Swiss Chard with Garlic image

This is a very simple recipe for Swiss chard. I like to use the whole vegetable but you need to saute the stems and the leaves separately as the stems take longer. This won't make a lot as the chard will wilt, so if you love chard, think about doubling the recipe.

1 bunch Swiss chard
2 tablespoons olive oil
2 cloves garlic, minced
1 pinch red pepper flakes
salt to taste
1 squeeze fresh lemon juice

Steps:

  • Remove Swiss chard stems and cut into small pieces. Slice leaves into strips. Set both aside.
  • Heat olive oil in a skillet and saute chard stems for 3 to 5 minutes. Add garlic and red pepper flakes; cook until fragrant, about 30 seconds. Mix in chard leaves, cover, and cook until wilted, about 2 minutes. Uncover, stir and cook for 2 minutes longer. Season with salt and squeeze lemon juice on top.

10 large cloves garlic, halved
2 tablespoons extra virgin olive oil
1/2 teaspoon dried oregano, crumbled
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
1 1/2 pounds Swiss chard, washed and dried
2 tablespoons olive oil
2 tablespoons finely chopped white onion
2 serrano chiles, stemmed, seeded, and finely chopped
2 medium tomatoes, cored and finely chopped
1 teaspoon salt
1 cup water

Steps:

  • Preheat the oven to 350 degrees. Make a double layer of aluminum foil about 6 x 6 inches square. Place the garlic in the center and bring up the sides a little to form a cup. Drizzle over the olive oil and add the oregano, salt, and pepper. Bring the sides all the way up and twist together to make a firm seal. Place in the oven and roast for 20 to 25 minutes. The garlic should be tender and golden but not dark brown. Open the top so the garlic will stop cooking and set aside.
  • Remove the leaves from the stalks of chard, finely chop the stalks and roughly shred the leaves. Set aside.
  • In a large heavy skillet heat the oil over medium heat. Add the onion and chiles and stir for about 1 minute. Add the tomatos and cook, stirring, for about 3 minutes, then add the chard ribs and leaves, salt, and water. Cover the pan and cook, shaking the pan occasionally, for 10 minutes. Remove the lid, add the roasted garlic cloves, and increase the heat to high. Stirring occasionally, cook until the chard is tender but not watery, 8 to 10 minutes more. Taste for seasoning and serve immediately.

2 leeks
1 tablespoon unsalted butter

Steps:

  • 1. Wash swiss chard well and slice into 1 inch pieces, reserving ribs for another use 2. Leeks - Trim the root ends and dark green stalks, then slice thinly 3. Heat butter over med. heat in saucepan 4. Add leeks, saute 2-3 min. 5. Add garlic, salt, pepper and thyme 6. Stir and cook for 30 sec. 7. Add wine or broth 8. Stir once, then cover the pan and reduce heat to low. Cook for about 10 minutes, until everything is very soft. Check occasionally to ensure that nothing is burning, and add a splash more wine if necessary. Add prepared chard to the pan and cook, covered, at least 5 minutes. Stir everything to combine and continue cooking, covered, until chard is very soft. Uncover and allow to cook only long enough to evaporate any excess cooking liquid. Serve

1 large bunch Swiss chard, ribs removed and chopped, leaves roughly chopped

  • Add the oil to a large saute pan with the garlic and red pepper flakes. Cook over medium heat until the garlic turns golden. Remove the garlic and discard. Add the chopped Swiss chard ribs and saute until soft, about 4 minutes. Add the Swiss chard leaves and season with salt, to taste. Cook until the leaves are wilted. 3 leeks, white and light green parts, sliced thinly into half-moons
1 pound chard, preferably rainbow or red (about 2 bunches), stems thinly sliced and leaves coarsely chopped
3 garlic cloves, minced or finely grated
2 teaspoons chopped thyme leaves
Kosher salt and black pepper
3/4 cup dry white wine
3 cups vegetable or chicken stock
1 pound potato gnocchi (fresh, frozen or shelf-stable all work)
2 cups peas, fresh or frozen
2 tablespoons chopped fresh tarragon leaves
1 cup torn parsley leaves and tender stems, for serving
Grated Parmesan, for serving

Steps:

  • In a 5- or 6-quart Dutch oven, melt butter over medium-high heat. Add leeks and chard stems, and cook until tender and lightly brown, 7 to 10 minutes.
  • Stir in garlic, thyme and a large pinch of salt and black pepper, and sauté until fragrant, about 1 minute longer. Add wine, scraping up the brown bits at bottom of pot, and let the wine reduce by half, 2 to 4 minutes. Pour in stock and 3/4 teaspoon salt, and bring to a simmer.
  • Stir in gnocchi and chard leaves. Cook, partly covered, for 15 minutes, until the chard is soft. Add peas and tarragon, and continue to cook, partly covered, until gnocchi are cooked through, another 5 to 10 minutes. Taste and add more salt, if needed.
  • To serve, top with parsley, a generous shower of Parmesan and a big squeeze of lemon. If you like, you can also add a dollop of ricotta and some red-pepper flakes.

There's really no secret to making excellent sautéed greens: just good olive oil, salt, loads of garlic and a jolt of red pepper flakes. This method works with pretty much any green too - broccoli, broccoli rabe, kale, spinach, collards, brussels sprouts or green beans - so you've really no excuse not to get your daily dose of vegetables. Serve it as a side to any roasted or grilled meat, or over a mound of creamy polenta that's been crowned with a fried egg.

Steps:

  • Cut stems from chard (if leaves are large, cut out coarse portions of rib), then cut stems crosswise into 1/4-inch-thick slices.
  • Stack chard leaves and roll into cylinders. Cut cylinders crosswise to make 1-inch-thick strips of leaves.

My daughter made this for her first Thanksgiving alone with her new husband. She sent me the recipe, and I made it tonight. Yummy! She got it from Food and Wine, attributed to Michael Symon. I found it took longer to make than specified in the printed recipe she gave me, so I increased the cooking time. I also cut the recipe down to serve two, with no difficulties.

1 1/2 lbs swiss chard, large stems discarded
1 1/2 tablespoons extra-virgin olive oil
3 medium leeks, white and tender green parts only, sliced 1/4 inch thick
salt
1 1/2 garlic cloves, minced
3 tablespoons unsalted butter
1/3 cup all-purpose flour
2 cups milk
1/4 cup gruyere cheese, shredded
1/4 cup parmigiano-reggiano cheese, shredded
1/8 teaspoon nutmeg, freshly grated
black pepper, freshly ground

Steps:

  • In a large pot of boiling water, blanch the chard until wilted, about 1 minute. Drain the chard, squeeze it dry, and chop. Be sure to remove any excess moisture.
  • Heat the oil in the pot. Add the leeks and a pinch of salt. Cover and cook over medium to medium low heat, stirring, until tender, 7 minutes. You know your stove -- if it cooks hot make it medium low, if it cooks low, make it medium. Uncover, add the garlic, and cook, stirring, until fragrant. (about 2 minutes).   • Combine the sauce and leeks/chard mixture. Season with salt and pepper to taste.
