1/4 cup butter
2 tablespoons flour, plus additional flour for rolling balls
1/2 cup hot milk
1/2 lb swiss cheese, grated
salt and pepper
nutmeg
2 egg yolks
oil (for deep frying)

Steps:

  • Preheat oven to 300 degrees.
  • In a sauce over medium heat, melt the butter.
  • Stir in the 2 T flour.
  • Add milk and stir to mix well.
  • Add the Swiss cheese and seasonings to taste.
  • Stir so all ingredients are well combined.
  • Add the egg yolks and remove from the heat.
  • Pour mixture in a 9x9" baking dish.
  • Bake in the preheated 300 degree oven for 10 minutes.
  • Remove the dish from the oven and refrigerate for 2 hours or until completely cooled.
  • Heat oil in a deep fryer.
  • Form balls and roll in the additional flour.
  • Deep fry the cheese balls, a few at a time, until golden brown.
  • Remove from hot oil and drain.

2 teaspoons salt, plus additional for salting water
2 cups elbow pasta
1 quart heavy cream
1 cup shredded Cheddar
1 cup shredded mozzarella
1 cup shredded Swiss cheese
1 cup shredded white American cheese
1 cup shredded white Cheddar
1 teaspoon ground pepper
1 cup all-purpose flour
4 large eggs, beaten
2 cups panko
Canola oil, for frying
1/2 cup grated Parmesan

Steps:

  • In a large pot of boiling salted water, cook the pasta to al dente according to the package directions.
  • Meanwhile, bring the heavy cream to a simmer in a large saucepan and slowly add in the Cheddar, mozzarella, Swiss cheese, American cheese and white Cheddar, stirring, until smooth and creamy. Season with salt and pepper.
  • Drain the pasta and add to the cheese mixture. Stir until all the pasta is well-coated. Place in the refrigerator for 10 to 15 minutes.
  • Scoop the pasta into balls, rolling until uniform and about 3 inches in diameter. Set aside.
  • Place the flour, beaten eggs and panko into separate shallow bowls. Roll each individual pasta ball first into the flour, then the eggs, then the panko.
  • Fill a deep saucepan with 3 inches of canola oil and heat to 350 degrees F. Line a sheet pan or platter with paper towels. Carefully drop several pasta balls into the oil (do not crowd; fry in batches) and fry until golden, about 3 1/2 minutes. Remove and drain the balls on the paper towels. While still hot, sprinkle with the Parmesan and serve.

1 package (8 ounces) cream cheese, softened
1/2 cup sour cream
2 cups shredded Swiss cheese
2 cups shredded sharp cheddar cheese
1 cup crumbled cooked bacon (about 12 strips), divided
1/2 cup chopped pecans, toasted, divided
1/2 cup finely chopped onion
1 jar (2 ounces) diced pimientos, drained
2 tablespoons sweet pickle relish
1/4 teaspoon salt
1/4 teaspoon pepper
1/4 cup minced fresh parsley
1 tablespoon poppy seeds
Assorted crackers

Steps:

  • In a large bowl, beat cream cheese and sour cream until smooth. Stir in shredded cheeses, 1/2 cup bacon, 1/4 cup pecans, onion, pimientos, pickle relish, salt and pepper. Refrigerate, covered, at least 1 hour., In a small bowl, mix parsley, poppy seeds and remaining bacon and pecans. Spread half the parsley mixture on a large plate. Shape half the cheese mixture into a ball; roll in parsley mixture to coat evenly. Cover. Repeat. Refrigerate at least 1 hour. Serve with crackers.

My girlfriend loves swiss and cheddar cheese balls, and I couldn't find them for our sixth month anniversary, so I invented my own as a present to her. She said they were the best ones she had ever had.

1 (8 ounce) package cheddar cheese
1 (8 ounce) package cream cheese
8 ounces of freshly grated swiss cheese
1 1/2 ounces bacon bits (more or less to taste)
Club crackers

Steps:

  • Mix the cheddar cheese, cream cheese, and swiss cheese thoroughly and then sprinkle in the bacon bits and mix more.
  • When thoroughly mixed, use hands to form balls.
  • The recipe should make about four good sized balls.
  • Refrigerate for one to two hours until cheese has better consistency.
  • Store in ziplock bags if not using immediately as they keep for several days.

A friend of mentioned how much she loves Swiss cheese balls, so I went on a search to find a recipe. Here's one from several different recipes I found on the web! My friend just had hip surgery done and I'm looking for ways to surprise her and keep her spirits up. I think this will do it, it's good! :)

8 ounces sharp cheddar cheese, shredded (I used a shredded cheddar or mozzarella mix)
8 ounces swiss cheese, shredded
1 (8 ounce) package cream cheese
1/3 cup sour cream
2 teaspoons Worcestershire sauce
1/2 teaspoon paprika
1/2 teaspoon garlic salt
1/4 teaspoon black pepper
1/3 cup finely chopped nuts (walnuts or pecans are good, I haven't tried toasted but I bet that would be good)
1/4 cup fresh chives, chopped (optional- you may also use chopped fresh parsley, or fresh thyme)

Steps:

  • Place cheddar, Swiss, and cream cheese, sour cream, Worcestershire sauce, paprika, black pepper, and garlic salt in a medium bowl.
  • Place in a food processor and pulse until well blended.
  • In bowl, place nuts and chives, if using. Stir to mix.
  • Shape mixture into a ball, roll in the chopped nuts and chives(if using).
  • Wrap in waxed paper or plastic wrap and refrigerate until serving time.
  • Serve with raw vegetables or crackers.

2 cups shredded swiss cheese
2 cups shredded cheddar cheese
1 (8 ounce) package cream cheese, softened
1/2 cup sour cream
1/2 cup chopped onion
1 (2 ounce) jar pimiento
2 tablespoons sweet pickle relish
10 slices bacon, crisp-cooked, drained, and crumbled
1/2 cup finely chopped pecans
1 dash salt
1 dash pepper
1/4 cup snipped parsley
1 tablespoon poppy seed
assorted cracker

Steps:

  • Let swiss and cheddar cheeses come to room temperature.
  • In a large bowl beat together cream cheese and sour cream till fluffy.
  • Beat in swiss cheese, cheddar cheese, onion, undrained pimiento, pickle relish, half of the bacon, 1/4 cup of the pecans, salt and pepper.
  • Cover and chill till firm.
  • Shape into 1 large or 2 small balls on wax paper.
  • In a small bowl combine remaining bacon, pecans, parsley, and poppy seeds.
  • Turn mixture out onto clean clean sheet of waxed paper.
  • Roll cheese balls in seed mixture to coat.
  • Wrap and chill.
  • Let stand 30 minutes at room temperature before serving.
  • Serve with crackers.
