Tahini Chicken image

The key ingredient, tahini, is a sesame paste available in Asian stores, but recently has been seen in major grocery chains. It tastes like a mix of Asian and Mediterranean, close to a peanut sauce satay but made from sesame. It's quick, tasty, and out of the ordinary. Serve over couscous or noodles.

¾ cup water
1 cube chicken bouillon
¼ cup tahini (sesame paste)
2 tablespoons soy sauce
1 tablespoon honey
1 clove garlic, minced
2 teaspoons minced fresh ginger
2 teaspoons butter, or as needed
2 skinless, boneless chicken breast halves, cut into cubes, or more to taste
2 tablespoons all-purpose flour, or as needed
1 teaspoon sesame seeds, or as desired

Steps:

  • Bring water and bouillon cube to a boil in a pot until bouillon is dissolved; decrease heat to low. Whisk tahini, soy sauce, honey, garlic, and ginger into bouillon mixture until smooth. Keep sauce warm over low heat.
  • Heat butter in a skillet over medium heat; cook and stir chicken until no longer pink in the center, 5 to 10 minutes.
  • Whisk flour into tahini sauce until thickened, 2 to 3 minutes. Add cooked chicken to tahini sauce and toss to coat.

6 chicken breast halves with skin and bones (4 to 4 1/2 lb total)
2 tablespoons extra-virgin olive oil
1/2 teaspoon black pepper
2 teaspoons salt
2/3 cup well-stirred tahini (Middle Eastern sesame paste)
1/2 cup water
1/2 cup fresh lemon juice
4 garlic cloves, chopped
1/2 teaspoon sugar
1/2 lb sugar snap peas, trimmed
1 red bell pepper, cut into 1/4-inch-thick strips
1/4 cup sesame seeds, toasted

Steps:

  • Put oven rack in middle position and preheat oven to 450°F.
  • Rub chicken with oil in a shallow baking pan (1 inch deep) and sprinkle with pepper and 1 teaspoon salt. Roast chicken until just cooked through, 40 to 45 minutes.
  • While chicken roasts, blend tahini, water, lemon juice, garlic, sugar, and remaining teaspoon salt in a blender until smooth.
  • Blanch sugar snaps in a 2-quart saucepan of 1 minute, then drain in a colander. Rinse under cold running water to stop cooking and drain well.
  • When chicken is cool enough to handle, remove skin and discard. Remove meat from bones in large pieces, discarding bones, then pull meat into 1/3-inch-wide strips and transfer to a large bowl. Add sugar snaps, bell pepper, and dressing and toss to coat. Sprinkle with sesame seeds.

½ cup avocado oil
2 medium lemons, juiced
3 cloves garlic, minced
2 teaspoons cracked black pepper
2 teaspoons ground cumin
2 teaspoons ground paprika
1 teaspoon kosher salt
½ teaspoon ground turmeric
½ teaspoon red pepper flakes
1 ½ pounds boneless, skinless chicken thighs
½ cup tahini
¼ cup olive oil
¼ cup water, or more as needed
1 medium lemon, juiced
sea salt and cracked black pepper to taste
½ head romaine lettuce
½ medium head butter lettuce
½ cup chopped fresh parsley
½ cup chopped fresh mint
2 cups cherry tomatoes, halved
½ medium English cucumber, seeded and sliced
1 small red onion, thinly sliced

Steps:

  • Combine avocado oil, lemon juice, garlic, pepper, cumin, paprika, kosher salt, turmeric, and red pepper flakes in a small bowl and whisk to combine.
  • Place chicken thighs into a gallon-sized resealable bag and pour the marinade over. Rub the marinade into the chicken with clean hands, then press the air out of the bag, seal, and place in the refrigerator. Marinate for at least 3 hours, or up to overnight.
  • Preheat the oven to 425 degrees F (220 degrees C).
  • Remove chicken from the marinade and place it onto a rimmed baking sheet. Pour any excess marinade over the chicken.
  • Roast in the preheated oven until no longer pink in the centers, about 30 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Set aside to cool slightly, then slice into 1/2-inch strips.
  • Place tahini, olive oil, 1/4 cup water, lemon juice, salt, and pepper for dressing into a blender. Blend until emulsified, adding additional water as needed to reach desired consistency.
  • Chop romaine and butter lettuces. Place in a large bowl and toss to combine with parsley and mint. Layer tomatoes, cucumber, and red onion over the herb salad base. Top with chicken and drizzle with dressing to taste. Serve immediately.

Trim both ends of the shallot, halve it lengthwise, and thinly slice it too. Place both in a cold pan with the oil and set it over low heat until they're a deep, even golden, 30 to 40 minutes; stir occasionally to make sure the heat circulates evenly (this builds flavor without any bitterness, so don't try to speed it up with a higher flame).
  • 2. Roast the pistachios on a rimmed baking sheet while the garlic and shallots cook. Remove them from the oven when they're fragrant, 7 minutes or so.
  • 3. Line a plate with paper towels. Strain the garlic and shallots over a clean bowl and spread them on the plate in an even layer to drain. Wipe out the pan and fill it with the oil from the bowl along with the coriander seeds, black sesame seeds, and white sesame seeds. Toast, still over low heat, until they're crunchy and aromatic, another 8 minutes or so. Drain on the same plate as the shallots and garlic.
