MEXICAN EGG AND TORTILLA CHIP SCRAMBLE

- Melt the butter in a 10-inch cast-iron skillet over medium-high heat. Add the poblano, scallions and jalapeno; cook, stirring occasionally, until slightly softened, 1 to 2 minutes. Add the corn and 3/4 teaspoon salt; cook, stirring occasionally, until the vegetables are soft, about 2 more minutes.
- Whisk the eggs with 1/4 cup water and 1/2 teaspoon salt in a large bowl. Add the eggs to the skillet and cook, stirring constantly with a rubber spatula to form large curds, until the eggs are softly scrambled, about 2 minutes. Add the tortilla chips, 3/4 cup cheese and the cilantro to the skillet; cook, stirring, until well combined, 1 to 2 more minutes.
- Sprinkle the scramble with the remaining 1/4 cup cheese and top with avocado, sour cream, pico de gallo and more cilantro.

Add onion and jalapeño peppers to pan; sauté 2 minutes or until tender. Stir in 2/3 cup salsa, and cook, stirring constantly, 1 minute.
- Add egg mixture; cook 2 minutes or until eggs are soft-set, stirring occasionally. Sprinkle egg mixture with cheese. Cook 30 seconds or until cheese melts. Top with green onions, and serve immediately. Serve with hot sauce, red salsa, or green salsa, if desired.

- Preheat the oven to 400F. Stack the tortillas on top of each other and pour a drizzle of olive oil on top of one. Use it to rub a coating on the front and back of all tortillas. Use a pizza cutter to slice the tortillas into 1/2-inch pieces. Place on a baking sheet and bake for 8 to 10 minutes, until golden and crisp, stirring once.
- Meanwhile, thinly slice the green onions (set aside the sliced dark green parts of about 2 onions for the garnish). Seed and mince the jalapeño pepper. Mince the garlic.
- In a large skillet, heat the olive oil over medium heat. Add the onion, jalapeño, and garlic and saute until softened, about 2 to 3 minutes.
