Sweet Potato Pie Cookies image

It's a fall-favorite pie-in cookie form! These adorable and delicious Sweet Potato Pie Cookies with marshmallow buttercream frosting are definitely worthy of your dessert plate this Thanksgiving. They're almost (almost) too cute to eat!

Provided by Pillsbury Kitchens

Categories     Dessert

Time 1h25m

Yield 24

Number Of Ingredients 8

1 roll (16.5 oz) refrigerated Pillsbury™ Sugar Cookie Dough
1/4 cup all-purpose flour
2 teaspoons pumpkin pie spice
1 can (29 oz) cut sweet potatoes in light syrup, drained
3/4 cup powdered sugar
3/4 cup marshmallow creme
1/4 cup butter, softened
1/4 teaspoon vanilla

Steps:

  • Heat oven to 350°F. Generously spray 24 regular-size muffin cups with cooking spray.
  • In large bowl, mix cookie dough, flour and 1/2 teaspoon of the pumpkin pie spice. (DO NOT EAT RAW COOKIE DOUGH AFTER COMBINING WITH FLOUR.) Firmly press 1 tablespoon cookie dough evenly in bottom of each muffin cup. Bake 10 minutes.
  • Meanwhile, in medium bowl, mash drained sweet potatoes, and measure 1 1/2 cups, reserving remaining for another use. Add remaining 1 1/2 teaspoons of the pumpkin pie spice and 1/4 cup of the powdered sugar to the 1 1/2 cups mashed sweet potatoes; mix well. Place about 2 teaspoons sweet potato filling on center of each cookie, and spread in each cup to within 1/4 inch of edge.
  • Bake 10 to 15 minutes or until edges are golden brown. Cool 10 minutes in pan; run metal spatula or sharp knife around edge of each cookie cup to loosen. Cool completely in pan, about 20 minutes.
  • In medium bowl, beat marshmallow creme, softened butter, remaining 1/2 cup powdered sugar and the vanilla with electric mixer on medium speed, or stir until smooth. Transfer to resealable food-storage plastic bag. Cut off one bottom corner; squeeze small dollop of frosting on top of each cookie cup.

Provided by Trang

Categories     Cookies     Dessert

Time 29m

Number Of Ingredients 9

1 1/4 cup all-purpose flour
1/4 cup granulated sugar
1/4 teaspoon kosher salt
1 stick unsalted butter - cold and cubed
3 tablespoon cold water
1 large egg
1 tablespoon water (or milk)
1 tablespoon granulated sugar
1/4 teaspoon cinnamon

Steps:

  • Turn the dough out on a lightly floured board and shape into a disk. Wrap in plastic and rest in the refrigerator for an hour.
  • Roll the dough out to about 1/8" thick. Use a fluted edge or round cookie cutter about 2" or smaller and cut out the cookies. Reshape the left over dough and roll out to 1/8" again and keeping cutting out cookies until finish.
  • (Optional) Punch holes around the perimeters of the cookies with a toothpick.
  • Place the cookies on a parchment paper lined baking sheet and place the baking sheet in the freezer or refrigerator if your freezer is not big enough.
  • Preheat the oven to 400°F.
  • Beat 1 egg with 1 tablespoon of water or milk for egg wash, mix 1 tablespoon of sugar with 1/4 teaspoon of cinnamon for the sugar topping.

THE BEST CHEWY CHOCOLATE CHIP COOKIES RECIPE BY TASTY

The Best Chewy Chocolate Chip Cookies Recipe by Tasty image

There are a few secrets to the best classic, chewy chocolate chip cookies. Number one: Don't use chips; instead, opt for a mix of milk or semisweet and dark chocolate chunks. The second is to let the dough rest overnight or longer for a more complex, toffee-like flavor. Lastly, use an ice cream scooper to get even-sized cookies every time. And that's it! With these little tweaks, the result is a cookie that's textured on the outside, and soft and gooey on the inside. Absolutely perfect!

Provided by Alvin Zhou

Categories     Desserts

Time 1h5m

Yield 12 cookies

Number Of Ingredients 10

½ cup granulated sugar
¾ cup brown sugar, packed
1 teaspoon salt
½ cup unsalted butter, melted
1 egg
1 teaspoon vanilla extract
1 ¼ cups all-purpose flour
½ teaspoon baking soda
4 oz milk or semi-sweet chocolate chunks
4 oz dark chocolate chunk, or your preference

Steps:

  • In a large bowl, whisk together the sugars, salt, and butter until a paste forms with no lumps.
  • Whisk in the egg and vanilla, beating until light ribbons fall off the whisk and remain for a short while before falling back into the mixture.
  • Sift in the flour and baking soda, then fold the mixture with a spatula (Be careful not to overmix, which would cause the gluten in the flour to toughen resulting in cakier cookies).
  • Fold in the chocolate chunks, then chill the dough for at least 30 minutes. For a more intense toffee-like flavor and deeper color, chill the dough overnight. The longer the dough rests, the more complex its flavor will be.
  • Preheat oven to 350°F (180°C). Line a baking sheet with parchment paper.
  • Scoop the dough with an ice-cream scoop onto a parchment paper-lined baking sheet, leaving at least 4 inches (10 cm) of space between cookies and 2 inches (5 cm) of space from the edges of the pan so that the cookies can spread evenly.
  • Bake for 12-15 minutes, or until the edges have started to barely brown.
  • Cool completely before serving.
  • Enjoy!
