Steps:
- Melt the butter or margarine in a large skillet over medium heat. Add the potatoes and spread out in an even layer. Cover and cook for about 5 minutes. Season with garlic, paprika, salt and pepper; stir to coat potatoes evenly.
- Cover and cook for another 15 minutes, turning potatoes occasionally. Remove cover, and mix in chives. Increase heat to medium-high and cook for another 10 minutes, stirring frequently, or until potatoes are tender.

- In a large skillet, cook chopped bacon over medium-low heat until crisp. Remove bacon from pan with slotted spoon and drain on paper towels. Remove bacon drippings from pan and reserve. , Working in batches, add 1/4 cup bacon drippings, potatoes, onion, salt and pepper to pan; toss to coat. Cook and stir over medium-low heat until potatoes are golden brown and tender, 15-20 minutes, adding more drippings as needed. Stir in cooked bacon; serve immediately.

Quick and easy home fries made from scratch. I'm using boiled potatoes, but you could use raw potatoes if you allow a bit more cooking time. Perfect side for breakfast.

Steps:
- Cut the boiled and cooled potatoes into cubes.
- Slice the onion.
- Place skillet over Medium heat and let warm up.
- Add bacon grease or oil.
- Add the onions.
- Add the cubed potatoes.
- Add garlic powder.
- Add black pepper.
- Add salt.
- Stir together well.
- Stir and cook until onions are translucent and potatoes are browned.
- Add the ketchup.
- Stir and let cook and brown about two more minutes.
- Serve warm
- Enjoy!
GARLIC HOME FRIES

- Bring a large pot of salted water to a boil. Add the potatoes, cover and cook over medium-high heat until just tender, about 6 minutes; drain.
- Heat the butter and olive oil in a large cast-iron skillet over medium heat; add the potatoes and spread into a single layer. Cook, undisturbed, until they start browning on the bottom, about 5 minutes. Add the onion and sprinkle with the paprika; flip the potatoes and cook 5 more minutes. Stir once, then continue cooking until the potatoes are mostly golden brown, about 5 more minutes.
- Meanwhile, roughly chop the garlic, pile the parsley on top and sprinkle with 1 teaspoon salt. Chop and mash together until finely minced. When the potatoes are done, add the garlic mixture to the skillet and toss to coat; cook until heated through, about 2 minutes. Season with salt and pepper.

- Cut the potatoes: Once the potatoes are washed and scrubbed well, cut into half-inch cubes. Add the potatoes to a pot and cover with water: Add the cubed potatoes to a large saucepan and cover with cold water to about one inch above the potatoes. Add a pinch of salt. Parboil the potatoes: With the saucepan uncovered, bring the water to a boil, then cook for an additional minute or two to parboil the potatoes. Cook the onions: While the water comes to a boil, heat 1 tablespoon of olive oil in a skillet, over medium heat. When hot, add the onions, season with salt and pepper, and cook, stirring occasionally, until soft and fragrant, about 5 minutes. Test the potatoes for doneness: To test the potatoes for doneness, stick the tip of a paring knife into a few of the potato cubes. The flesh should feel slightly firm, but softer and more tender than before cooking. The potatoes should not feel mushy. Drain the potatoes: Drain the potatoes in a colander, shake off any excess water, and cool for about 5 minutes. Heat oil and butter in a large skillet: Heat the remaining olive oil and butter in a wide cast iron pan or large skillet over medium heat. Add potatoes, season, and cook: When the oil is hot and shimmering, add the potatoes, season with salt and pepper, and toss to coat with the oil. Spread the potatoes in a single layer across the bottom of the pan, working in batches if necessary. Cook the potatoes, without stirring, for 8 to 10 minutes, so the bottoms become nicely browned and crispy. Add cooked onions and spices: Add cooked onions, garlic powder, and paprika to the skillet and stir to combine. Serve immediately: Remove the pan from the heat and serve immediately.

Steps:
- Roughly chop onion into wide pieces - I like inch wide slices, cut into about sixths.
- Chop pepper into similar size pieces, discarding stem and seeds.
- Heat about three tablespoons oil in large frying pan (preferably cast iron) over medium-high heat.
- Add onions, cook until golden and slightly transparent, about three minutes.
- Add peppers, cook until tender, about an additional two or three minutes.
- Peel and cube potatoes; I like them about 3/4" square. Add them and additional tablespoon or two of oil to frying pan.
- Add salt and pepper (preferably freshly ground) to taste.
- Cook, stirring frequently and then patting back down, until tender and cooked through and slightly golden brown, about 8 minutes.
- Stir one more time, and pat down to maximize surface area in contact with frying pan. Increase heat to high, and cook WITHOUT stirring to get a great crust, about an additional 5-8 minutes.
