Sweet Banana Bread image

My mom gave me this recipe and it's nice and sweet. I normally use three medium-large sized bananas. Nuts can be added, if desired.

1 ¾ cups all-purpose flour
1 ¼ teaspoons baking powder
½ teaspoon baking soda
¾ teaspoon salt
1 (3 ounce) package non-instant vanilla pudding mix
⅔ cup white sugar
½ cup shortening
2 eggs
2 tablespoons milk
1 ⅓ cups mashed ripe banana
⅓ cup chopped walnuts

Steps:

  • In a small bowl, sift together flour, baking powder, baking soda, salt and vanilla pudding mix. In a large mixing bowl, beat sugar and shortening until light, scraping sides of the bowl often. Add the eggs one at a time, beating smooth after each addition. Mix in the milk.
  • Add flour mixture and mashed bananas alternately to creamed mixture, beating until smooth after each addition. Fold in nuts if desired. Pour batter into a lightly greased 8x4 inch loaf pan.
  • Bake in a cold, (non-preheated) oven set to 350 degrees F (175 degrees C). Bake for 50 minutes, then cover with foil to prevent burning and bake for additional 10 to 20 minutes or until toothpick inserted into the crown comes out clean. Leave in pan for 10 minutes, then remove from pan and cool.

1 & 1/2 cups (355g) overripe mashed bananas (about 4 medium)
1/2 cup (125ml) vegetable oil
2 large eggs
1 tsp (5ml) vanilla

Steps:

  • Preheat oven to 325F and grease a 9×5″ loaf pan.
  • In a large bowl, toss together the flour, sugar, baking soda, and salt.
  • In a medium bowl, whisk together the mashed bananas, oil, eggs, and vanilla. Add to the dry ingredients and mix until just combined. Pour the batter into the prepared loaf pan.
  • Bake for about 60 minutes or until a toothpick inserted into the center comes out clean.

100gr melted butter
1/2 cup walnuts
1/4 teaspoon baking soda
1 ½ teaspoon baking powder

2 eggs
1 cup ripe mashed bananas (2 - 3 ripe bananas)
1 teaspoon cinnamon
1 teaspoon vanilla extract

Steps:

  • Step 1
  • Preheat the oven to 180°C (350℉). Put the butter into a bowl and place in the microwave or on steam, making sure that the butter does not boil. Set aside the melted butter until it reaches room temperature.
  • Step 2
  • Toast walnuts on medium heat for 2 -3 minutes.
  • Step 3
  • Peel the ripe bananas and mash them with a fork.
  • Step 4
  • For this recipe, you need a 9 x 5 inch loaf pan.
  • Step 5
  • First pour all the dry ingredients except sugar (sifted flour, salt, baking powder, baking soda) in a bowl and whisk well then set aside.
  • Step 6
  • Mash the bananas in the food processor or with a fork. Then add cinnamon and vanilla extract and mix well.

  • Mix sugar and egg. Add the butter(melted and at room temperature) and mix well. Mix the ingredients with a whisk or mixer for two minutes until completely smooth.

  • Add wet ingredients to dry ingredients. It is better to use a whisk or spatula to mix dry and wet ingredients. Stir the ingredients only until the flour is completely mixed.

  • Fold the walnuts into the mixture. Then pour the batter into the mold.

  • To make the bread look different, you can cut a banana horizontally into 2 and place slices on the batter.

  • Put the mold in the oven for 45 minutes.

This is the best banana bread I have ever had. I buy really ripe bananas just so I can make this :-) Got the recipe years ago from my friend Rachel. We used to beg her to make this for us in college! I think the moistness is due to the 1/2 cup of oil - I didn't say it was the healthiest banana bread around, but it is worth the extra time on the treadmill!
