Making copycat Benihana fried rice from home couldn't be easier. Mix up your ingredients and within no time have a readily made dish straight from the Benihana restaurant.

2 pounds of chicken breast, cubed into small pieces
1 cup of chopped carrot (either frozen or about 2 large fresh carrots)
1 large white or yellow onion, chopped
A handful of scallions, finely sliced
Oil (safflower or canola)
2 cups of white rice
3 cups of water
Pinch of salt
1 stick (1/2 cup) of unsalted butter
2 cloves of minced garlic
1 teaspoon of lemon juice
2 teaspoons of low-sodium soy sauce
4 eggs
Salt and pepper as desired
Toasted sesame seeds (optional)

Steps:

  • Cook the rice (1 day before cooking the fried rice)
  • Rinse the uncooked rice using a bowl or colander, until the water you are rinsing with no longer appears cloudy
  • Add the rice, 3 cups of cold water and a pinch of salt to a large, lidded pot on the stove
  • Bring the heat up high, and watch carefully, until the water begins to boil
  • Stir the rice a few times, then bring the heat down to low, cover with the lid and let sit for 20 minutes
  • Take the pot from the heat, and let sit still lidded for another 20 minutes
  • Move the rice from the pot to a large, shallow dish. Spread it out evenly without compressing, and refrigerate overnight

This chicken fried rice recipe tastes just like the one served at Benihana! The secret? Lots of garlic butter. Chewy and delicious, it is easy to make at home, no special tricks required! (Total time to make this recipe includes cooking the rice and chilling overnight.)

2 cups medium grain white rice
1 teaspoon Kosher salt (plus more to taste)
3 cups cold water
1 stick (½ cup) unsalted butter (softened)
2 tablespoons lemon juice
1 teaspoon soy sauce (plus more to finish)
2 cloves garlic (minced)
1 ½ pounds chicken breasts
About ¼ cup vegetable oil (divided)
1 large onion (finely chopped)
2 large carrots (peeled and finely diced)
½ cup green onions (thinly sliced)
3 eggs (beaten)
Freshly ground black pepper (to taste)
Sesame seeds to garnish (optional)

Steps:

  • Place the rice in a fine-mesh sieve and rinse under cold water until the water runs clear. Transfer to a medium saucepan, adding 1 teaspoon of salt and 3 cups of water.
  • Bring to a boil, then cover and reduce the heat to the lowest setting. Simmer, undisturbed, for 15 minutes. Then, remove from the heat and let it stand for at least 15 minutes. Uncover and fluff the rice to break down the clumps. Let it cool completely, then transfer to a baking sheet, cover with plastic and refrigerate overnight.
  • The next day, mix the softened butter, lemon juice, 1 teaspoon soy sauce and garlic cloves in a bowl. Stir vigorously until smooth. Reserve.
  • Season the chicken breasts with salt. Heat 1 tablespoon of vegetable oil in a large non-stick skillet, over medium-high heat, and brown the chicken breasts on all sides, about 2 minutes per side.
  • Transfer the chicken breast to a cutting board and cut into cubes. Return the cubes to the skillet and continue cooking until golden brown, about 3-5 more minutes. Add 1 tablespoon of the garlic butter and mix to combine. Remove the chicken cubes to a plate and reserve.
  • Return the skillet to the heat, adding another tablespoon of oil. Add the chopped onion and carrots, sautéing until softened, about 5-8 minutes. Then, add the green onions and continue cooking for another couple minutes. Remove and reserve.
  • Heat more oil in the skillet and add the eggs, scrambling them, about 1-2 minutes. Remove and reserve.
  • Place a large wok pan on the stove and heat on medium-high. Add enough oil to coat the whole pan. Add the cooked rice and let it cook for about 5 minutes, or until warmed through. Then, add the remaining garlic butter and toss to combine, making sure all the rice gets coated with the butter.
  • Add the reserved veggies and mix until combined. Then, carefully stir in the reserved chicken and eggs. Stir-fry for another 2-3 minutes or until the rice begins to brown slightly.
  • Season with salt and pepper, and drizzle soy sauce to taste.
  • Serve, garnished with toasted sesame seeds.

2 cups Short-Grain Rice (cooked)
3 tbsp Butter
2 tbsp Soy Sauce
2 Large Eggs (scrambled)
1 tsp Garlic Salt
2 Chicken Breasts (diced)
1/2 cup Carrots (diced)
1/2 cup Peas
1/4 cup Yellow Onion (diced)
2 Green Onion Stalks (sliced for topping)

Steps:

  • Preheat griddle to 375 degrees Fahrenheit.
  • If adding carrots, peas, or onion to fried rice, cook for 3-4 minutes on griddle with 1 teaspoon vegetable oil per half cup of vegetables until they begin to soften. Set aside.
  • If adding chicken, dice chicken into 1/2″ cubes, pat diced chicken dry with paper towel, and season with salt & pepper. Add 1 tablespoon vegetable oil to hot griddle and add chicken. Cook for 2-3 minutes on each side until golden brown. Set aside.
  • Scramble eggs and cook on lightly greased griddle. Continue stirring until cooked through. Season with salt and pepper. Set aside.
  • Melt butter on griddle and add rice. Stir to mix with melted butter. Drizzle soy sauce over rice and add garlic salt, mix well. Add scrambled eggs (and vegetables and/or chicken if desired) and blend.

