SALMON WITH TAHINI SAUCE
This colourful fish supper is ready in just half an hour, served on a bed of couscous with crunchy cucumber and pomegranate seeds

Steps:
- Tip the couscous into a large heatproof bowl and pour over 400ml boiling water. Cover with cling film and leave to stand for 8-10 mins while you cook the fish.
- Heat a large, non-stick frying pan over a medium heat. Brush the salmon fillets with olive oil and fry for 5 mins on one side or until opaque halfway up the side of the fillet. Flip the fillets over carefully and cook for another 1-2 mins or until cooked through, then remove from the heat.
- Mix the tahini with the lemon juice and a splash of water to make a sauce.
- Drain any excess water from the couscous and tip into a bowl, adding the cucumber, pomegranate seeds and parsley. Serve the salmon on top of the couscous, with lemon wedges on the side and the tahini sauce poured over or served alongside.

EASIEST BAKED SALMON WITH LEMON TAHINI SAUCE
The easiest baked salmon is roasted whole on a sheet pan and topped with a quick lemon tahini sauce that's nutty, fresh and perfect for fish.

Steps:
- Preheat the oven to 400F.
- Place the salmon fillet on a sheet pan and drizzle on olive oil, 1 teaspoon of the salt, and 1 teaspoon of the pepper.
- Place in the oven for about 20-25 minutes, or until the salmon flakes apart easily in the middle.
- In the meantime, mix together the tahini, lemon juice, garlic powder, remaining salt, remaining pepper, and 1 tablespoon of the water. Gradually add more water, if needed, until you reach your desired consistency. I like my sauce runny enough to drizzle, but thick enough that it sticks to what I dip it in.
- When the salmon is done, drizzle on the tahini sauce, or serve it on the side and dig in!

- Whisk together tahini, maple, tamari, garlic and ginger in a baking dish. Spoon 2 tablespoons of the tahini mixture into a small dish and set in the refrigerator for step 4. Place salmon in the marinade, and turn to coat. Set in refrigerator 30 minutes.
