This is a classic warmer-upper that you can serve on chilly winter days. Pass the brandy separately for those who want it.

Yield 13 servings (about 3 quarts).

Number Of Ingredients 11

3 cinnamon sticks (3 inches)
3 whole cloves
2 whole allspice
1 bay leaf
3 quarts apple cider or apple juice
1/4 cup orange juice
1/4 cup lemon juice
1 tablespoon grated orange zest
2 tablespoons brown sugar
Dash salt
1 to 1-1/2 cups brandy, optional

Steps:

  • Place the cinnamon stick, cloves, allspice and bay leaf on a double thickness of cheesecloth; bring up corners of cloth and tie with kitchen string to form a bag. , In a large saucepan, combine the apple cider, juices, orange zest, brown sugar, salt and spice bag. Bring to a boil. Reduce heat to medium-low and simmer mixture for 30 minutes to blend flavors. Discard spice bag. Strain cider mixture and stir in brandy if desired. Serve immediately.

4 orange slices
½ cup fresh or frozen cranberries

Steps:

  • Combine all of the ingredients in a large pot and bring to a boil. Reduce the heat to low; simmer for 20 minutes. Ladle into mugs and serve warm. If you want to strain off bits of spices and fruit that are floating in the cider, you can pour the liquid through a fine mesh sieve or cheesecloth before serving.

1/3 to 1/2 cup sugar (to taste)
2 tablespoons mulling spices
MULLED CIDER: 1 quart apple cider
2 tablespoons mulling spices

Steps:

  • 1 MULLED WINE: In a saucepan, gently simmer 1 quart red wine, 1/3 to 1/2 cup sugar (to taste) and 2 tablespoons mulling spices for up to 20 minutes. 2 Remove the spices and serve the wine hot in mugs garnished with a cinnamon stick, or chill and serve over ice as a cooler. 3 MULLED CIDER: In a saucepan, gently simmer 1 quart apple cider and 2 tablespoons mulling spices for up to 20 minutes. 4 Remove the spices and serve the cider hot in mugs garnished with a cinnamon stick, or chill and serve over ice as a cooler. The cider is excellent with a jigger of rum or brandy added per cup.

Quick Cider-Mulled Wine image

This pared-down mulled wine recipe is great for impromptu entertaining as the weather gets cooler.

Number Of Ingredients 6

1 (750 ml) bottle juicy light red wine, such as Beaujolais
4 ounces brandy
2 cups fresh apple cider
2 star anise pods
6 whole cloves
2 cinnamon sticks; plus 6 more for serving (optional)

Steps:

  • Bring wine, brandy, apple cider, star anise, cloves, and 2 cinnamon sticks to a boil in a medium saucepan. Reduce heat to low and simmer until flavors are infused, about 15 minutes.
  • Divide among mugs, garnish with 6 cinnamon sticks, if using, and serve.
  • Do Ahead
  • Mulled wine can be made 2 hours ahead; cover and store at room temperature, or chill up to 3 days. Rewarm over medium-low heat before serving.

  • Preheat the oven to 200 degrees F (95 degrees C). Line a baking sheet with parchment paper.
  • Zest and peel orange and lemon. Cut peels into thinnest strips possible. Distribute zest and peels evenly on the prepared baking sheet.
  • Bake in the preheated oven until zest and peels are dry, 60 to 75 minutes.

  • Lay two pieces of cheesecloth on a flat surface.
  • Place broken cinnamon stick, cloves, allspice, and orange peel in the center.
  • Bring up corners and tie with string.
  • In a saucepan mix the ingredients for the cider and put the spice bag into it.
  • Heat till flavors are well-blended.
  • Remove the spice bag.

This is a recipe for a hot beverage we enjoy on cold winter evenings. When curled up with a good book in front of a blazing fire, nothing tastes better than cider. Preferably, it is made with cloudy, unfiltered sweet cider, the fresh juice of pressed apples, which I combine with cloves, allspice berries and cinnamon sticks. After being steeped together like tea, the cloves and allspice come to the top and can be removed before serving, and the stick of cinnamon, which sinks to the bottom, can be served with the liquid. Add bourbon or rum if you wish.

12 allspice berries
12 whole cloves
2 sticks cinnamon, broken into pieces

Steps:

  • Place all ingredients but the bourbon in a saucepan and heat over medium heat until the mixture is just below a boil. Cover, remove from the heat and let steep 5 minutes.
  • At that point, you will notice that the allspice and cloves have floated to the top; remove and discard them. Pour a tablespoon of bourbon, if desired, into each of six mugs and pour the cider mixture over it. Spoon a few cinnamon pieces into each mug, and serve immediately.
