TART-APPLE BISTRO SALAD
Featuring the bright taste of herbs and the tartness of apple, this salad is a refreshing starter.

Steps:
- Whisk together oil, vinegar, mustard, and honey in a large bowl; season with salt. Add romaine, frisee, apple, parsley, and chives, and toss to coat. Serve immediately.
APPLE TARTS
Steps:
- Preheat the oven to 400 degrees. Line 2 sheet pans with parchment paper.
- Cut each sheet of puff pastry into 4 squares. Divide the pastry between the prepared sheet pans and refrigerate while you prepare the apples.
- Peel the apples and cut them in half through the stem. Remove the stems and cores with a sharp knife and a melon baller. Slice the apples crosswise in 1/4-inch-thick slices. Place overlapping slices of apples diagonally across the pastry and place one slice of apple on each side of the arranged slices. Sprinkle the apples evenly with the sugar and dot them with the butter.
- Bake for 40 minutes, until the pastry is browned and the edges of the apples start to brown. Don't worry! The apple juices will burn in the pan but the tarts will be fine! When the tarts are done, heat the apricot jelly together with the Calvados until bubbly and brush the apples and pastry completely with the jelly mixture. Loosen the tarts with a metal spatula so they don't stick to the paper. Allow to cool and serve warm or at room temperature.
APPLE-CHOCOLATE SALAD
I had this for dessert in a movie bistro many years ago. Very simple but tasty treat! The chocolate should be at least 70 percent. The pecans can of course remain raw if you prefer that to toasting them.

- Slice the apple thinly and decoratively spread the slices on a plate.
- Sprinkle with lemon juice.
- Roughly chop the chocolate and sprinkle over the apple slices.
- Do the same with the toasted pecans.
- Sprinkle the cranberries over them, too.
- Top with maple syrup.
- Enjoy!

SWEET TART WALDORF APPLE SALAD
This salad is a combination of a fruit dip recipe I learned last week and an apple salad I saw in the grocery store. It was enough inspiration to come up with this delicious recipe for our cook-out this afternoon! I have two boys and a daycare and would recommend this recipe as super-simple to make with kids. Children love chopping apples (even littles can do this with a butter knife) and mixing the dressing. I used ¾ of my dressing and reserved the rest to use as fruit dip later.

- Make the dressing: Whisk together vinegar, shallot, mustard, salt, and pepper in a bowl. Add oil in a slow, steady stream, whisking until emulsified.
- Make the salad: Preheat oven to 350 degrees. Place baguette slices on a baking sheet, and toast until golden, 8 to 10 minutes.
- Meanwhile, toss together frisee, walnuts, and apple in a large bowl. Add dressing, and toss. Season with salt and pepper. Transfer to a serving platter.
- Preheat broiler. Place cheese, cut side up, on a second baking sheet, and drizzle with oil. Broil until top is browned and bubbling, 3 to 4 minutes. Place on platter. Serve with baguette toasts.

- Combine the pineapple chunks and marshmallows. Mix together, cover and refrigerate overnight.
- In a medium saucepan, stir together the pineapple juice, egg, flour, vinegar and sugar over medium low heat. Cook and stir sauce until thickened. Transfer to a medium sized bowl, cover and refrigerate overnight.

- Preheat oven to 425 degree F. Let the piecrust stand according to package directions. In a bowl combine granulated sugar, cinnamon, and lemon peel. Add apple slices, tossing to coat.
- Place unfolded piecrust on a large baking sheet. Spread caramel apple dip over crust to within 2 inches of edges. Place apple mixture over caramel. Sprinkle with nuts. Fold edges of crust 2 inches up and over apples, folding edges as necessary.
- Bake 20 minutes or until crust is golden brown and apples are just tender. In a small saucepan melt apple jelly over low heat. Brush melted jelly over entire tart and edges. Sprinkle with powdered sugar. Serve warm. Makes 8 servings.
