatballs and place in a second bowl. Mix marinade by combining all ingredients, Pour 2/3 of marinade over meatballs and allow to sit for 15 minutes. While meatballs are marinating chunk your vegetables to the size you would like for your skewers. Once everything is prepped, alternate placing meatballs and vegetables on the skewers. Grill for 15 minutes rotating skewers every 5 minutes.

1 cup dry bread crumbs
salt and pepper to taste
1 cup water
½ cup cider vinegar

  • In a large bowl, combine beef, egg, onion, bread crumbs, salt and pepper. Roll into meatballs about 1 to 1 1/2 inches in size.

5 teaspoons beef bouillon granules, divided
¼ cup boiling water
1 ½ pounds lean ground beef
1 cup dry bread crumbs
¾ cup minced onion
1 egg
1 (20 ounce) can pineapple chunks, drained with juice reserved
⅓ cup fresh lemon juice
3 tablespoons packed brown sugar
2 tablespoons soy sauce
1 teaspoon grated fresh ginger root
2 tablespoons cornstarch
1 green bell pepper, chopped

Steps:

  • In a small saucepan, dissolve 2 teaspoons of the bouillon granules in 1/4 cup boiling water. In a large bowl, combine ground beef, bread crumbs, onion, and egg. Mix in the dissolved bouillon. Shape into meatballs, about 1 to 2 inches in diameter.

Steps:
