Vegan baking can be a little bit like Goldilocks in the classic fairy tale. Home cooks can find one recipe to be too dry, the next too moist; another one can be too sweet, but the next is not sweet enough. Happy ending alert: This vegan banana nut bread recipe is "just right" in every way.

1 cup organic granulated sugar
1 1/2 cups mashed ripe bananas (3 medium)
1/2 cup refined coconut oil, melted
1 teaspoon vanilla
1/4 cup unsweetened vanilla almond milk or soymilk
1 teaspoon apple cider vinegar
2 cups all-purpose flour
3/4 teaspoon baking soda
1/2 teaspoon salt
1/2 cup chopped walnuts, if desired

Steps:

  • Heat oven to 350° F. Grease bottom only of 9 x 5 x 3-inch loaf pan.
  • In large bowl, beat sugar, bananas, coconut oil and vanilla until smooth. Stir in almond milk and vinegar. Add flour, baking soda and salt; stir just until moistened. Stir in walnuts. Pour into pan.
  • Bake 1 hour to 1 hour 10 minutes or until toothpick inserted in center comes out clean and crack in top of loaf appears dry. Cool 10 minutes. Loosen sides of loaf from pan; remove from pan, and place on cooling rack. Cool completely, about 1 hour, before slicing. Wrap cooled bread in plastic wrap, and store in refrigerator.

4 ripe bananas, large
½ cup vegetable oil, or canola oil
½ cup unsweetened applesauce
¾ cup light brown sugar
1 teaspoon vanilla extract
½ teaspoon salt
1 ½ teaspoons baking powder
2 cups all purpose flour

Steps:

  • Preheat the oven to 350° F.
  • Grease a standard loaf pan with vegetable oil or spray.
  • Mix all the dry ingredients in a bowl and gently stir.
  • In a separate bowl, mix the applesauce, brown sugar, vanilla, and oil until evenly combined.
  • Mash the bananas finely with a fork in a separate bowl and add to the

  • Gently fold in the bowl of dry ingredients to the wet ingredients until everything is evenly combined. Do not over-mix.
  • Place the banana bread in the preheated oven for 60-70 minutes. Insert a toothpick into the loaf to see if it is ready. If the toothpick does not come out clean, bake for a few more minutes.
  • Leave the banana bread in the loaf pan for 10 minutes to settle, then transfer to a wire cooling rack and allow to cool completely. Enjoy!

4 bananas
1/2 cup walnuts, chopped
2 cups all-purpose flour
1/2 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon salt
1/4 teaspoon allspice
1/2 cup brown sugar
1/2 cup white sugar
1/2 cup margarine, softened
1/4 cup soymilk
1 teaspoon apple cider vinegar (I use Braggs)
1 teaspoon vanilla

Steps:

  • Spray a bread pan with non-stick spray and reheat the oven to 350 degrees F.
  • Sift together flour, baking soda, salt, spices, and walnuts in a large mixing bowl.
  • In the blender blend together margarine, sugars, bananas, soy milk, apple cider vinegar, and vanila.
  • Add the blended ingredients to the dry ingredients in the mixing bowl and mix well.
  • Pour batter into the bread pan and bake for at least an hour. Sometimes it may take 5 to 15 minutes longer, so make sure to keep an eye on it.

2 cups flour
1 banana, ripe
1 cup applesauce or 1 cup apple butter
1 teaspoon baking soda
1/3 cup vegetable oil
1 teaspoon vanilla
1/2 cup walnuts (optional) or 1/2 cup chocolate chips (optional)

Steps:

  • Preheat oven at 350 degrees F.
  • Mash the banana and the applesauce together.
  • Add oil, vanilla and sugar. Mix well.
  • Sift flour, salt and soda together and add to banana mixture with walnuts or chocolate chips, if using.
  • Put into loaf pan and bake for about 45 minutes or until toothpick comes out clean.

nonstick cooking spray, for greasing
1 stick unsalted butter
1 cup light brown sugar, plus more as needed
1 large egg
2 cups ripe banana, (about 4 large bananas)
½ cup full fat sour cream
2 teaspoons vanilla extract
1 ½ cups all purpose flour
1 teaspoon kosher salt
½ teaspoon baking soda
1 teaspoon ground cinnamon
½ cup dark chocolate chunk
1 tablespoon turbinado sugar

Steps:

  • Preheat the oven to 350°F (180°C). Grease a 9 x 5-inch loaf pan with nonstick cooking spray. Line the pan with parchment paper, leaving some overhang on the long sides so it will be easy to lift out the bread, and spray again.
  • Add the butter to a medium nonstick pan over medium heat. Cook, stirring occasionally, until the butter turns amber brown and smells nutty, about 3-4 minutes. Watch carefully so the butter does not burn. Remove the pan from the heat and set aside to cool for 10-15 minutes.
  • Add cooled brown butter and brown sugar to a large bowl. Beat with an electric hand mixer on medium speed until evenly combined, about 1 minute. Add the egg and beat until light and fluffy, 3-4 minutes.
  • In a medium bowl, combine the mashed bananas, sour cream, and vanilla and mix with a rubber spatula until well combined.
  • In a separate medium bowl, whisk together the flour, salt, baking soda, and cinnamon.
  • Alternate adding the flour mixture and banana mixture to the butter mixture, starting and ending with flour and folding with a rubber spatula between each addition until just incorporated. Fold in the chocolate chunks.
  • Pour the batter into the prepared loaf pan and smooth with an offset spatula, then sprinkle the turbinado sugar on top.
  • Bake the banana bread until golden brown and a toothpick or cake tester inserted in the center comes out clean, 60-70 minutes. Set the loaf pan on a wire rack to cool for at least 1 hour, then lift out the banana bread and slice.
  • Enjoy!
