HILLBILLY TEA BRAISED LAMB WITH SUCCOTASH



Hillbilly Tea Braised Lamb with Succotash image

Olive oil
2 large lamb foreshanks
4 cups pinto beans, canned or partially cooked
4 cups white beans, canned or partially cooked
4 cups chicken stock
1/2 cup tea, such as Big Earl's Hillbilly Tea
2 tablespoons salt
1 teaspoon ground black pepper
4 cloves garlic, minced
4 Roma tomatoes, diced

Steps:

  • Preheat your oven to 350 degrees F.
  • Heat some olive oil over medium-high heat in a large skillet. Sear the lamb shanks until golden brown on each side, 2 to 3 minutes per side. Remove from the skillet and set aside. Stir together the beans, stock, tea, salt, pepper, garlic and tomatoes in a casserole dish. Lay the lamb shanks on top and sink them down into the beans until two-thirds submerged.
  • Braise, uncovered, until the lamb is falling off the bone, 4 hours. Serve family-style with some corn pone or crusty bread!

This is our favorite pork chop recipe! It comes from an issue of Woman's World magazine. It's delectable served with garlic mashed potatoes. Enjoy!!!

1 tablespoon olive oil
4 pork loin chops, 3/4 inch thick
1/2 teaspoon salt
1/4 teaspoon pepper
1 clove garlic, minced
3 tablespoons minced onions
1/8 teaspoon crushed red pepper flakes
1/3 cup apple juice
1/4 cup packed dark brown sugar
1/4 cup whiskey (use good brand name, such as Jack Daniels)
3 tablespoons teriyaki sauce
3 tablespoons light soy sauce

Steps:

  • In a nonstick skillet, over medium-high heat, heat olive oil.
  • Season pork chops with salt and pepper.
  • Place chops in skillet, and cook about 5 minutes each side, turning once, until browned.
  • Remove chops from skillet and keep warm.
  • In the same skillet cook garlic, onion, and pepper flakes until tender, about 2 minutes.
  • Stir in the apple juice, dark brown sugar, whiskey, teriyaki, and soy sauces.
  • Turn heat to high and bring mixture to a boil.
  • Reduce heat to medium, and cook sauce, stirring occasionally, until slightly thickened, about 10 minutes.
  • Add pork chops to skillet and simmer, turning once, until no longer pink near bone (about 3 minutes per side) and sauce is thickened and reduced to about 1/2 cup.

2 tablespoons paprika
1 tablespoon chili powder
1 ½ tablespoons ground white pepper
1 ½ tablespoons crushed red pepper
1 ½ tablespoons salt
1 tablespoon garlic powder

Steps:

  • In a small bowl, mix together brown sugar, ground black pepper, paprika, chile powder, ground white pepper, crushed red pepper, salt and garlic powder. Rub meat vigorously and wrap in foil. Refrigerate at least 8 hours, or overnight, before grilling with barbeque sauce.

4 pork chops, 1 inch thick,trim off all fat
1 can stokely bavarian sauerkraut

Steps:

  • Lightly spray a 8-10" pan with spray oil.
  • Sear the chops in the pan on each side for approximately 30 seconds, or until medium brown Pour can of Stokely's Bavarian Sauerkraut on top of all 4 chops, put lid on pan, and simmer for 4-5 hours.
