TARRAGON MEATLOAF
Everyone has a different idea of how meatloaf should taste. I am always looking for ways to revise and improve my recipe. The sour cream imparts extra moisture, even if you overcook it a little. The herbs add a fresh taste. If you have time, grind your own beef, using brisket and chuck cuts, and your own pork, using shoulder cuts.

Steps:
- Preheat the oven to 400 degrees F.
- In a large bowl, mix the beef and pork and gently knead them together with your hands. Add the paprika, salt and pepper. Add the rest of the ingredients. Mix to blend.
- The taste test: Heat a small saucepan and add the vegetable oil. When the oil begins to smoke, lower the heat and add a small piece of the mixture. Cook 1 to 2 minutes on each side. Remove from the pan and taste. Check seasoning. If too moist, add more bread crumbs. If too dry, add an extra egg.
- Mold the meat into a loaf and place it in the center of a baking sheet lined with parchment paper. Using a pan without high edges will yield a meatloaf with a crust. Cook, undisturbed, for 15 minutes. Brush it with additional ketchup and lower the oven temperature to 350 degrees F.
- Bake until the meat is firm when touched or when it has an internal temperature of 150 degrees F, about 45 additional minutes. Remove from the oven, pour off any excess grease and allow it to "rest" for 10 to 15 minutes before serving. Brush again with ketchup, if desired.

- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a baking pan.
- Place the ground beef, eggs, panko, and 1/2 cup ketchup in a large bowl. Mix by hand, and season with salt-free seasoning blend, garlic powder, onion powder, salt, and pepper. Form into a loaf shape, and place on the prepared baking pan. Drizzle with remaining 1/4 cup ketchup.
- Bake 1 hour in the preheated oven, to an internal temperature of 160 degrees F (70 degrees C).

- FOR THE GLAZE: Whisk all ingredients in saucepan until sugar dissolves. Reserve 1/4 cup glaze mixture, then simmer remaining glaze over medium heat until slightly thickened, about 5 minutes. Cover and keep warm.. FOR THE MEATLOAF: Line rimmed backing sheet with aluminum foil and coat lightly with vegetable oil. Heat oil in nonstick skillet over medium heat until shimmering. Cook onion until golden brown, about 8 minutes. Add garlic and cook until fragrant, about 30 seconds. Transfer to large bowl.. Process saltines and milk in a food processor until smooth, about 30 seconds. Add beef and pork and pulse until well combined, about 10 pulses. Transfer meat mixture to bowl with cooled onion mixture. Add eggs and yolk, parsley, mustard, Worcestershire, thyme, 1 teaspoon salt, and 3/4 teaspoon pepper to bowl and mix with hands until combined.. Adjust 1 oven rack to middle position and second rack 4 inches from broiler element; heat broiler. Transfer meat mixture to prepared baking sheet and shape into 9x5inch loaf. Broil on upper rack until well browned, about 5 minutes. Brush 2 tablespoons unreduced glaze over top of the sides of loaf and then return to oven and broil until glaze begins to brown, about 2 minutes.. Transfer meatloaf to lower rack and brush with remaining unreduced glaze. Reduce oven temperature to 350*F and bake until meatloaf registers 160*F, 40-45 minutes. Transfer to cutting board, tent with foil, and let rest for 20 minutes. Slice and serve, passing remaining reduced glaze at table..

- Preheat the oven to 350 degrees F.
- In a stand mixer, mix the beef, cracker crumbs, egg, ketchup, mustard, salt, pepper, and onion until just blended. Shape the mixture into two loaves and place side by side crosswise in a 9-by-13-by-2-inch pan. Bake the loaves for 1 hour, or until they are browned. Transfer to a platter immediately and allow the loaves to cool slightly and firm up before slicing.
- For sandwich: cut 2 thick slices of cooled meatloaf and place on white bread with lettuce and tomato. If you've never had a cold meatloaf sandwich the next day, you don't know what you're missing
MY SPECIAL MEATLOAF RECIPE
I think I'm incapable of following a recipe as it is written, this meatloaf recipe is the result of that habit. I started with a different recipe and tweaked it so much that it doesn't even resemble the original anymore, lol. Hope you enjoy it as much as I do. I sometimes use ground venison instead of beef. Makes great stuffed pepper filling too.

