Bottom round steak and a few kitchen staples is comfort food. When the leaves start to fall and the temperatures drop it's time for something hearty. I've used bottom round but any tough, lean cut of beef will work. Serve over noodles or rice to soak up all of that great sauce.

- Dry steak well with paper towels and cut into four 4-inch pieces. Season with salt and pepper.
- Place flour into a shallow bowl. Dredge steak pieces in flour, shaking off excess.
- Turn on a multi-functional pressure cooker (such as Instant Pot®) and select Saute function. Once the pot is hot, add 1 tablespoon avocado oil. Brown the steak in batches, so you don't crowd the pot, 2 minutes per side. Transfer browned meat to a warm plate and set aside.
- Add 1 tablespoon of avocado oil to the pot and cook onion, carrot, celery, and bell pepper until onions are soft and translucent, 3 to 4 minutes. Stir in garlic and cook until fragrant, about 1 minute. Deglaze the pot with Merlot. Mix in tomatoes, Worcestershire sauce, 1 teaspoon salt, oregano, and paprika. Return steak to the pot and push down into the tomato mixture.
- Close and lock the lid. Select manual pressure according to manufacturer's instructions; set timer for 30 minutes. Allow 10 to 15 minutes for pressure to build.
- Allow pressure to release naturally according to manufacturer's instructions for 5 minutes. Carefully open the valve to release the remaining pressure, about 5 minutes more. Unlock and remove the lid.

- Cut beef into 6 serving pieces. In small bowl, mix flour, mustard and salt. Sprinkle half of the flour mixture over 1 side of beef; pound in with meat mallet. Turn beef; pound in remaining flour mixture.
- In 10-inch skillet, heat oil over medium heat. Cook beef in oil about 15 minutes, turning once, until brown.

- Preheat the oven to 325 degrees F.
- Cut the meat with the grain into 1/2-inch thick slices and season on both sides with the salt and pepper. Place the flour into a pie pan. Dredge the pieces of meat on both sides in the flour mixture. Tenderize the meat using a needling device, until each slice is 1/4-inch thick. Dredge the slices on both sides once more and set aside.
- Add enough of the bacon drippings or vegetable oil to just cover the bottom of a 4 to 5-quart Dutch oven set over medium-high heat. Once the oil begins to shimmer, add the steaks to the pan, being careful not to overcrowd. Cook until golden brown on both sides, approximately 2 minutes per side. Remove the steaks to a plate and repeat until all of the steaks have been browned.
- Remove the last steaks from the pot and add the onions, garlic, and celery. Saute for 1 to 2 minutes. Add the tomato paste and stir to combine. Next add the tomatoes, paprika, oregano, Worcestershire sauce and beef broth and stir to combine. Return the meat to the pot, submerging it in the liquid. Cover the pot and place it in the oven on the middle rack. Cook for 1 1/2 to 2 hours or until the meat is tender and falling apart.

- Swiss the steak: Use a meat tenderizer mallet to poke holes into each slice of steak on both sides. You can also do with a fork or pairing knife.
- Dredge through flour: Generously salt the beef slices with salt and pepper. Add the flour to a shallow bowl. Dredge each piece of beef well in the flour.
- Sear the steak: Heat 2 tbsp of the olive oil in large, deep skillet over medium-high heat. Add the dredged beef to the skillet and cook for 4-5 minutes per side, or until seared and well browned. Remove the beef from the skillet and set aside.
- Sauté onion: Add the remaining tbsp of olive oil to the skillet along with the onions. Cook for 3-4 minutes, until they soften and get translucent. Add the garlic and cook for 30 seconds or until aromatic.
- Add the rest of ingredients: Stir in the tomato paste and cook for 1 minute, then add the diced tomatoes, broth, Italian seasoning, and Worcestershire sauce. Stir everything together well.
- Braise: Bring the mixture to a boil, then reduce the heat to a simmer. Add the beef back to the skillet and make sure it's fully submerged. Cover and cook for 1 1/2 hours, or until the sauce has reduced to your liking and the beef is tender. Stir occasionally.
- Finish & serve: Taste for seasoning and add salt and pepper if needed. Garnish with parsley and serve.

INSTANT POT SWISS STEAK RECIPE

- Thinly slice the steak and set aside.
- Peel and chop the onion and chop up the green peppers and set aside in a separate bowl.
- Mince the garlic cloves and set aside.
- Mix dry ingredients together except the corn starch (1 teaspoon of sea salt, 1 teaspoon of garlic powder, 1 teaspoon of ground black pepper, 1 ½ teaspoons paprika), and season both sides of the steaks. (Reserve extra seasoning mix to season the sauce at the end.)
- Lightly dredge the steak with corn starch on both sides.
- Select the sauté setting on the Instant Pot. Add 2 tablespoons of olive oil and when it's hot, brown the steak on both sides, one minute per side. Don't overcrowd the pot; brown the steak in two batches.
- Transfer the steak back to the Instant Pot, and add the other ingredients in this order: 1 cup of unsalted beef stock, canned tomatoes, the green bell peppers, onion, garlic, and black pepper.
- Seal the lid on the Instant Pot and select the option to pressure cook on high.
- Set the timer for 30 minutes.
- When the timer goes off, do a natural release, which will take around 10 minutes.
- Hit cancel and twist valve to venting position to release remaining pressure.
- Open the lid and remove the steak onto a platter.
- Select the sauté feature on the Instant Pot
- To thicken the sauce, take half a cup of the cooking liquid and put in another bowl.
- Whisk in 1 tablespoon of corn starch or flour into cooking liquid. When the mixture is well dissolved, add back into the pot. Stir to combine.
- Cook until sauce reaches the consistency you like, about 5 minutes.
- Taste the sauce and adjust the remaining seasoning.
- Stir the 2 tablespoons of Worcestershire into the sauce.
- Place mashed potatoes, cooked egg noodles, or rice on a plate if using for serving.
- Place the Swiss Steak on top with some of the tomato gravy sauce.
- Chop up parsley and sprinkle over dish for garnish before serving.

- 1. Cut cubed steaks into large serving pieces. Mix together salt, pepper and garlic powder. Season steaks on both sides.
- 2. Dredge steaks through the flour. Shake off excess flour. Heat 1/3 cup cooking oil in large skillet.

- 2. Add a pinch of salt and pepper to each side.
- 3. Dredge in All Purpose flour.
- 4. Pan fry in heated oil on both sides for about 3 minutes. Lay on a plate.
- 5. Add 1/2 of the chopped vegetables to the bottom of the Crock Pot Add you steaks on top of the vegetables.

- Melt 1/2 stick butter in large skillet, when butter is bubbling and starting to brown add steaks to pan. Cook for 3 minutes on each side, making sure pan is hot enough to give steaks a nice crisp layer on outside. Remove steaks to a clean plate.
- Add second 1/2 stick of butter to hot pan, add in sliced onions and mushrooms, sauté for 5 minutes, over medium high heat. Add bouillon, stir into vegetables, continue to cook for a minute longer.
- Sprinkle reserved flour over mushrooms and onions and move around in pan allowing flour to form a paste and start to bubble up with vegetables. Pour in beef stock. Stir until smooth.
