WEEKDAY MEAL-PREP TURKEY TACO BOWLS RECIPE BY TASTY
Here's what you need: oil, red bell pepper, yellow bell pepper, large red onion, salt, pepper, ground turkey, taco seasoning, diced tomato, rice, black beans, corn, salsa, lime, cheddar cheese, fresh cilantro

Steps:
- Heat oil in a large skillet over medium-high heat.
- Add the peppers and onions and season with salt and pepper, to taste. Cook, stirring occasionally, until vegetables have softened. Remove from pan, set aside.
- Add ground turkey to hot skillet. Break apart with a wooden spoon to separate.
- Season with taco seasoning, stir, cooking until meat has browned and cooked through.
- Stir in tomatoes. Bring to a gentle simmer for about 5 minutes. Remove from heat.
- To assemble the taco bowls, add a base of rice to 4 food storage containers. Top each with a scoop of black beans, corn, salsa, cheddar cheese, cooked peppers and onions, and taco meat. Garnish with fresh cilantro and a lime wedge.
- Store in the refrigerator (and enjoy any extras immediately). Can be kept refrigerated for up to 4 days.

TURKEY TACO LETTUCE WRAPS

- Heat 2 tablespoons of the olive oil in a large skillet over medium-high heat. Add the turkey and season with salt and pepper. Cook the meat, breaking it up into very small pieces, until cooked through, about 6 minutes. Remove to a plate.
- Add the remaining teaspoon of olive oil, the garlic and red onion to the skillet. Reduce the heat to medium-low and cook, stirring, until tender, about 5 minutes.
- Return the turkey to the skillet. Add the chili powder and 1 cup water and increase the heat to medium-high. Cook until most of the water has evaporated, about 3 minutes. Add the corn and beans and cook until no liquid remains, about 3 minutes. Season with a sprinkling of salt and pepper.
- Pile the turkey filling onto the lettuce leaves. Top with some pico de gallo, avocado, queso fresco, cilantro, and a squeeze of lime. Serve with additional lime wedges.
- Combine the tomatoes, jalapeno, lime juice, onion, cilantro and salt in a small bowl and mix.

- Preheat oven to 400°. In a large skillet, cook and crumble turkey with pepper, celery and green onions over medium-high heat until no longer pink, 5-7 minutes. - Heat the olive oil in a large skillet over medium heat. When the oil is shimmering, add the onion and cook until starting to soften and caramelize, about 10 minutes.
- Increase the heat to medium-high and add the ground turkey. Season with the salt and hearty spice blend. Cook, stirring occasionally, allowing the turkey to brown slightly. Once the turkey is cooked through, about 8 minutes, remove the pan from the heat.
