A quick and easy preparation for the best Tacos al Carbon at home (and indoors)! Featuring flavorful, pan-seared flank steak and flour tortillas.

1/2 cup freshly squeezed lime juice ((about 4-6 limes))
1 tablespoon + 1 1/2 teaspoon Kosher salt, separated
2 teaspoons granulated sugar
3 teaspoons black pepper, separated
1 cup + 4 tablespoons canola or avocado oil, separated
1/4 cup chopped cilantro
4 cloves of garlic, roughly chopped
2 pounds flank steak ((no more than 3/4" thick -- see note below))
12 flour tortillas
Topping Ideas: Queso, shredded cheese, guacamole, pico de gallo, shredded lettuce, or sour cream

Steps:

  • Add the lime juice, 1 tablespoon Kosher salt, sugar, and 1 1/2 teaspoons pepper to a small mixing bowl and whisk to combine. Slowly drizzle in 1 cup of oil, whisking all the while. Then, add the cilantro and garlic and stir to combine.
  • Transfer the marinade to a zip-top bag and add the flank steak. Refrigerate for at least 4 hours or up to overnight.
  • Remove the beef from the bag and pat dry with a paper towel. Drizzle with 1 tablespoon of oil and sprinkle with 1 1/2 teaspoon Kosher salt and 1 teaspoon pepper. Rub all over to adhere, and set aside until ready to use.
  • Add the remaining 3 tablespoons of oil to a large, skillet (preferably cast iron) over medium-high to high heat. Once the oil has come to temperature, sear the steak for 6-7 minutes on the first side, turn, and sear for 4-5 minutes more.
  • Allow to rest 10 minutes. Then, slice the beef as thin as possible (cutting against the grain), roll in flour tortillas, and top as desired.

This is my favorite tacos al carbon recipe with marinated flank steak that is grilled over hot charcoal for that wonderful smoky flavor, served with roasted red pepper and pico de gallo. Absolutely delicious!

1-2 serrano peppers (minced - or use jalapeno peppers for a milder version)
4 cloves garlic minced
3 tablespoons chopped green onion
¼ - ½ cup chopped cilantro
¼ cup olive oil
2 tablespoons chili oil
Juice from 2 large oranges (- about a ¾ cup)
Juice from 2 limes
3 tablespoons white wine vinegar (- apple cider vinegar is good too)
1 tablespoon ancho powder (- optional, but I LOVE it)
1 teaspoon cumin
½ teaspoon sea salt
½ teaspoon black pepper
2 pound flank steak (or use skirt steak, or your favorite cut of beef)
12 flour tortillas (warmed (or more as needed))
Your favorite toppings. I am using a grill-roasted red bell pepper and pico de gallo. And hot sauce!

Steps:

  • Whisk together the marinade ingredients in a large bowl until well combined.
  • Add the steak to the large bowl with the marinade and massage the marinade into the meat. Or, add the steak to a large sealable baggie and pour in the marinade.
  • Refrigerate and marinate at least 4 hours, or overnight for better flavor penetration.
  • Heat your charcoal grill to medium-high heat. Spread the fiery coals out for better heat distribution.
  • Remove steak from the marinade and discard the marinade. Grill the flank steak for 6-7 minutes, then flip and grill another 4-5 minutes, or until the internal temperature reaches 125 degrees F when measured with a meat thermometer, or your preferred temperature. See recipe notes for temperatures.
  • Cover the steak with foil and rest for 5 minutes to let the juices redistribute. Slice the beef against the grain into thin strips, or with the grain for chewier steak tacos.
  • Serve pieces of charcoal grilled flank steak onto warmed flour tortillas and top with your favorite toppings. Enjoy!

1/2 pound corn masa
7 1/2 ounces water
1 1/4 pounds chicken breast
1 1/2 ounces lime juice
3/4 ounces garlic
1/4 tablespoon salt
1/4 tablespoon pepper
1 1/2 ounces vegetable oil
3/8 ounces chopped jalapeno pepper
1/4-ounce cilantro
1/2 teaspoon red crushed chilies
3/4-ounce and 1 teaspoon liquid smoke (optional)
4 ounces green tomatillos
1/2-ounce chopped onions
1/2-ounce cilantro
1 serrano pepper
Salt, to taste

Steps:

  • To make the corn tortillas: Mix corn masa with water to make tortilla dough. Form a ball using 1 ounce of the dough. Place it into the tortilla press to form 1 tortilla and transfer onto a hot grill until it is well cooked on both sides. The tortilla will be soft and puffed when done.
  • For Chicken Fajita Filling: First, marinate the chicken breast in lime juice, garlic, salt, pepper, oil, jalapeno pepper, cilantro, red chilies and liquid smoke. After marinated and cooked on both sides on the grill, cut into thin strips.
  • For tomatillo Sauce: Roast the tomatillos and serrano peppers on the grill. Use Mexican stone bowl mortar to mash up the ingredients. Mash all the ingredients, keeping it chunky. Add salt to taste. To assemble Tacos Al Carbon: Fill 1 tortilla with the chicken and tomatillo sauce and roll.

