4 salmon fillets, about 6 oz each
vegetable oil (for brushing)
marinade
4 cloves garlic, chopped
1 tablespoon grated ginger
1 tablespoon lemon juice
1 tablespoon garam masala (an Indian spice blend) or 1 tablespoon curry paste
2 tablespoons vegetable oil
1/4 cup plain yogurt
relish
1 large mango, peeled
3 green onions, finely chopped
1 tablespoon grated ginger
1 teaspoon finely chopped jalapeno pepper
2 tablespoons lime juice
2 tablespoons chopped mint leaves
salt

Steps:

  • Combine marinade ingredients in a small bowl& spread on salmon; refrigerate for an hour.
  • Dice mango into 1/2 inch cubes& combine with remaining relish ingredients; refrigerate until needed.
  • It can be made up to 12 hours ahead.
  • Brush salmon with oil, then grill for 2 minutes- flesh side down.
  • Turn over, close lid& grill for another 5 minutes or until white juices appear.
  • Serve relish on the side.

salt & freshly ground black pepper, to taste
1 teaspoon olive oil
2 medium fresh tomatoes, diced
1/2 medium sweet onion, finely chopped
6 -8 scallions, thinly sliced (about 1/3 cup)
2 tablespoons chopped fresh cilantro (I use fresh parsley)
1 1/2 tablespoons freshly squeezed lime juice or 1 1/2 tablespoons lemon juice
2 tablespoons low sodium soy sauce
4 -5 drops hot pepper sauce
1/8 teaspoon ground black pepper

Steps:

  • Combine salsa ingredients (tomatoes through black pepper).
  • Mix well and chill.
  • Sprinkle salmon with salt and pepper.
  • Heat a large non-stick skillet and coat it with olive oil.
  • Saute salmon fillet, skin side up, until lightly browned (about 3 minutes).
  • Turn fillet, cover, and cook over medium heat until it is opaque throughout. (about 5 minutes).
  • Cut fillet diagonally into 4 slices.
  • Serve with Tomato Salsa.

  • Preheat the oven broiler. Line a broiler pan with foil.
  • Broil salmon steaks on the prepared pan 12 minutes, or until easily flaked with a fork.
  • Heat olive oil in a medium saucepan over medium heat, and saute onion until tender. Stir in garlic, tomatoes, and cilantro. Cook until heated through, 1 to 2 minutes, and remove from heat. Mix in the mangos. Serve over the salmon steaks.

  • Pre-heat the Grill.
  • Wash the Salmon Fillet.

4 salmon fillets, skinless
2 tablespoons vegetable oil
2 tablespoons light soy sauce
2 tablespoons honey
1 inch fresh ginger, finely chopped
2 green onions, cut into long strips
1/2 lime, juice and zest of
black pepper
lime wedge, to serve

Steps:

  • Place the salmon fillet in a shallow non-metallic dish,.
  • Mix together the oil, soy sauce, honey, ginger, green onions, lime zest, juice and the seasoning.
  • Pour over the fillets and turn to coat.
  • Cover and marinate in the refrigerator for 30 minutes to 1 hours.
  • Lightly oil a baking tray.
  • Lift the fillets and green onion out of the marinade and place on the baking tray.
  • Brush the fillets with a little of the marinade, then cook for 3 minutes about 4-5 inches from broiler element on high.
  • Turn over, brush with more of the marinade and broil for 3-5 minutes until cooked though.
  • Garnish with lime wedges.
