1 tablespoon olive oil
2 (6 -8 ounce) beef tenderloin steaks
salt and pepper
3 tablespoons brandy or 3 tablespoons Bourbon
1 -2 minced garlic clove
1 teaspoon crushed multicolored peppercorn (can sub fresh crushed black peppercorns)
1/2 teaspoon dried oregano
1/8 teaspoon salt
2/3 cup whipping cream
1 1/2 tablespoons sour cream

Steps:

  • Heat olive oil in a medium skillet over high heat until hot.
  • Sprinkle tenderloin steaks with salt and pepper. Sear tenderloin steaks on both sides in skillet. Remove from skillet, and place on a rack in a broiler pan. Broil 4 to 5 inches from heat (leave door just a bit ajar) 4 to 6 minutes on each side or until meat thermometer registers 140° for rare or 150° for medium rare (160° for medium).
  • Add brandy or bourbon to drippings in skillet; bring to a boil over medium heat, and deglaze pan, scraping browned bits that cling to bottom.
  • Add minced garlic, peppercorns, oregano, and salt; cook 1 minute. Add whipping cream; bring to a boil, and cook 6 to 7 minutes or until sauce is reduced by half.
  • Remove from heat; whisk in sour cream, and spoon sauce over steaks. Serve with noodles or baked potatoes.

1 whole beef tenderloin, trimmed of all visible fat
Kosher salt
2 teaspoons sugar
1/2 cup tri-color peppercorns, crushed with a rolling pin
1 stick butter
2 cloves garlic, crushed

Steps:

  • Preheat the oven to 475 degrees F.
  • Place the tenderloin on a roasting rack. Sprinkle generously with kosher salt and sugar, which will deepen the savory flavors.
  • Press the crushed peppercorns all over the surface of the meat. Insert a meat thermometer and place in the oven until the beef registers 120 to 125 degrees F for medium-rare/rare. Beef will probably cook in 20 to 25 minutes depending on its temp before it goes in the oven.
  • While the meat is roasting, melt the butter with the garlic in a small skillet, and allow the butter to slightly brown. Remove the garlic and discard.
  • Remove the meat when it's done and pour the garlic butter over gently (it should sizzle when it hits the meat). Cover the meat loosely with foil and allow to rest for 10 minutes before slicing.

2 tablespoons olive oil
1 teaspoon salt
1 teaspoon ground black pepper
1 small carrot, peeled and very finely chopped
1 tablespoon finely chopped fresh rosemary
1 tablespoon finely chopped fresh thyme
1 tablespoon finely chopped flat-leaf parsley
1 clove garlic, minced
⅓ cup dry red wine

Steps:

  • Coat tenderloins with oil and rub with salt and pepper.
  • Quickly sear tenderloins in a frying pan over medium-high heat, 3 to 4 minutes per side. Transfer to a roasting pan. Add carrot, rosemary, thyme, parsley, and garlic; pour red wine over the top. Cover and marinate in the refrigerator, 8 hours to overnight.
  • Preheat the oven to 350 degrees F (175 degrees C) when ready to cook.
  • Bake in the preheated oven until tenderloins are firm and heated through, about 35 minutes.

Steps:

  • Heat oil in 10-inch nonstick skillet over medium-high heat. Sprinkle both sides of pork with peppercorns.
  • Sauté pork in oil 1 to 2 minutes on each side or until brown. Stir apple juice and lemon juice into skillet. Cook over low heat 2 minutes or until pork is brown. Stir in sour cream until blended.

1 tablespoon olive oil
2 (6 ounce) beef tenderloin fillets
1/4 cup brandy
1 large garlic clove, minced
1 teaspoon multicolored peppercorn, crushed
1/2 teaspoon dried oregano
1/8 teaspoon salt
2/3 cup whipping cream
1 1/2 tablespoons sour cream

Steps:

  • Heat the oil in a medium skillet until hot.
  • Sprinkle the fillets with salt and pepper to your taste on both sides.
  • Sear both sides of the fillet in the hot skillet with oil.
  • Remove from skillet and place on a rack in a roasting pan.
  • Broil 5 1/2 inches from the heat for 5 min on each side or until 145ºF is reached for medium-rare.
  • Add brandy to drippings in the skillet and bring to a boil stirring to loosen any browned bits on the bottom.
  • Add minced garlic, crushed peppercorns, oregano, and salt - cook for 1 minute.
  • Add whipping cream and bring to a boil, and cook 6 min or until sauce is reduced by half.
  • Remove from heat and whisk in sour cream.
  • Spoon over the fillets.
  • Serve with hot white rice.

Sprinkle tenderloin steaks with salt and pepper. Sear tenderloin steaks on both sides in skillet. Remove from skillet, and place on a rack in a broiler pan. Broil 4 to 5 inches from heat (leave door just a bit ajar) 4 to 6 minutes on each side or until meat thermometer registers 140° for rare or 150° for medium rare (160° for medium).