8 dried guajillo chile peppers
2 dried ancho chile peppers
1 tablespoon vegetable oil
1 large white onion, diced
3 cloves garlic, chopped
2 cups pineapple juice
1 cup fresh orange juice
5 tablespoons apple juice
1 cup Mexican beer (such as Tecate)
1/2 cup distilled white vinegar
1 tablespoon dried oregano
1 tablespoon paprika
1 tablespoon ground annatto
1 teaspoon ground cloves
Kosher salt and freshly ground pepper
6 pounds boneless pork shoulder, cut into 2-inch-thick slabs
Borracho Tortillas, for serving (recipe follows)
Pineapple-Serrano Salsa, for topping (recipe follows)
Tomatillo salsa, crumbled cotija cheese, crushed chicharrónes (fried pork rinds), fresh cilantro and sliced radishes, for topping
Lime wedges, for serving

Steps:

  • Make the marinade: Soak the dried chiles in warm water until softened, about 15 minutes; drain. Discard the stems and seeds. Heat the vegetable oil in a medium saucepan over medium heat. Add the chiles, onion and garlic and cook, stirring, until the onion is translucent, about 5 minutes. Transfer to a blender and add the pineapple juice, orange juice, apple juice, beer, vinegar, oregano, paprika, annatto, cloves, 2 tablespoons salt and 1 tablespoon pepper; puree until smooth.
  • Make the tacos: Place the pork in a large roasting pan and pour the marinade on top; cover with foil and refrigerate at least 4 hours.
  • Preheat the oven to 350˚ F. Transfer the pork to the oven and roast, covered, 3 hours. Remove the pork from the braising liquid and transfer to a cutting board; let rest at least 10 minutes. Reserve the braising liquid. Cut the pork into 1/4-inch pieces and return to the braising liquid, tossing to coat.
  • Assemble the tacos: Arrange the pork on the tortillas and top with the pineapple-serrano salsa and tomatillo salsa. Top with cotija, chicharrónes, cilantro and radishes. Serve with lime wedges.
  • Soak 20 dried guajillo chiles in warm water at least 30 minutes; drain. Remove the stems and seeds. Transfer the chiles to a blender and add 4 cups water, 5 garlic cloves, 1 diced onion, 2 teaspoons each chicken stock and kosher salt, 1 teaspoon each pepper and dried oregano and 1/2 teaspoon cumin; puree. Strain through a fine-mesh sieve. Heat 2 tablespoons vegetable oil in a nonstick skillet over medium heat. Dip a tortilla in the chile mixture, then add to the skillet and cook until lightly browned, 1 minute per side. Remove and sprinkle with cotija cheese. Repeat to make about 30 tortillas.
  • Heat a grill to medium high. Peel 2 pineapples and cut into 1/4-inch-thick planks; grill until marked, about 3 minutes per side. Finely chop the pineapple, removing the core. Soak 2 to 3 thinly sliced serrano chiles in ice water, 10 minutes, then drain. Combine the pineapple, serranos, 2 diced small red onions, 1/2 cup chopped cilantro, 2 tablespoons lime juice, 2 teaspoons kosher salt and 1/2 teaspoon pepper in a bowl; toss. Refrigerate until ready to serve.

2 medium white onions, sliced into 1/2 inch rounds (keep the rounds intact for easy grilling)
3 garlic cloves (peeled and roughly chopped)
3 tablespoons fresh lime juice
1/4 teaspoon cumin (preferably freshly ground)
salt
1 lb skirt steak, trimmed of surface fat as well as silver skin
olive oil, for brushing the onions and meat
12 warm fresh corn tortillas
lime wedge, for serving

Steps:

  • Marinate the meat for at least one hour in a mixture of 1/2 onion and the garlic, lime juice, cumin and a 1/2 teaspoon salt.
  • Grill peppers and onion over open flame until blackened.
  • Remove excess marinade, oil steak lightly and grill (1 1/2- 2 minutes for medium rare).
  • Cut steak into strips making sure to cut against the grain.
  • Combine with grilled onions and peppers.
  • Serve with corn tortillas.
  • Sprinkle just before serving with lime wedges.

TACOS AL CARBON WITH AVOCADO SALSA

In the southwest and Mexico, there are little stands serving tasty meat, wrapped in a corn tortilla and topped with salsa. The Taquerias serve the best Tacos Al Carbon. This is a pretty authentic recipe for these tasty little tacos. It is flank steak marinated with all the flavours of Mexico. The avocado salsa is a great side dish by itself, but is excellant as a filling for the tacos. It does need to marinate for 4-6 hours. Don't forget the cerveza with lime!

1 1/2 lbs flank steaks
3 -4 cloves garlic, minced
3 limes, juice of
1 lemon, juice of (juice of both lemon and lime should equal 1/2 cup)
2 tablespoons cilantro, finely chopped
seasoning salt
1/2 cup olive oil
10 corn tortillas
3 small avocados, chopped
1 large tomatoes, chopped
1/2 onion, chopped
2 tablespoons cilantro, finely chopped
3/4 lime, juice of
seasoning salt

Steps:

  • Lightly sprinkle meat with seasoning salt.
  • Cut into 3-4 large pieces.
  • Mix lime and lemon juices, garlic, cilantro, and olive oil.
  • Place meat and marinade in plastic bag or plastic bowl.
  • Marinate 4-6 hours, turning occasionally.
  • Discard marinade.
  • Grill meat over medium heat@ 15 minutes, turning occasionally.
  • Cook steak until desired doneness, the 15 minutes over medium heat creates medium done steak.
  • Cut into strips and serve in corn tortillas.
  • Top with 1-2 Tbl.
  • of Avocado salsa.
  • While meat is cooking chop up ingredients for Avocado salsa, sprinkle with lime juice and seasoning salt.
  • I leave avocado pits in mixture to prevent discoloration.
  • To warm tortillas you may wrap them in foil and place on grill or wrap in paper towels and microwave for 30-45 seconds.
  • Sprinkle with a small amount of water if tortillas are very dry before warming them.