Steps:

  • In a large wok or on a griddle, scramble the eggs in 1 tablespoon of the butter over low to medium heat. Remove from the wok and set aside on a plate. Melt the additional 2 tablespoons of butter in the wok or on the griddle over high heat. Add the garlic and carrots, stirring constantly. After 1 to 2 minutes, stir in the cooked rice and soy sauce. Toss to thoroughly incorporate the ingredients. 2 eggs (scrambled)
1/2 onion
1 package pancetta (found in the deli aisle, however, regular bacon will do)
2 to 3 tablespoons butter/margarine
1/2 cup frozen peas & carrots
2 tablespoons garlic powder
1 tablespoons sesame seeds
4 to 5 tablespoons soy sauce
1 to 2 tablespoons thinly sliced scallions/green onions (for garnish)
2 drops sesame oil (optional)

Steps:

  • Scramble & cook eggs, then set aside in a small bowl. in the same pan, cook the onions until translucent & set aside in a small bowl. Slice pancetta in small strips (*tip: freeze pancetta/bacon for easier & cleaner slicing) & fry until crisp; set aside in a small bowl. Lower heat to low & stir in rice, butter, garlic powder, peas, carrots & soy sauce until fully incorporated. Add pancetta, eggs, & onions back into the pan; add sesame oil & stir well. Easy hibachi style fried rice copycat recipe. Make this dish your own by choosing your favorite protein ingredients. I added chicken and eggs in mine.

1 cup uncooked Rice ((*see notes) or about 3 cups cooked rice)
3 Tablespoons Soy Sauce
1 1/2 Tablespoons Rice Vinegar
1 Teaspoon Sugar
2 Tablespoons Oil
1 Tablespoons Ginger + Garlic (*see Notes)
1-2 pieces Green Onions (aka spring onion)
1 cup Mixed Carrots and Peas (carrot cut into matchsticks)
2 Eggs
3.5 ounces Protein of your choice (*see Notes)

Steps:

  • First, have your rice cooked and ready. If you don't have leftover rice, cook your rice al dente (to the bite), that way when you plan on stir-frying the rice it won't turn soggy.
  • Keep all your ingredients ready. Mix the sauce ingredient together and keep aside. Cut the carrot into matchsticks. Clean and/or cut your protein into bite-sized pieces.
  • Heat up a large skillet or wok with the oil and stir cook the sliced green onion bulbs with the ginger + garlic (or substitute with garlic butter).
  • Add the carrot and peas and stir cook for a minute on high heat.
  • Make space in your pan (see video) and break in the eggs. Scramble, cook and break the eggs. Mix and stir cook everything quickly.
  • Make space again and add your protein. In the video, I used chicken pieces. Stir cook on all side on high heat for a minute and mix everything together.
  • Now add in your cooked rice and pour your stir fry sauce over the rice. Mix and stir cook everything for a minute or two until everything is cooked and well combined. Use high heat and don't over mix because it shouldn't get mushy.
  • Garnish with fresh sliced green onion stalks. Serve hot.

3 green onions (chopped)
3 tablespoons soy sauce ((or more to taste))

Steps:

1 Tbsp sesame seed oil
2 1/2 Tbsp olive oil ((light or extra virgin))
1/4 cup rice cooking wine
2 Tbsp soy sauce
2 cups rice ((cooked long grain white rice, I typically use Jasmine))
1 Tbsp Hibachi Cooking Oil ((see above))
1/4 cup white onion ((finely chopped))
1/2 cup peas and carrots ((frozen blend, or a 1/4 cup of each peas and finely chopped or diced carrots))
1 large egg
2 Tbsp butter ((salted))
2 Tbsp soy sauce

Steps:

  • Combine ingredients in a jar or squeeze bottle that you can seal with a lid to shake up the contents, and for storing any unused portion ( if desired ).
  • Shake container before using to cook hibachi style foods, such as this hibachi fried rice, noodles, vegetables, chicken, steak, or seafood.
  • Set all prepared ingredients near workspace as this is cooked on high heat. Using a large wok is preferable, but a large skillet or frying pan will work. Bring wok or skillet to high heat with hibachi cooking oil blend or alternative ( cottonseed, canola, peanut oil ).
  • Cook the egg in the heated oil, quickly breaking the cooked egg apart and moving to the sides once cooked. Add vegetables and saute for about 2-3 minutes. *Reduce heat in small increments as needed if cooking too hot.
  • Heat butter for 10-20 seconds in the microwave and stir in the soy sauce ( add garlic or garlic powder, if desired ).
  • Add the cooled rice to the wok or frying pan, then the butter sauce. Fry for an additional 5 minutes, or until the rice and vegetables are well combined, coated with butter, and everything is heated through.
  • Serve immediately, garnish with sliced green onion or sesame seeds.
