Potato skins are baked until crisp, then filled with chili and cheese and topped with sour cream and chopped green onions.

2 tablespoons olive oil
Coarse salt and freshly ground pepper to taste
1 (15 ounce) can HORMEL® Chili With Beans
2 cups shredded sharp Cheddar cheese
½ cup sour cream
½ cup sliced green onions

Steps:

  • Heat oven to 425 degrees F. Scrub potatoes and dry well. Pierce several times with tip of knife; arrange on large baking sheet. Bake 45 minutes or until tender. Cool.
  • Slice each potato in half; scoop out flesh (reserve for mashing or potato pancakes), leaving 1/4-inch shell. Brush inside and outside of each potato half with oil; season with salt and pepper.
  • Arrange potato halves on baking sheet. Bake 10 minutes, until crisp and golden brown, turning once.
  • Spoon chili into potato shells; top with cheese. Bake 3 to 5 minutes or until cheese is melted. Top with sour cream and green onions.

4 russet potatoes
3 tablespoons olive oil, divided
1 onion, diced
1 clove garlic, minced
1 lb ground beef
1 tablespoon chili powder
1 teaspoon cumin
salt, to taste
pepper, to taste
12 oz kidney bean, 1 can, drained and rinsed
12 oz diced tomato, 2 cans, drained and rinsed
4 oz green chile, 1 can
2 cups shredded cheddar cheese
sour cream, to serve
fresh cilantro, chopped, to serve

Steps:

  • Preheat oven to 425˚F (220˚C)
  • On a baking sheet, place the 4 potatoes. Using a fork, puncture holes all around the potatoes. Bake for 1 hour until the potato gives when you press into it.
  • In a pot, heat 1 tablespoon of olive oil. Add the onion, and stir until golden.
  • Add the garlic and ground beef, breaking up the meat into the onions and garlic.
  • Add the chili powder, cumin, salt, and pepper, and stir to combine.
  • Add the kidney beans, tomatoes, and green chilis, and stir to combine. 7. Simmer for 10 minutes. Set aside
  • Once the potatoes have cooled place one on a cutting board. Cut the potato in half lengthwise. Cut off one of the ends of the potato. Using a spoon, scoop out the insides of the potato making sure not to scoop out too much or the potato skin will be too thin. With the remaining potatoes, cut them in half lengthwise and cut off both of the ends and scoop out the potato.
  • On a parchment paper-lined baking sheet, place both ends. Place three of the skins alongside one potato end and place the other 3 potato skins alongside the other end
  • Brush the potato skins with the rest of the olive oil and season with salt and pepper.
  • Scoop the chili into the potato skins and packing it down into an even layer. Sprinkle the cheese over the potato skins. Bake for 5 minutes until melted.
  • Top with sour cream and cilantro.
  • Enjoy!

1 (1 ounce) package herb seasoning mix
8 ounces shredded cheddar cheese
1/8 cup bacon bits

Steps:

  • Preheat oven to 400°F.
  • Scrub the potatoes clean, rub with vegetable oil, and bake for approximately one hour.
  • Remove potatoes from oven, allow to cool slightly before handling.
  • Cut into halves.
  • Using a spoon, carefully scoop the inside of the potatoes until 1/4 inch if the potato shell remains.
  • Increase oven temperature to 450°F.
  • Sprinkle potatoes with All Seasoning mix, arrange in a baking dish and return to the oven, baking on one side for 10 minutes.
  • Flip the skins over and bake for an additional 10 minutes.

3 tablespoons bacon drippings
2 large onions, chopped
8 pounds beef stew meat, or coarse ground chili beef
5 cloves garlic, finely chopped
4 tablespoons ground red chile pepper
4 tablespoons mild chili powder
1 tablespoon ground cumin
¼ cup sweet Hungarian paprika
1 teaspoon dried Mexican oregano
3 (10 ounce) cans tomato sauce
1 (6 ounce) can tomato paste
3 cups water
2 tablespoons salt
¼ cup dried parsley
1 fresh jalapeno peppers
1 cup masa harina flour

Steps:

  • Melt the bacon drippings in a large heavy pot over medium heat. Add the onions and cook until they are translucent.
  • Combine the beef with the garlic, ground chile, chili powder and cumin. Add this meat-and-spices to the onions in the pot. Break up any meat that sticks together as you cook, stirring occasionally, about 30 minutes, until meat is evenly browned (very browned, not just gray). Sprinkle in Hungarian paprika and oregano.
  • Pour in the tomato sauce, tomato paste, water, salt, parsley and jalapeno. Bring to a boil, then lower the heat and simmer, uncovered, for 1 hour. NOTE: True Texans DO NOT add beans to their chili, but my husband loves them, so this is the point where you can add as many cans of drained and rinsed pinto beans as you wish (I add 2 cans, but shhhhhh don't tell my Daddy!!!).
  • During cooking you may squeeze the jalapeno as it softens against the sides of the pot to release more heat if desired.
  • Mix in the masa harina, and cook while stirring for 30 minutes longer, or until desired consistency is achieved. Taste and adjust seasonings.

6 medium idaho baking potatoes
8 ounces of shredded sharp cheddar cheese
1/8 cup bacon bits
2 cups sour cream
1/8 teaspoon paprika
1/8 teaspoon cayenne pepper
1/8 teaspoon black pepper
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon salt
1/2 teaspoon dried oregano
1/2 teaspoon dried thyme
2 tablespoons vegetable oil

Steps:

  • Preheat oven to 400°F.
  • Scrub each potato to remove dirt. Since eating the skin is part of the dish's charm, it is critical to get all parts of the skin squeaky clean.
  • Rub the outside of each potato with vegetable oil.
  • Bake potatoes in the oven for an hour.
  • Remove potatoes from oven and allow them to cool for 15 minutes.
  • In a bowl, combine paprika, cayenne pepper, black pepper, garlic powder, salt, oregano and thyme.
  • Stir the spice mixture until well combined.
  • Slice each potato in half.
  • Scoop out part of the inside of the potato to allow room for toppings. Leave at least 1/4-inch border to prevent the potatoes becoming too crispy.
