1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 green bell pepper, sliced
1 yellow onion, sliced
2 lb boneless, skinless chicken breast, cut in half
2 tablespoons taco seasoning
4 cloves garlic, diced
1 lime
10 oz canned diced tomatoes with green chiles, drained
flour tortilla
cheese, optional
sour cream, optional
guacamole, optional

Steps:

  • Add half of the sliced peppers and onions to your slow cooker.
  • Layer the chicken and coat all sides with taco seasoning.
  • Top with garlic, the juice from one lime, and tomatoes (be sure to drain).
  • Add the remaining peppers and onions, cover and any remaining lime juice.
  • Cook on high for 3-4 hours.
  • Remove chicken and cut/shred into slices (chicken left longer will tend to shred more - cook to your preference).
  • Return the sliced chicken to the slow cooker to marinate in the juices for about 10 more minutes (on LOW) until ready to serve.
  • NOTE: If you find that there is too much liquid, you can remove till there is a desired amount before serving.
  • Assemble Fajitas to your liking - we recommend topping with cheese, sour cream, and guacamole!
  • Enjoy!

2 cups shredded chicken
1 red bell pepper, thinly sliced
1 yellow bell pepper, thinly sliced
1 green bell pepper, thinly sliced
½ white onion, thinly sliced
1 tablespoon olive oil
1 teaspoon chili powder
½ teaspoon cumin
1 teaspoon salt
½ teaspoon black pepper
4 corn tortillas
sour cream, for topping

Steps:

  • In a large, nonstick skillet, heat the olive oil over medium heat.
  • Toss in the onions, bell peppers, salt, chili powder, cumin, and black pepper, and sauté until the onions and peppers have softened.
  • Add in the shredded chicken and toss until everything in the pan is evenly coated and warmed through.
  • Pour the chicken mixture into a large serving bowl .
  • Toast the tortillas in the seasoned pan, about 3 minutes per side.
  • Divide the mixture evenly between tortillas, top with a drizzle of sour cream, and serve.
  • Enjoy!

4 teaspoons chili powder
2 teaspoons salt
2 teaspoons paprika
2 teaspoons sugar
1 1/2 teaspoons crushed chicken bouillon cubes
1 teaspoon onion powder
1/2 teaspoon garlic powder
1/2 teaspoon cayenne pepper
1/2 teaspoon cumin
4 boneless chicken breasts, cut into thin strips (1 to 1 1/4 lb.)
2 tablespoons oil
2/3 cup water
1 green bell pepper, cut into strips
1 medium onion, sliced
1 cup cooked rice
tortilla

Steps:

  • Combine all of the spice ingredients in a small bowl.
  • Cook and stir chicken in hot oil in a large nonstick skillet 5 minutes on medium-high heat. Add spice mix, water, green pepper, and onion; cook and stir on medium heat 5 minutes or until chicken is cooked through and the vegetables are tender. Add cooked rice and mix.
  • Place tortillas on microwavable plate. Cover with plastic wrap. Microwave on high 1 minute.
  • Spoon chicken/rice mixture onto each tortilla. Roll up tortillas.

  • Measure all ingredients into a Ziploc bag, seal. shake well to combine. To Use: Prepare the fajitas using the same directions found on the package of the original seasoning mix (Directions follows): 1 tablespoon oil 1 medium green pepper, thinly sliced 1 medium onion, thinly sliced 8 oz chicken breast, cooked and shredded splash of water 1 packet of Taco Bell Seasoning Mix Stir fry the peppers and onions in oil until crispy cooked. Add the chicken and the water and heat through. Sprinkle on the mix to desired spiciness and stir. Spoon on the tortilla (after heating) and top with desired toppings.
