SWISS ANGEL HAIR 'N' ASPARAGUS
I found this recipe in an old community cookbook that I paid 50 cents for at a garage sale! My husband just loves it!-Michele Cornish, Blairstown, New Jersey

Steps:
- Cook pasta according to package directions. Meanwhile, place asparagus in a steamer basket; place in a large saucepan over 1 in. of water. Bring to a boil; cover and steam for 3-5 minutes or until crisp-tender., In a large saucepan, saute mushrooms and chives in butter until tender. Stir in the flour, seasoning blend and salt; gradually add milk. Bring to a boil; cook and stir for 1-2 minutes or until thickened. Add the Swiss cheese; cook and stir until melted. , Drain pasta and place in a large bowl. Add asparagus and cheese sauce; toss to coat. Garnish with Parmesan cheese if desired.

CHICKEN, ASPARAGUS, AND MUSHROOM SKILLET
Chicken, asparagus, and mushrooms are sauteed in a garlic and olive oil base. You can add more mushrooms if desired. Serve with rice or pasta, and a glass of white wine!!!

- Melt the butter with the olive oil in a skillet over medium-high; stir the parsley, basil, oregano, garlic, salt, lemon juice, and wine into the butter mixture. Add the chicken; cook and stir until the chicken is browned, about 3 minutes. Reduce heat to medium; cook, stirring occasionally, until the chicken is no longer pink inside, about 10 more minutes.
- Add the asparagus; cook and stir until the asparagus is bright green and just starting to become tender, about 3 minutes. Stir in the mushrooms and cook an additional 3 minutes to let the mushrooms release their juice. Serve hot.

- Place 1 in. of water and asparagus in a saucepan. Bring to a boil; simmer, uncovered, for 5 minutes or until crisp-tender. Drain and cool, In a bowl, combine the asparagus, eggs, cheese, ham, mayonnaise, mustard and salt. Spread on five slices of bread, about 1/2 cup on each; top with the remaining bread.

ANGEL HAIR WITH ASPARAGUS, TOMATOES AND FRESH BASIL
Steps:
- Trim asparagus and rinse in cold water. Remove the tips; set aside. Bias-slice remaining asparagus stalks into 1- to 1 1/2-inch pieces and set aside. In a large skillet heat oil over medium heat. Add the garlic and 1/4 teaspoon pepper; cook 1 minute, stirring constantly. Add tomatoes and cook about 2 minutes, stirring often. Add asparagus stalks, wine, and salt to mixture. Cook, uncovered, for 3 minutes. Add asparagus tips; cook, uncovered, for 1 minute more. Add butter; stir till melted. Meanwhile, cook pasta according to package directions. Drain pasta. Return to pan and toss with asparagus mixture and basil. Mutrition facts per serving: 484 cal., 11 g total fat (3 g sat fat), 10 mg chol., 238 mg sodium, 81 g carbo., 4 g fiber, and 15 g pro. SAUTEED MUSHROOMS AND SCALLOPS
I was out at a cabin when one of my guests brought in some scallops. Since I had some mushrooms, onions, and garlic, I combined the ingredients to create this dish. This recipe is quick and easy to make and requires only one pan to complete. Necessity really is the mother of invention!
