Teriyaki Trevally (Ocean Fish) Fillets W/ Sesame & Zucchini image

I bought some Trevally and there wasn't a single recipe on 'Zaar to use it. So I did a wider search on the internet, and found this. From the Sydney Fish Markets.

1/4 cup teriyaki sauce
2 cm piece fresh ginger, finely grated
1 large garlic clove, crushed
1 1/2 teaspoons white sugar
1 1/2 teaspoons sesame oil
2 teaspoons sesame seeds, toasted in a dry frypan
2 (180 g) fillets boneless white fish, such as Trevally
1 large zucchini or 2 small zucchini
1 tablespoon olive oil
2 green onions, finely sliced on the diagonal

Steps:

  • Combine the teriyaki, ginger, garlic, sugar, sesame oil and sesame seeds in a bowl. Add the fish, cover and marinate for 10-20 minutes.
  • Trim the ends off the zucchini and quarter lengthways. Heat a non-stick frying pan over a high heat and add the oil. Add the zucchini and cook for about 2 minutes, until they begin to colour. Remove to a warm plate.
  • Remove fillets from marinade, reserving marinade.
  • Return the pan to the heat, add the Trevally fillets, and cook for 1-2 minutes, until the edges have turned opaque. Turn the fillets, add the zucchini and the reserved marinade and cook for a further 1-2 minutes, adding a few teaspoons of water if the marinade begins to caramelise.
  • Arrange the zucchini on plates, top with fillets and garnish with green onion. Serve with steamed rice.

aluminum foil
2 (5 ounce) fillets tilapia fillets
1 teaspoon olive oil
2 teaspoons garlic salt
1 teaspoon ground black pepper
2 fresh zucchini, sliced
1 bell pepper, sliced
1 cup small broccoli florets
1 cup teriyaki sauce
1 lemon, sliced

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Lay 2 large sheets of aluminum foil on a work surface.
  • Rinse tilapia fillets and pat dry. Rub each fillet with olive oil, season with garlic salt and black pepper, and put in the center of a foil sheet. Add zucchini, bell pepper, and broccoli to each fillet, and pour teriyaki sauce over fish and veggies. Squeeze lemon slices over everything and then put slices in with veggies.
  • Carefully seal all edges of the foil to form enclosed packets that won't leak. Place packets onto a baking sheet.
  • Bake in preheated oven until vegetables are tender and fish flakes easily with a fork, 15 to 20 minutes.

As with any microwave recipe, you'll need to adjust the cooking time to get a flaky fish with a crisp, caramelized crust.

  • Combine first five ingredients in a shallow two-quart microwavable baking dish.
  • Add fish fillets, cover with plastic wrap, and marinate for 1/2 hour at room temperature.
  • Microwave, uncovered, at full power for 7-8 minutes, basting occasionally with sauce.
