Swiss Chicken Wrap With Honey Mustard Sauce image

Tender-roasted chicken breasts immersed in an herb rub and paired a tangy honey mustard are topped off with a cilantro-infused creamy Swiss cheese spread and a harvest of fresh garden vegetables, all wrapped up in a flour tortilla. This Swiss Chicken Wrap with Honey Mustard can be served either for lunch or as main dinner entree.

2 boneless skinless chicken breasts
1 tablespoon olive oil
2 tablespoons garlic salt
2 tablespoons parsley
2 tablespoons basil
1 teaspoon chicken bouillon
6 (3/4 ounce) wedges Laughing Cow light swiss cheese
1 -2 tablespoon cilantro leaf, chopped
1/3 cup honey
1/3 cup Dijon mustard
4 flour tortillas
4 romaine leaves (or fresh spinach leaves)
1 cucumber, peeled and sliced lengthwise into 1/4 wide strips
1 small red onion, cut into thin slices
1 tomatoes, sliced

Steps:

  • Preheat oven to 350°. Very lightly spray an 8x8 or 9x9 inch baking dish with a no-stick cooking spray.
  • Rub olive oil on both sides of the chicken breasts.
  • Mix together the garlic salt, parsley, basil and chicken bouillon. Rub the herb mixture into both sides of the chicken breasts. Place the chicken in the prepared baking pan and bake for 30-45 minutes at 350° or until thoroughly cooked and no pink remains. (Baking time can vary depending on the thickness of the chicken breasts.).
  • Once done, let the chicken cool until you can easily handle with your hands. Then cut the chicken breasts into strips about 5 or 6 inches in length and about 1/4 to 1/3 inch in width. Set aside.
  • Remove the cheese wedges from their foil wrapper and place in a bowl. Add the chopped cilantro leaves, and mix until well blended. Set aside.
  • In a small bowl, mix together the honey and Dijon mustard. Set aside.
  • To prepare the Chicken wraps, place each tortilla on a plate. Spread ¼ of the cheese-cilantro mixture on each tortilla. Spoon about 1 tablespoon of the honey mustard sauce on top of the cheese spread. Place 1 romaine leaf (or fresh spinach leaves) on each tortilla. Add strips of chicken in the center of the tortilla, leaving about 2-3 inches from the bottom edge of the tortilla (for wrapping margin). Then add slices of fresh cucumber, red onions, and tomato as desired. Drizzle additional honey mustard over the top, for more flavoring.
  • Fold the bottom portion of the tortilla up over the fillings. Then fold one side of the tortilla in, toward the middle. Then gently roll the tortilla around to form a burrito-style wrap.
  • Serve with garnishes of remaining cucumber slices and a sprig of fresh cilantro.

6 (10 inch) sun-dried tomato tortillas
½ cup mayonnaise
2 tablespoons yellow mustard
1 tablespoon Dijon mustard
2 tablespoons honey
½ tablespoon lemon juice

Steps:

  • Pound chicken breasts, one at a time in a resealable freezer bag, until about 1/2-inch thick. Lightly beat egg in a shallow bowl. Combine panko crumbs, salt, pepper, garlic powder and onion powder in a separate shallow bowl. Dip chicken breasts in egg until coated, drip off excess, and dip in panko mixture. Press chicken into crumbs until fully coated. Heat oil in a large skillet on medium high heat. Transfer chicken to pan and cook about 2 to 3 minutes per side or until chicken is brown, crispy and fully cooked. Transfer to a plate and cut into strips.
  • Honey Mustard: Combine mayonnaise, yellow mustard, Dijon mustard, honey and lemon juice in a small bowl. Combine desired amount of chicken, honey mustard, bacon, lettuce, grapes, shredded cheddar cheese, green onions and sliced almonds in tortillas. Wrap up and serve.

1 slice (1 ounce) Swiss cheese
2 slices (3/4 ounce each) deli ham

MUSTARD SAUCE:
2 tablespoons mayonnaise
2 tablespoons spicy brown mustard
1 teaspoon honey
Pinch salt

Steps:

  • Hold sharp knife parallel to cutting board and along one long side of chicken breast; cut almost in half, leaving breast attached at one side. Open breast so it lies flat; cover with plastic wrap. Using the flat side of a meat mallet, lightly pound to 1/4-in. thickness. Remove plastic wrap and sprinkle with salt and pepper to taste., Cut slice of cheese in half. Wrap each half in one slice of ham, folding ham over cheese to fully surround cheese. Place one ham bundle on each chicken breast. Tuck the narrow end of the chicken in towards the center for even cooking. Fold the chicken breast over the ham bundle. Sprinkle thyme over the top of each chicken breast., Put stuffed chicken breasts into a Medium or Large Ziploc® Zip 'n Steam™ Bag, with the thickest part of the chicken toward the outer edges of the bag. Seal bag and place in microwave., Cook on full power for 5 to 5-1/2 minutes or until a meat thermometer reads 170°. If needed, continue microwaving at 30-second intervals until chicken tests done. Allow bag to stand 1 minute before handling. Meanwhile, for mustard sauce combine all ingredients in a small bowl., Carefully open bag. Use spatula to remove chicken from bag. 1 cup chicken broth
1/2 cup honey
2 tablespoons ground mustard
1/2 teaspoon salt
1/2 teaspoon dried rosemary, crushed
1/4 teaspoon pepper
1-1/2 pounds boneless skinless chicken breasts, cut into 1-inch cubes (about 48)
SAUCE:
1 cup Dijon mustard
1/2 cup honey
4 teaspoons ground mustard
1/2 teaspoon dried rosemary, crushed
ASSEMBLY:
16 bacon strips

Steps:

  • In a small bowl, whisk the first six ingredients. Pour into a large resealable plastic bag. Add chicken; seal bag and turn to coat. Refrigerate 4 hours or overnight., In a small bowl, combine sauce ingredients; set aside. Cut bacon strips crosswise into thirds. In a large skillet, cook bacon over medium heat until partially cooked but not crisp. Remove to paper towels to drain., Drain chicken, discarding marinade. Wrap a bacon piece around each chicken piece; secure with a toothpick., Moisten a paper towel with cooking oil; using long-handled tongs, rub on grill rack to coat lightly.
