BARBEQUE TEMPEH SANDWICHES
I hate tofu but love tempeh and this sandwich is tangy and tasty. My boyfriend and I eat this all the time. It's great because it's vegan for him and I still like it (even though I'm not a vegetarian).

Steps:
- Pour the barbeque sauce into a medium bowl. Crumble the tempeh into the sauce, and let it marinate a little, about 10 minutes.
- Heat oil in a skillet over medium heat. Add the red and green peppers, and the onion. Cook, stirring frequently until tender. Stir in the tempeh and barbeque sauce, and heat through.
- Spoon the tempeh mixture onto kaiser rolls, and serve.

Steps:
- Cut the tempeh into the size of shape you will be using it for later.
- Put everything in a skillet just large enough to hold the tempeh, bring it to a boil, then cover and simmer slowly until the broth has been absorbed about 15 minutes, turn it over once during the cooking.

Steps:
- COMBINE Ground Beef/Mince, Breadcrumbs, 1 TABLESPOON Chilli Sauce, Onion, Salt and Pepper; Mix WELL.
- ROLL into balls and place on tray; Refrigerate until ready to use.
- COMBINE Beef Stock, Brown Sugar, Lime Juice and remaining chilli sauce in a Saucepan; Bring to a BOIL.
- REDUCE heat to low, ADD Meatballs, until cooked through (About 8-10 minutes).
- Add Trimmed Spinich Leaves right before serving until spinich had wilted.
- ENJOY!
