1 can (10 3/4 ounces) Campbell's® Condensed Cream of Mushroom Soup (Regular or 98% Fat Free)
1/3 cup sour cream
1/4 teaspoon ground black pepper
1 bag (16 ounces) frozen vegetable combination (broccoli, cauliflower, carrots), thawed
1 can (2.8 ounces) French fried onions (1 1/3 cups)
1/2 cup shredded Swiss cheese (about 2 ounces)

Steps:

  • Stir the soup, sour cream, black pepper, vegetables, 2/3 cup onions and 1/4 cup cheese in a 2-quart casserole. Cover the casserole.
  • Bake at 350 degrees F. for 40 minutes or until the vegetables are tender. Stir the vegetable mixture. Top with the remaining onions and cheese.
  • Bake for 5 minutes or until the cheese is melted.

12 carrots, peeled and sliced
2 tablespoons butter
2 tablespoons onions, minced
1/4 cup flour
1 teaspoon salt
1/2 teaspoon dry mustard
fresh ground pepper, to taste
2 cups low-fat milk
1/2 lb swiss cheese or 1/2 lb jarlsberg cheese, thinly sliced
1 1/2 cups fresh breadcrumbs

Steps:

  • Cook carrots in lightly salted water until just tender, about 10 minutes, and drain.
  • Melt butter in medium saucepan, add onion and saute until soft. Stir in flour with whisk and cook 1 minute. Whisk in seasonings and milk, cooking until thickened.
  • In a buttered, shallow 2 quart casserole, place half of carrots, all of the cheese then rest of carrots. Pour sauce over all and sprinkle with bread crumbs. Bake uncovered 25 minutes.

Steps:

  • Prehaet oven to 350*F.
  • Cook carrots in slightly salted water until just tender, then drain.
  • In a medium saucepan melt butter and saute onion until soft.
  • Stir in flour with a whisk. Cook 1 minute.
  • Whisk in seasonings and milk, cooking until thickened.
  • In a buttered shallow casserole place half of carrots, all of cheese, then rest of carrots. Pour sauce over all and sprinkle with buttered crumbs.
  • Bake 25 minutes until bubbly and lightly browned.

5 egg yolks
1 ¼ cups white sugar
1 ½ cups finely chopped almonds
2 cups grated carrots
1 lemon, zested and juiced
⅔ cup all-purpose flour
1 ½ teaspoons baking powder
5 egg whites
1 pinch salt
1 lemon, juiced
1 cup confectioners' sugar, or as needed

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease and flour a 9 inch square baking dish or 9 inch Bundt pan.
  • In a large bowl, whip egg yolks and sugar with an electric mixer until light and fluffy. Stir in the almonds, carrots,1 lemon's juice and zest, flour and baking powder. In a separate bowl with a clean beater, whip egg whites with a pinch of salt until they can hold a peak. Fold egg whites into the carrot batter. Pour into the prepared cake pan.
  • Bake for 50 minutes, or until a small knife inserted into the center comes out clean. For icing, mix the remaining lemon's juice with confectioners' sugar until it can be drizzled easily from a spoon. Pour over the cake while warm or cooled. If making in a Bundt pan, remove from the pan before glazing.

2 cups fresh broccoli florets

1 teaspoon chicken bouillon granules
1/2 teaspoon onion powder
1/4 teaspoon white pepper
1 cup shredded Swiss cheese
1/2 cup crushed butter-flavored crackers (about 15 crackers)

Steps:

  • Preheat oven to 350°. Place carrots in a steamer basket; place in a large saucepan over 1 in. of water. Bring to a boil; cover and steam 3 minutes., Add broccoli and cauliflower; steam 5 minutes longer or until vegetables are tender. 12 medium carrots, sliced 1/4 inch thick (about 4 cups)
1 medium onion, finely chopped
1/2 cup butter, divided
1/4 cup all-purpose flour

1/4 teaspoon celery salt
Dash pepper
2 cups whole milk
2 cups shredded cheddar cheese
3 slices whole wheat bread, cut into small cubes

Steps:

  • Preheat oven to 350°. Place 1 in. of water in a large saucepan; add carrots. Bring to a boil. Reduce heat; cover and simmer 7-9 minutes or until crisp-tender. Drain., In another saucepan, saute onion in 1/4 cup butter. Stir in flour, salt, mustard, celery salt and pepper until blended. Gradually add milk. Bring to a boil; cook and stir 2 minutes or until thickened., In a greased 11x7-in. baking dish, layer half of the carrots, cheese and white sauce. Repeat layers. 1/2 cup butter
1/2 cup medium onion
1/4 cup flour
1 teaspoon salt
1/2 teaspoon dry mustard
1/4 teaspoon pepper
2 cups milk
1 cup sharp cheddar cheese, shredded
2 pounds baby carrots or 12 large carrots, sliced into bite sized pieces
1 cup plain bread crumbs or ritz crackers

Steps:

  • Preheat oven to 350*F Grease a 9 x 13 casserole dish and set aside. Steam carrots until 1/2 way cooked. You want them to be soft enough to bite but still with a bit of a crunch. They'll finish cooking in the oven. As carrots are steaming, in a saucepan combine butter and onion. Cook until onions are soft and translucent. Add flour, salt, mustard and pepper and mix well to create a paste. Slowly add 1/4 cup of milk at a time whisking continually until all the milk has been added to pan. You are making a basic roux. The mixture will thicken quite a bit at first but slowly thin out. If you add all the milk at once you'll have a clumpy mess, so only add 1/4 cup at a time, whisking well. Cook for 5 minutes then turn off burner and add cheese. Mix well until cheese is melted and combined. When carrots are cooked half way, place carrots on the bottom of the casserole dish. Pour cheese mixture on top of carrots ensuring to cover carrots completely. Sprinkle bread crumbs or crushed Ritz crackers on top of sauce and bake for 25 minutes. Remove from oven and serve immediately.
