THE MOST FLUFFY AND BUTTERY BISCUITS EVER

The Most Fluffy and Buttery Biscuits Ever image

These biscuits rival any restaurant or fast food joint. They're so tender, fluffy, and buttery. They're the best biscuits I've ever made at home!

Provided by Julie Chiou

Categories     Breakfast/Brunch

Time 45m

Number Of Ingredients 6

4 cups self-rising flour (plus more for dusting)
2 tablespoons baking powder ((see blog post above for more details; use double-acting, aluminum-free baking powder))
1 teaspoon baking soda
3/4 pound (3 sticks) SALTED butter (cold, cut into 1/2-inch cubes)
2 large eggs (beaten PLUS 1 large egg for brushing)
1 1/2 cups buttermilk (plus more as needed and for brushing)

Steps:

  • In a large bowl, whisk together flour, baking powder, and baking soda.
  • Add the butter and using a pastry blender, cut the butter into the flour until pea-like crumbs form.
  • Stir in the beaten eggs with a wooden spoon until just combined. Then pour in the buttermilk until the dough comes together into a sticky mass. You may need more buttermilk if it's still too dry and there is flour still at the bottom of your bowl. I ended up having to add in 1/2 cup more. DO NOT add 1/2 cup more all at the same time. Do 1 tablespoon at a time until the right consistency is reached.
  • Cover the bowl and refrigerate for at least 30 minutes.
  • When ready, preheat oven to 400 degrees Fahrenheit and line a baking sheet with parchment paper.
  • Dust a little flour onto your work surface then put the dough onto the work surface and use your hands (flour them) to press into a round, roughly 14 inch diameter and 1/2 inch thick. See photos in the blog post.
  • Use a floured 2 3/4-inch round biscuit cutter to cut out about 20 biscuits. Reform the scraps of dough into a circle again to cut more.
  • Transfer biscuits to prepared baking sheet and arrange them so they are touching each other. See photos in the blog post.
  • In a small dish, beat together remaining egg and buttermilk then brush on top of the biscuits.
  • Bake for 15-20 minutes, or until the tops are golden brown.
  • Let cool slightly before devouring! They're best eaten out of the oven, day of.
  • Serve with your favorite sausage gravy, jam, or clotted cream.

BAKING POWDER BISCUITS FOR TWO

Baking Powder Biscuits for Two image

Homemade biscuits are fantastic and delicious. Use this quick and easy biscuit recipe that's perfect for two people and mixes up in a few minutes.

Provided by Elizabeth Yetter

Categories     Side Dish     Brunch     Breakfast     Bread

Time 23m

Number Of Ingredients 6

1 cup all-purpose flour ( sifted )
2 1/2 teaspoons baking powder
1/2 teaspoon salt
1/2 tablespoon butter (softened)
1/2 tablespoon vegetable shortening
1/2 cup milk

Steps:

  • Gather the ingredients.
  • Preheat the oven to 400 F and grease a baking sheet .
  • Mix the flour, baking powder, and salt in a medium-size bowl.
  • Work in the butter and shortening with a fork.
  • Slowly mix in the milk until a soft dough is formed. Mix the dough by hand with a large wooden or plastic spoon. The dough is too stiff for most electric mixers and it's likely that you'll burn out the motor. Also, your biscuits should not be mixed until the dough is perfectly smooth. A few lumps are actually a good thing in this type of dough, so don't stress about getting it perfect.
  • Turn the dough out onto a floured board.
  • Pat the dough down until it is about 1/2 inch thick.
  • Cut the dough into four to five equal-sized biscuits and place them on the greased pan.
  • Bake for 12 to 15 minutes, or until lightly golden.

BISCUITS FOR 2 ( OR 4 )

Biscuits for 2 ( or 4 ) image

As you know most biscuit recipes make anywhere from 8 to 12 biscuits. And some time that's just way too much for two ( or 4 ) people. While I was looking through my treasured 1996 Taste of Home Annual Recipes, I discovered this recipe that was sent into them by Sylvia McCoy of Lees Summit, Missouri. While making this recipe, I did make a couple of changes on the way that they were made. But, I don't think it affected the finished product. For higher biscuits, I double sifted the dry ingredients( I've always done that :) )If you have the above mentioned Cookbook, please check page 191 for the original recipe.I know this seems like alot of steps, but it's really easy. :)Submitted to " ZAAR " on October 6th, 2009

FLAKY TENDER BISCUITS

Flaky Tender Biscuits image

These biscuits are light, flaky and tender. So good with breakfast or serve them with strawberries and cream. Only mix the dough until it comes together. I cannot stress enough that this dough should not be overworked and that a light hand is needed. If you end up with a hard and doughy biscuit, you will know to mix the dough less the next time.
