¼ cup all-purpose flour
¼ cup firmly packed brown sugar
2 tablespoons chilled margarine or butter, cut into pieces
1 ½ cups all-purpose flour
1 cup Quaker® Oats (Quick or Old Fashioned, uncooked)
⅓ cup firmly packed brown sugar
1 tablespoon baking powder
1 cup skim milk
¼ cup canola oil
1 egg, lightly beaten
1 teaspoon vanilla extract

Steps:

  • Heat oven to 400 degrees F. Line twelve medium muffin cups with paper baking cups or spray bottoms only with cooking spray.
  • For streusel, in small bowl, combine oats, flour and sugar; mix well.
  • Cut in butter with pastry blender or two knives until mixture is crumbly. Set aside.
  • For muffins, in large bowl, combine flour, oats, sugar and baking powder; mix well.
  • In small bowl, combine milk, oil, egg and vanilla; blend well. Add to dry ingredients all at once; stir just until dry ingredients are moistened. (Do not overmix.)
  • Fill muffin cups almost full. Sprinkle with reserved streusel, patting gently.
  • Bake 18 to 20 minutes or until golden brown.
  • Cool muffins in pan on wire rack 5 minutes. Remove from pan. Serve warm.

1 1/4 cups boiling water
1 cup uncooked instant rolled oats
1/2 cup (1 stick) butter at room temperature
1 cup white sugar
1 cup brown sugar
2 teaspoons vanilla
2 eggs
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup millet

Steps:

  • Preheat the oven to 350. Butter 12 muffin cups.
  • Stir the oats into the boiling water, cover, remove form heat and let stand 20 minutes. Cool.
  • Sift together the flour, baking soda and salt.
  • In a large mixing bowl, beat the butter until creamy. Slowly add the white and brown sugars, beating until smooth and creamy. Add the vanilla and the eggs and beat until well blended.
  • Add the cooled oatmeal to the butter mixture and stir well to blend. Add the flour mixture and stir. Stir in the millet.
  • Spoon the batter into the muffin cups, filling about 2/3 full. Bake for about 15 minutes, or until a straw inserted in the center of a muffin comes out clean.
  • Gently run a table knife around the edge of each muffin, lift them out and place on a rack to cool. These muffins freeze well.

2 1/3 cups quick-cooking oats (I have had success with all varieties of oats including using as much as a cup of steel cut oats)
1 cup whole wheat or white flour
1/2 cup (packed) dark brown sugar
1/2 cup sugar
2 tablespoons natural oat bran (if you have it)
2 tablespoons wheat germ (if you have it)
2 teaspoons ground cinnamon
1 1/2 teaspoons baking soda
1 teaspoon kosher salt
1 cup buttermilk
1/2 cup canola oil
1 large egg
1 teaspoon vanilla extract
1/3 cup boiling water

Steps:

  • Preheat oven to 375°F. Spray 8 large muffin cups (1-cup capacity) or 18 standard muffin cups (1/3-cup capacity) with nonstick spray, or line them with paper muffin liners. (Note: I baked off these muffins in paper-lined ramekins. It worked beautifully.)
  • Whisk oats and next 9 ingredients in large bowl. Add buttermilk, oil, egg, and vanilla; whisk to blend. Stir in 1/3 cup boiling water and let stand 5 minutes. Divide batter among prepared muffin cups.
  • Bake muffins until tester inserted into center comes out clean, about 28 minutes for large muffins and 20 minutes for standard muffins. Cool 10 minutes. Turn muffins out onto rack; cool. Serve warm or at room temperature.

  • Preheat the oven to 400 degrees F. Line 10 cups of a 12-cup muffin tin with paper liners
  • In a separate medium bowl, whisk together the flour, baking powder, cinnamon, baking soda and salt.
  • Stir the melted butter, eggs and brown sugar into the bowl of oats and milk until well combined. Stir the flour mixture into the oat mixture until well combined. Fold in the white chocolate chips and dried apricots.
  • Using an ice-cream scoop or 2 large tablespoons, divide the batter among the 10 lined muffin tins. Whole Wheat Oatmeal Millet Muffins image

Sweet and delightfully crunchy. I adapted this recipe from one I found somewhere else on the internet - used honey instead of white sugar, wholewheat flour instead of all-purpose, cut down the brown sugar and boosted the millet content. The original recipe didn't contain any baking powder, which I found suspicious (?), so I added that in. I toasted the millet ahead of time, but can't say as it made much difference in the flavour (which is primarily vanilla-y and oaty)--the millet seeds do add a nice cake sprinkle-like crunch to things though. This is half of a recipe that was supposed to make 12 muffins, but the 6 muffins I got out of my version were a little on the large side--for medium-sized muffins, maybe stretch the batter out over 8-10 muffin cups. My muffins took an extra few minutes in the oven and still ended up being a bit moist in the middle, but maybe that's because the muffins were large and because I was using the toaster oven...?
