CALZONE (BREAD MACHINE)

Calzone (Bread Machine) image

You can create your own fillings for this very easy calzone. I don't use the pepperoni, but substitute cooked, chopped spinach. You can also add sauteed onions and peppers, olives, ricotta cheese...etc. I have also made small individual calzones to dip in Marinara Sauce...heaven! Kids love these.

Categories     Savory Pies

Time 1h5m

Yield 8 serving(s)

Number Of Ingredients 13

1 1/4 cups water
1 teaspoon salt
1/2 teaspoon oregano
1/2 teaspoon basil
1/2 teaspoon garlic powder
3 cups bread flour
1 teaspoon powdered milk
1 1/2 tablespoons white sugar
2 teaspoons active dry yeast
3/4 cup pizza sauce
4 ounces pepperoni, chopped
1 1/4 cups shredded mozzarella cheese
2 tablespoons butter, melted

Steps:

  • Place water, salt, basil, oregano, garlic powder, bread flour, dry milk, sugar, and yeast in the pan of the bread machine in the order suggested by the manufacturer.
  • Select Dough cycle.
  • After cycle ends, roll out dough on a lightly floured surface, shaping into a 16 x 10 inch rectangle.
  • Transfer to a lightly greased cookie sheet.
  • In a small bowl, mix together chopped pepperoni and mozzarella.
  • Spoon pizza sauce in a stripe down the center of dough lengthwise; add sausage and cheese filling.
  • Make diagonal cuts 1 1/2 inches apart down each side, cutting within a 1/2 inch of the filling.
  • Criss cross strips over filling, sealing with water.
  • Brush top with melted butter.
  • You can just fold over the sides without cutting the strips to make this process easier.
  • It will taste just as good, but not look as nice.
  • Be sure to seal the edges well.
  • Bake at 350 degrees F (175 degrees C) for 35 to 45 minutes.

WHEAT-FREE, GLUTEN-FREE NEW YORK CALZONES (BREAD MACHINE)

Wheat-Free, Gluten-Free New York Calzones (Bread Machine) image

Faced with "wheat temptation" this weekend, I had a serious calzone craving and combined several recipes with very good results. You can use cooked and crumbled sausage or meatballs or a lightly steamed vegetable for the pepperoni if desired. Served with a side dish of pizza sauce and a crisp green salad, this chewy, crunchy, cheesy alternative hit the spot!

Categories     Cheese

Time 2h15m

Yield 2 calzones as big as your head, 4-6 serving(s)

Number Of Ingredients 15

1 1/2 cups water, heated to 110 F
1 tablespoon olive oil
2 cups brown rice flour
3/4 cup cornstarch
3/4 cup potato starch
1/2 cup tapioca flour
1/2 cup sorghum flour
2 1/2 tablespoons xanthan gum
2 1/2 teaspoons granulated sugar
1/2 teaspoon salt
1/2 teaspoon active dry yeast
15 ounces ricotta cheese
1 cup shredded mozzarella cheese
salt and pepper
1 cup pepperoni, sliced and divided

Steps:

  • Combine water, oil, and dry ingredients in automatic bread machine per manufacturer's instructions; use dough setting.
  • After second kneading, dough can be divided into four pieces, sealed, and frozen for later use. Otherwise, turn bread maker off and leave dough in machine, closed, to rise for 1-1/2 hours.
  • Meanwhile, prepare filling by mixing ricotta, mozzarella, and salt & pepper to taste; refrigerate.
  • After dough has risen, preheat oven to 500° F; grease two baking sheets and dust lightly with cornmeal.
  • Divide the dough in half and form two balls. Place one ball of dough onto a gluten-free flour-covered surface and spread with fingers or rolling pin to 12" circle.
  • Spread half the ricotta mixture on half of the dough circle, leaving about a 1" edge. Top with 1/2 cup sliced pepperoni. Moisten edge of dough with water; fold dough circle in half and press with wet fingertips to seal. IMPORTANT: to ensure a tight seal, make sure the filling is well away from the edge.
  • Pat calzone to even filling inside; check seal again for leaks. Gently move to prepared baking sheet; cut three 1" slits in top of calzone for venting.
  • Repeat with remaining dough and filling.
  • Bake at 500° F for 22-27 minutes or until golden brown.
  • Serve with your favorite pizza sauce, warmed, on the side for dipping. We prefer Ultimate Pizza Sauce Recipe #114392.

GLUTEN-FREE BREAD IN A BREAD MACHINE

Gluten-Free Bread in a Bread Machine image

Make this gluten-free bread in your bread maker. It's not as good as normal bread, but it's pretty good if you must avoid gluten. The mixture will look more like cake batter than bread dough in your machine, don't worry, it will be okay. The loaf may sink while it's baking, leaving a crusty, crunchy bowl on the exposed end, which you will want to slice off and discard. The finished bread will be quite firm and heavy, and I recommend slicing it thin. It makes good toast, but it toasts slowly. I use my darkest toaster setting and have to run that twice to get golden brown toast.

