PEANUT BUTTER TEXAS SHEET CAKE
If you're a regular reader of The Budget Diet, you know that when it comes to dessert, I believe you should "bake it, not buy it." Texas Sheet Cakes are BIG, YUMMY and FASTER thank making a cake from a box mix because there's no cooling time required. I first introduced you to Chocolate Texas Sheet Cake (click on recipe tab above), and then White Texas Sheet Cake. My latest addition is Peanut Butter Texas Sheet Cake. Of course, you could go CRAZY and make the Chocolate Texas Sheet Cake with the Peanut Butter Frosting or the White Texas Sheet Cake with the Chocolate Frosting...have fun! The results will always be a super-moist, super-easy and super-delicious cake.

- Peanut Butter Texas Sheet Cake Instructions:
- Grease a 11" x 17" sheet cake pan.
- Put 2 sticks of butter, 1 cup of water and 1/2 cup creamy peanut butter in a large saucepan and stir constantly over medium heat until butter and peanut butter are melted.
- Remove from heat and use a whisk to stir in the sugar, flour, salt and baking soda until smooth.
- Add the buttermilk, eggs and vanilla and continue whisking until smooth.
- Bake at 375º for 15 - 18 minutes or until toothpick inserted in center comes out clean.
- Remove cake from the oven and immediately begin making the frosting...no need for the cake to cool.
- Frosting Instructions:
- Put 1 stick of butter, 6 tablespoons milk and a 1/2 cup creamy peanut butter in a large saucepan and stir constantly over medium heat until butter is melted.
- Remove from heat and stir in vanilla, salt and powdered sugar.
- Pour over cake and spread.
- Cool before serving.

- Preheat the oven to 350 degrees F (175 degrees C). Grease a 10x15x1 inch jellyroll pan. In a large bowl, stir together the flour, 2 cups sugar, baking soda and salt. Set aside. Combine the water and 3/4 cup of butter in a saucepan, and bring to a boil. Remove from the heat and stir in 1/2 cup peanut butter and vegetable oil until well blended. Stir this mixture into the dry ingredients. Combine the eggs, buttermilk and vanilla; stir into the peanut butter mixture until well blended. Spread the batter evenly in the prepared pan. Bake for 18 to 26 minutes in the preheated oven, or until a toothpick inserted near the center comes out clean. While the cake bakes, place 2/3 cup sugar, evaporated milk, and butter in a saucepan. Bring to a boil, stirring constantly. Cook stirring for 2 minutes. Remove from heat and stir in the peanut butter, marshmallows and vanilla until marshmallows are melted and the mixture is smooth. Spoon the frosting over the warm cake and spread in an even layer. Allow to cool before cutting and serving.

- Preheat oven to 375 degrees F (190 degrees C). Grease a 15x10 inch jelly roll pan.
- Bring 1 cup butter, water and 4 tablespoons cocoa to a boil in a large saucepan. While still hot, remove from heat and add 2 cups flour, 2 cups white sugar, and salt. Mix well. Beat in eggs, sour cream, and baking soda. Do not beat too long.
- Pour batter into greased 15x10 inch jelly roll pan. Bake at 375 degrees F (190 degrees C) for 20 to 25 minutes, or until a toothpick inserted into center of cake comes out clean.
- To Make Icing: Bring 1/2 cup butter or margarine, 4 tablespoons cocoa and 5 tablespoons milk to a boil. Remove from heat. While still hot, add confectioners' sugar vanilla and nuts. Beat well. Ice cake while icing is still hot.

- Heat oven to 325°F. Spray 15x10x1-inch baking pan with cooking spray.
- In large bowl, stir together flour, granulated sugar and salt; set aside.
- In 2-quart saucepan, heat 1 cup butter, the water and 3 tablespoons baking cocoa to boiling. Remove from heat. Pour over flour mixture in bowl; stir until well mixed. Add buttermilk, baking soda, 1 teaspoon vanilla and the eggs; stir until well blended. Pour into pan, spreading evenly.

- Preheat the oven to 350˚F. Generously grease and flour a 13x18-inch sheet pan
- Combine water, butter, and peanut butter in a medium saucepan. Heat until mixture comes to a boil while stirring constantly. Remove from heat and add the sugars, flour, salt, and baking soda, whisk until lump-free then add eggs, buttermilk, and vanilla whisk until well combined.
- Pour the batter into the prepared pan, smooth with a spatula to an even layer. Bake for 15 minutes or until a toothpick inserted in the center comes out clean.

- For the cake: Preheat the oven to 350 degrees F; butter the bottom and sides of a 15 1/2-by-10 1/2-inch jelly roll pan.
- Whisk together the flour, granulated sugar, baking soda, baking powder and salt in a large bowl until combined. Whisk the sour cream, vanilla and eggs in a medium bowl or large liquid measuring cup until smooth. Set aside.
- Meanwhile, add the butter, cocoa powder and 1 cup water to a medium saucepan and set over medium heat. Cook, stirring occasionally, until the butter is completely melted, about 5 minutes.
- Pour the melted butter mixture into the flour mixture and stir until combined. Stir in the sour cream mixture in 2 additions until combined. Pour the batter into the prepared pan and spread it into an even layer.
- Bake until a toothpick inserted into the center comes out clean, about 20 minutes. Transfer to a rack and let cool slightly in the pan.
- For the frosting: Combine the pecans, butter and salt in a medium saucepan and place over medium heat. Cook until the butter is melted and the pecans are lightly toasted, about 5 minutes. Stir in the cocoa powder and vanilla and remove from the heat. Whisk in the confectioners' sugar in 2 batches, alternating with the milk and mixing well after each addition.
- Immediately pour the warm frosting over the warm cake and gently spread to cover. Let the cake cool completely before slicing.
