TACO MAC CUPCAKES

Steps:
- Heat oven to 400°F. Spray 18 regular-size muffin cups with cooking spray. Place 1 wonton skin in each muffin cup, pressing down slightly. Bake 8 minutes or until golden brown.
- Meanwhile, cook macaroni and cheese as directed on package; keep warm.
- In 12-inch skillet, cook beef, onion and bell pepper over medium-high heat 5 to 7 minutes, stirring occasionally, until beef is thoroughly cooked; drain. Stir in taco seasoning mix and water. Add macaroni and cheese; mix well. Spoon 1/4 cup taco mixture into each wonton cup. Sprinkle evenly with cheese.
- Bake 2 minutes or until cheese is melted. Cool 5 minutes. Remove from pan. Top each taco cup with sour cream, green onions and olives. Serve warm.

- Heat oven to 375°F. Spray 1 1/2-quart casserole with cooking spray. Cook pasta as directed on package, omitting salt and oil and using minimum cook time. Drain and return to saucepan.
- Meanwhile, in 2-quart saucepan, heat squash and broth to boiling over high heat; reduce heat. Cover; simmer 15 minutes or until squash is tender. Stir in milk and taco seasoning. Return to boiling; remove from heat. Place squash mixture in blender. Cover; blend on medium speed 20 seconds or until smooth. Return to saucepan. Stir in 1 cup of the cheese until melted. Pour over pasta; mix well. Pour mixture into casserole. Top with tomato slices.
- Bake uncovered 15 minutes. Sprinkle with remaining 1/4 cup cheese. Bake 4 to 5 minutes longer or until cheese is melted.
- Divide pasta mixture among 4 plates. Top each serving with 1 tablespoon each salsa and sour cream. Crumble 3 tortilla chips over each. Garnish with cilantro. Serve immediately.

- Preheat the oven to 350 degrees F (175 degrees C). Grease a muffin tin with nonstick cooking spray. In a small bowl, stir together the bread crumbs, olive oil and salt; set aside.
- Bring a large pot of lightly salted water to a boil. Add the macaroni and cook for about 8 minutes, it should still be a little bit firm. Remove from the heat, drain and return to the pan; stir in the butter and egg until pasta is evenly coated. Reserve 1/2 cup of sharp Cheddar cheese and stir the remaining Cheddar cheese, milk and mozzarella cheese into the pasta. Spoon into the prepared muffin tin. Sprinkle the reserved cheese and the bread crumb mixture over the tops.
- Bake for 30 minutes in the preheated oven, or until the topping is nicely browned. Allow the muffins to cool for a few minutes before removing from the pan. This will allow the cheese to set and they will hold their muffin shape.

They're so easy to fix the kids can help you with most of the work, too. In my tests, the panko crust worked only for the miniature cupcakes. - Preheat oven to 400 degrees.
- Cook pasta according to package directions.
- Meanwhile, prepare pans:
- Either line a muffin tin with 12 paper or foil cupcake liners, or grease mini muffin pans (enough for 24 mini cupcakes) with butter and sprinkle with panko crumbs, dumping out excess crumbs.

- Heat a large skillet over medium-high heat. Cook and stir ground beef in the hot skillet until browned and crumbly, 5 to 7 minutes. Drain and discard grease. Add salsa, corn, and taco seasoning. Season meat sauce with salt and pepper.
- Preheat the oven to 375 degrees F (190 degrees C).

Top with 1 tablespoon of taco meat and 1 tablespoon of shredded cheese. Repeat the layers again with a wonton wrapper, refried beans, tortilla chips, taco meat and cheese.
- Bake for 15-18 minutes or until golden brown. Remove cupcakes from tin and top with your favorite taco toppings (like sour cream, diced tomatoes, onion or cilantro).
