SALISBURY STEAK - TEX MEX WAY
Another one from Southern Living. These are really good. I don't normally use the gravy envelopes, but it works good in this. Great served with mashed potatoes.

Steps:
- Combine first 7 ingredients and 1 tbsp cilantro. Shape mixture into 6 (1/3-inch thick) patties.
- Heat a lightly greased large nonstick skillet over medium high heat.
- Add patties, reduce heat to low, cover and cook 8-10 minutes per side or until center is no longer pink.
- Remove from skillet, wipe pan clean.
- Whisk together gravy mix, broth, tomatoes with chiles and remaining 1 tbsp cilantro.
- Cook over medium heat 1 minute or until thickened.
- Return patties to skillet and cook, until thoroughly heated.

- Heat a lightly greased large non-stick skillet over medium-high heat. Add patties, reduce heat to low, cover, and cook 8-10 minutes each side. Remove from skillet and wipe pan clean.
- Whisk together gravy mix, broth, and tomatoes with chilies. Cook over medium heat 1 minute or until thickened. Return patties to skillet and heat in the sauce for about 5 minutes.

Steps:
- Using hands, gently mix first 8 ingredients in large bowl just until blended. Form into four 3/4-inch-thick oval patties. (Can be made 1 day ahead. Cover; chill.)
- Prepare barbecue (medium-high heat). Grill patties until cooked to desired doneness, about 6 minutes per side for medium-rare.
- Transfer patties to plates. Top with avocado slices and Lime-pickled Red Onions. Serve, passing salsas alongside.