- Meatloaf: Combine meat loaf ingredients and place into meatloaf pan or regular loaf pan. I usually have a little left over because the pan I use is a small one. The excess I freeze for future use as stuffed pepper filling (there's usually enough for 2 peppers).
- Smooth out top.
- Sauce: Combine sauce ingredients and pour on top and sides of meatloaf.
- Bake at 350°F about 1 hour to 1 hour 15 minutes or until done.

CHEF JOHN'S MEATBALL-INSPIRED MEATLOAF
The main point of this Italian meatball-inspired meatloaf is to show you what happens when you make meatloaf like your grandparents did. During the Great Depression, this type of dish was a popular strategy for stretching what little meat you had into as filling a meal as possible.

- Preheat oven to 325 degrees F (165 degrees C). Grease a 9x13-inch baking dish.
- Heat olive oil and butter together in a large skillet over medium-high heat. Saute onion with a pinch of salt in hot oil and butter until onion is golden brown and soft, 5 to 10 minutes. Add garlic and saute until fragrant, about 30 seconds. Remove skillet from heat and cool onion mixture to room temperature.
- Place bread crumbs in a large bowl. Add milk and stir with a fork until combined. Let sit until all of the milk is absorbed into the breadcrumbs, 15 to 20 minutes.
- Combine ground chuck, cooled onion mixture, parsley, Parmesan cheese, eggs, 2 teaspoons salt, black pepper, and cayenne pepper in a bowl. Grab a handful of breadcrumbs and squeeze very gently to remove excess milk. Repeat with remaining breadcrumbs, transfer breadcrumbs to ground chuck mixture, and discard excess milk. Stir ground chuck mixture until evenly combined.
- Turn chuck mixture out into prepared baking dish, and shape meat into a 3x4x10-inch meatloaf. Pour tomato sauce over the loaf and into the bottom of the dish.
- Bake in the preheated oven until no longer pink in the center, about 1 hour 10 minutes. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C). Let meatloaf rest for at least 10 minutes before slicing.

- Preheat the oven to 350°F (180°C). Line a rimmed baking sheet with foil.
- Heat the olive oil in a large pan over medium-high heat. Once the oil begins to shimmer, add the onion and cook, stirring often, until softened and golden brown, about 7 minutes. Add the garlic and cook, stirring constantly, until aromatic, about 1 minute. Add the tomato paste and cook, stirring often, until the tomato paste turns deep red in color, about 2 minutes. Remove the pan from the heat and let the onion mixture cool to room temperature.
- In a large bowl, stir together the panko and milk. Add the ground beef, eggs, parsley, Worcestershire sauce, thyme, salt, pepper, and the onion mixture and use your hands to combine. Do not overmix!

- Bake the meatloaf until the top is browned and the internal temperature reaches 160°F (70°C), about 50 minutes.
- Slice and serve.

- Preheat oven to 325 degrees.
- In a bowl, combine the ground beef, eggs, bread crumbs, tomato juice and seasonings.
- In a skillet, heat the oil and saute the onions until translucent, about 5 minutes. Add to the meat mixture; mix lightly. Turn mixture out onto a sheet of foil and flatten into an oblong shape, about 1-inch thick.
- Place ham slices on meat, keeping them about 1 inch from the edge. Sprinkle grated cheese over ham.
- Begin to fold the meat from one side to the other, rolling as you go. Pinch the ends to seal when the roll is complete. Turn loaf from foil into a greased 9-by-5-by-3-inch loaf pan. Bake for 60 to 75 minutes.

- Preheat oven on 350 degrees Put hamburger meat in a large bowl.Crack one egg in it.Then salt,pepper,seasoning(I use Morton Nature Season's Seasoning Blend No MSG)Pinch of grated Parmesan Cheese.Pinch of Cinnamon Sugar.Use both hands and start mixing together by kneading the mixture carefully.Get a long pan that can hold warm water to suspend meat above the water.Put warm water in pan just to cover the pan.But,not fill it.Put double boiler on pan.Put hamburger meat mixture on the double boiler.Form it with your hands to make a loaf.Put ketchup in a zigzag on top of the meat.Put Heinz 57 also on the loaf in a zig zag.Put meatloaf in the oven.Be careful not to spill anything.Cook 1 hour.Take out of oven and enjoy!