REHEAT-AND-EAT BREAKFAST CALZONES

Reheat-and-Eat Breakfast Calzones image

Meal prepping for breakfast tends not to include eggs, besides hard-boiled ones, because scrambled or fried eggs don't hold very well in the fridge or freezer. I started thinking about how to solve this problem, and it turns out calzones do the trick. Wrapping a chorizo hash, eggs and cheese filling in my yogurt flatbread dough or store-bought pizza dough creates steam inside, so the filling is gently reheated and feels like you made it fresh, even though these can be made up to 2 to 3 months in advance! Plus, the calzones are great for grab-and-go, whether for adults heading out the door to work or kids heading to school.

Provided by Food Network

Categories     main-dish

Time 3h25m

Yield 8 calzones, plus additional chorizo hash

Number Of Ingredients 11

8 ounces bulk chorizo
1 tablespoon plus 1 teaspoon extra-virgin olive oil, plus more as needed and for brushing the calzones
1 Yukon gold potato (about 6 ounces), cut into 1/4-inch dice
1/2 yellow bell pepper, seeds and ribs removed, cut into 1/4-inch dice
1/4 medium red onion, cut into 1/4-inch dice
Kosher salt
1/4 cup lightly packed fresh flat-leaf parsley leaves, roughly chopped
4 large eggs
All-purpose flour, for dusting
1 pound yogurt flatbread dough or store-bought pizza dough, left at room temperature for 30 minutes (see Cook's Note)
1/2 cup shredded extra-sharp Cheddar

Steps:

  • Heat a medium skillet over medium heat and add the chorizo. Cook until seared on the first side, about 2 minutes; the chorizo will release its own fat to cook in, but if your skillet is dry, add a splash of oil. Use a wooden spoon to break up the chorizo into smaller pieces and continue to cook until browned all over and cooked through, 3 to 4 minutes. Remove to a paper towel-lined baking sheet.
  • Add 1 tablespoon oil to the skillet and reduce the heat to medium-low. When the oil is hot, add the potatoes, bell peppers, onions and 3/4 teaspoon salt. Cook, stirring often, until the potatoes are almost cooked through and the peppers and onions are soft, about 10 minutes. Add 1/2 cup water to deglaze the skillet and continue to cook until the water evaporates and the potatoes are tender but still hold their shape, 3 to 4 minutes.
  • Remove from the heat and stir in the parsley and reserved chorizo. Season the hash with more salt to taste. Reserve half of the mixture for breakfast with fried or scrambled eggs and use the remaining mixture to make the calzones. The extra hash can be refrigerated in an airtight container for up to 4 days and reheated in a skillet over medium heat.
  • Heat the remaining 1 teaspoon oil in an 8-inch skillet over medium-high heat, swirling the oil to coat the bottom and sides of the skillet. Meanwhile, whisk the eggs and 1/4 teaspoon salt in a medium bowl. When the skillet is hot, pour in the eggs; you should hear a loud sizzle as the eggs hit the hot oil. Cook the eggs for 1 minute, then use a rubber spatula to push the cooked eggs towards the center. You want to cook the eggs more like an omelet rather than breaking them into pieces like scrambled eggs. Continue to gently push the cooked eggs towards the center and allow the liquid eggs to flow underneath to cook through, 1 to 2 minutes. Transfer the eggs to a plate and let cool. Once cool, divide into 8 pieces.
  • Lightly flour a clean work surface. Divide the dough into eight 2-ounce pieces. Roll each with a rolling pin into a round measuring about 5 inches. To the center of each round, add 2 tablespoons of the chorizo hash, 1 piece of the egg and 1 tablespoon of the Cheddar. Lift the top of each dough round up and over the filling to create a half-moon shape. It's OK if the top of the dough doesn't meet the bottom edge completely; simply press them together where they meet and then roll the bottom dough over the top to create a seal. Continue to roll the edges together until they are tightly sealed so it looks almost like a rope around the outer edge of each calzone.
  • Transfer the calzones to a parchment paper-lined baking sheet. Place in the freezer until frozen, about 2 hours. Store the frozen calzones in a resealable freezer bag for up to 2 to 3 months.
  • When ready to bake, preheat the oven to 425 degrees F. Line a second baking sheet with parchment.
  • Remove the calzones from the freezer, place directly on the lined baking sheet and lightly brush with oil. Bake from frozen until the dough is cooked through and golden brown (the Yogurt Flatbread Dough will brown all over whereas pizza dough will brown more in spots, like a pizza crust), 23 to 25 minutes. Let cool slightly before serving.
