TAGLIOLINI VERDI GAMBERETTI E ZUCCHINE



Tagliolini Verdi Gamberetti e Zucchine image

Number Of Ingredients 9

1/2 pound green tagliolini
3 tablespoons olive oil
2 cloves garlic minced
6 small zucchini very thinly sliced
1 cup fish stock
1/4 cup brandy
1/4 cup tomato sauce
1 pound small (36 to 45 count) shrimp peeled
salt and red pepper to taste

Steps:

  • Cook pasta according to package directions. In a large, heavy skillet, heat the oil over medium-high heat and sauté garlic for 2-3 minutes. Add zucchini strips and sauté for 4-5 minutes, stirring constantly. Stir in the stock, brandy, and tomato sauce and simmer 2-3 minutes. Add the shrimp to the sauce and cook until shrimp are opaque, about 2-3 minutes. When pasta is al dente, add to the skillet, gently toss with the sauce and simmer 1-2 minutes. Season to taste with salt and red pepper. Serve family style on a large decorative platter.
