TAQUITO LASAGNA BAKE

- Heat oven to 400ºF.
- Spread 2 Tbsp. enchilada sauce onto bottom of 9-inch square baking dish sprayed with cooking spray.
- Top with layers of taquitos, beans and remaining enchilada sauce; sprinkle with cheese.
- Bake 25 min. or until heated through. Sprinkle with cilantro.
- Serve topped with sour cream.

TAQUITO-ENCHILADA BAKE

- Preheat oven to 375°F
- Pour 1/3 of the enchilada sauce into a lightly greased 11x7x2-inch baking dish. Arrange 1/2 the Jose Ole Taquitos over enchilada sauce. Evenly spread heated refried beans over taquitos.
- Mix red and green onions together.
- Layer 1/3 more sauce, 1/2 the onion mixture and 1/2 the shredded cheese. Top with remaining taquitos and enchilada sauce.
- Bake, covered, for 25 minutes or until heated through. The last 5 minutes of baking, top with remaining cheese.
- Garnish with onions and olives. Serve with sour cream if desired.
- Makes 4 to 6 servings.

- This family favorite can be made with Jose Ole Mexi-Minis, Taquitos or Chimichangas.

EASY TAQUITO CASSEROLE
This is an easy Tex-Mex dish that I got from a fellow parishioner at church. I doctored it up a bit. My family likes it 'cause it tastes good, but I like it for its simplicity.

- Lightly grease a 9 x 13 oven-proof dish with cooking spray or vegetable oil.
- Pour a box of frozen taquitoes into the dish.
- Sprinkle chopped onion and can of chopped green chilies over taquitoes.
- Pour 2 cans of red Enchilada sauce over taquitoes.
- Sprinkle chili powder over all.
- Top with as much shredded cheese as you like.
- Bake at 400 degrees F for 20-25 minutes-- until heated thoroughly.
- Serve with a black or refried beans and a green salad.
- Enjoy!

- Place ground beef in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, then season with taco seasoning, garlic, cayenne pepper, chili powder and water. Simmer for 10 minutes.
- Preheat oven to 375 degrees F (190 degrees C). Grease the bottom of a 9x13 inch baking dish.
- Place 6 tortillas into the prepared baking dish. Spread 1/3 of the salsa on top of the tortillas. Spread 1/2 of the meat mixture evenly over the salsa. Sprinkle with 1/2 of the green onions. Drop 1/2 of the sour cream randomly over the green onions. Top with 1/2 cup Cheddar and 1/2 cup Monterey Jack cheese. Repeat layers. Top with 6 tortillas, spread with remaining salsa, and sprinkle with remaining cheese.
- Bake in a preheated oven for 30 to 45 minutes or until cheeses are melted.

- In a large skillet, cook beef and onion over medium heat until meat is no longer pink, breaking meat into crumbles; drain. Sprinkle with salt and 1/4 teaspoon pepper; set aside. , In a large bowl, combine the pasta, 3 cups mozzarella cheese, cottage cheese, eggs, Parmesan cheese, parsley and remaining pepper. BAKED TACO TAQUITOS RECIPE
These Baked Taco Taquitos are healthy, delicious and full of flavor. They are a quick meal that comes together quickly and taste delicious.

Steps:
- Preheat oven to 425 degrees.
- Cover a cookie sheet with aluminum foil and spray lightly with cooking spray.
- In a large skillet, heat oil and add onion and garlic. Saute for about 5 minutes until soft.
- Add beef and taco seasoning, cooking until meat is browned.
- Add beans and 1 cup salsa. Mix well and let cook for a couple of minutes so that the flavors can meld and the mixture can thicken.
- Spoon 2-3 tablespoons of the taco meat mixture into a tortilla, topped with some shredded cheese and roll it up.
- Place taquito seam-side down on the baking sheet. Repeat with each taquito. Spray the top of each taquito with non-stick cooking spray and sprinkle with salt.
- Bake for 15-20 minutes (or until edges and tops are golden). Let cool for a couple of minutes.
- Serve with remaining salsa.
