This red wine-poached pear with chocolate recipe is a perfect dessert option for the holidays, cold winter nights, or as a show-stopper to impress your friends. 4 pears, peeled, or more to taste
1 ½ cups red wine
1 cup water
⅔ cup white sugar
2 tablespoons lemon juice
2 teaspoons ground cinnamon
1 star anise pod
1 (11 ounce) jar chocolate sauce (such as Fran's®)

Steps:

  • Cut bottom off each pear and core from the bottom to give each pear a flat bottom to stand upright.
  • Combine wine, water, sugar, lemon juice, cinnamon, and star anise in a large saucepan; bring to a boil. Reduce heat and arrange pears on their sides in the saucepan. Simmer pears for 10 to 12 minutes. Turn pears and continue simmering until tender and easily poked with a fork, 8 to 10 minutes. Work in batches if needed.
  • Remove pears from wine mixture and place in a serving dish, standing upright. Continue boiling wine sauce until reduced to about 3/4 cup, 5 to 10 more minutes.
  • Fill each pear's core cavity with chocolate sauce. Pour wine sauce over each pear.

2 cups medium-bodied dry red wine, like gamay or Côtes du Rhône
1/4 cup sugar
1/2 teaspoon grated lemon zest
Pinch grated nutmeg
1/2 teaspoon grated ginger
1/8 teaspoon black pepper
4 large ripe peaches or nectarines
1/4 cup blackberries, for garnish (optional)

Steps:

  • Put wine in a glass or stainless-steel bowl. Add sugar and stir to dissolve, then add lemon zest, nutmeg, ginger and black pepper. Chill well.
  • Peel peaches and cut into 1/2-inch wedges. Cover with plastic wrap and chill.
  • To serve, pour 1/3 to 1/2 cup chilled wine mixture into 4 to 6 wide-mouthed wineglasses or coupes. Add sliced peaches to each glass, dividing them evenly. Garnish each portion with a few blackberries, if desired.

2 firm but ripe pears, peeled, seeded and quartered
1 cup fresh pitted tart cherries
1/2 cup granulated sugar
1 tablespoon cornstarch
1 cup red wine
2 whole star anise
Pinch of kosher salt
1 teaspoon red wine vinegar
Vanilla bean ice cream, for serving

Steps:

  • Prepare a grill for indirect heat. If using a charcoal grill, build the hot coals on one side only. If using a gas grill, heat one side only to medium-high heat.
  • Add the pears, cherries, sugar and cornstarch to a large saucepot and mix to coat the fruit. Add the red wine, star anise and salt. Place the saucepot over direct heat, bring the mixture to a boil and cook, simmering, until the wine is reduced and slightly thickened, about 5 minutes.
  • Remove the saucepot from the heat and add the red wine vinegar. Discard the star anise. Let cool slightly.
  • Serve by spooning over some vanilla bean ice cream.
  • (Alternatively, you can poach the fruit over medium-high heat on a stovetop.)

1 cup white sugar
2 cinnamon sticks
4 whole cloves
1 strip orange zest
1 teaspoon fennel seed
3 whole black peppercorns
2 bay leaves
6 large firm pears

Steps:

  • Combine the red wine, sugar, cinnamon, cloves, orange zest, fennel seed, peppercorns, and bay leaves in a large saucepan. Peel the pears, and remove the cores from the bottom, leaving the stems intact; set aside. Bring the wine to a boil over high heat, stirring until the sugar has dissolved. Add the pears, return to a simmer, then reduce the heat to medium-low, and continue simmering until tender, about 25 minutes.
  • Remove the pears from the wine syrup, cover, and refrigerate until cold. Strain the syrup through a mesh sieve, and discard the spices. Simmer the syrup over medium heat until thickened enough to coat the back of a spoon. Refrigerate the syrup until cold.
  • Once the syrup is cold, pour over the pears, cover, and chill at least 2 hours before serving.

4 -8 tamarillos (two per person)
1/2 cup sugar
1/2 red wine (pinot noir or merlot)

Steps:

  • Peel the tamarillos.
  • These can be blanched in water first to make the peeling easier.
  • Then slice lengthwise.
  • Place the tamarillos, cut side up, into an oven dish.
  • Pour the wine over them.
  • Sprinkle with the sugar.
  • Bake 15 to 20 minutes at 180 degrees C.
  • Remove from the oven.
  • Turn the tamarillos over to soak up the juices, which will have become gorgeous and thick.
  • Serve warm or cooled with whipped cream.
  • Spoon remaining liquid over the top.
