1 envelope Italian salad dressing mix
1/2 teaspoon pepper
6 boneless skinless chicken thighs (about 1-1/2 pounds)
2 tablespoons butter, melted
1 large onion, chopped
2 garlic cloves, minced
1 can (10-3/4 ounces) condensed cream of chicken soup, undiluted
1 package (8 ounces) cream cheese, softened and cubed
1/4 cup chicken broth
Hot cooked noodles or rice, optional

Steps:

  • Combine salad dressing mix and pepper. In a 3-qt. slow cooker, layer half of the chicken, butter, salad dressing mixture, onion and garlic. Repeat layers. Cover and cook on low for 4-5 hours or until chicken is tender. Skim fat., In a small bowl, combine the soup, cream cheese and broth until blended; add to slow cooker. Cover and cook for 45 minutes or until heated through. , Remove chicken to a serving platter; stir sauce until smooth. Serve chicken with sauce and noodles or rice if desired.Freeze option: Cool chicken mixture. Freeze in freezer containers. To use, partially thaw in refrigerator overnight. Heat through slowly in a covered skillet until a thermometer inserted in chicken reads 165°, stirring occasionally.

1 red onion, coarsely chopped
4 cloves garlic, coarsely chopped
6 cups fresh orange juice
1 teaspoon cascabel chile powder
Salt and freshly ground pepper
3/4 cup olive oil

8 chicken thighs, skin on

Spicy Orange Glaze
2 oranges, peeled and segmented
1/2 pineapple, peeled and diced

1/4 cup red wine vinegar

Steps:

  • Spicy Orange Glaze: Place all ingredients in a medium saucepan and bring to a boil on the grill. Cook until reduced to 1 cup. Set 1/4 cup aside.
  • Chicken: Whisk together the oil, garlic and rosemary in a large baking dish. Add the chicken and turn to coat. Cover and marinate in the refrigerator for at least 4 hours or overnight. Preheat grill to medium-high. Remove chicken from marinade and season with salt and pepper to taste. Grill skin side-down until golden brown, about 4 to 5 minutes. Turn over and continue grilling for 6 to 7 minutes until cooked through, turning and basting with the Spicy Orange Glaze every 2 minutes. Remove from the grill, place on a platter and brush with the reserved Spicy Orange Glaze. Serve with the Orange-Pineapple Relish on the side.
  • Orange-Pineapple Relish: Combine all ingredients in a bowl and season with salt and pepper.

1 cup thawed orange juice concentrate
1 cup ketchup

Steps:

  • Preheat oven to 450 degrees, with rack in upper third. Season chicken with salt and pepper and arrange, skin side down, on a rimmed baking sheet. Bake until deep golden brown and cooked through, 45 to 50 minutes, flipping halfway through.
  • Meanwhile, in a medium saucepan, combine 1 teaspoon salt, juice concentrate, ketchup, brown sugar, vinegar, Worcestershire sauce, and hot sauce. Bring to a simmer and cook until mixture has thickened, 18 to 20 minutes.

Steps:

  • To make the sauce: in a saucepan over medium heat, stir the sauce ingredients together until the sugar dissolves and the flavors are blended, about 1 minute.
  • Preheat the oven to 350 degrees.
  • Place the chicken in a lightly sprayed or oiled 11 x 7 inch glass baking dish.
  • Pour the sauce over the chicken.
  • Cover and bake for 15 minutes.
  • Uncover, baste with the sauce, and continue to bake, uncovered, until the chicken is cooked through, about 15 minutes longer.

⅓ cup rice vinegar
2 tablespoons fish sauce

1 bunch green onions, sliced, white parts and tops separated
1 fresh jalapeno pepper, sliced into rings

1 bunch cilantro leaves, for garnish

Steps:

  • Whisk orange juice, brown sugar, rice vinegar, fish sauce, soy sauce, ginger, and crushed red pepper flakes in a large bowl.
